These CampFire Banana Boats were a huge hit during our last Kids Cooking Class. Try them with your family this holiday. So easy!
Enjoy💙Cook❤️Share💙Have FUN
CampFire Bananas
banana, peeled
2 tbsp miniature marshmallows
2 tbsp semi-sweet chocolate chips
2 tbsp Cinnamon Toast Crunch™ cereal, slightly crushed
Preheat grill or oven to medium high heat. 
Slice banana lengthwise and slightly open. Place on a rectangle of aluminum foil. Insert marshmallows and chocolate chips into the sliced banana. Wrap banana up in foil and cook on the grill for 5-6 minutes or bake at 400°F for 5-6 minutes and broil until marshmallows are lightly toasted. Unwrap banana and top with cereal. After melt has slightly cooled eat with a spoon.

As promised, here is the recipe from the cooking demo that we did today. Enjoy because it is really good!

Spiralized Noodle Salad with Ginger Dressing
4 cups of spinach
1 cucumber, peeled
2 small beets, peeled
1 medium yam, peeled
3 tablespoons chopped onion
3 tablespoons canola oil
2 tablespoons distilled white vinegar
1 tablespoon grated fresh ginger
1 tablespoon ketchup
1 tablespoon reduced-sodium soy sauce
1 garlic clove, minced
¼ teaspoon salt
fresh ground pepper to taste
🥒Place spinach in a large bowl. Cut ends off of beets, cucumber and yam. Starting at top of each vegetable, cut halfway through from top to bottom. This will prevent you from getting one long vegetable noodle. Put the vegetables through the spiralizer and add the vegetable noodles to the spinach. If you don't have a spiralizer you can cut the vegetables into long, thin strips. To make the dressing, combine onion through pepper in an immersion blender or regular blender. Pour over salad and toss.

I am truly grateful for you both❤️ As promised, here is the recipe from the cooking demo that we did today. Enjoy because it is really good! Spiralized Noodle Salad with Ginger Dressing 4 cups of spinach 1 cucumber, peeled 2 small beets, peeled 1 medium yam, peeled 3 tablespoons chopped onion 3 tablespoons canola oil 2 tablespoons distilled white vinegar 1 tablespoon grated fresh ginger 1 tablespoon ketchup 1 tablespoon reduced-sodium soy sauce 1 garlic clove, minced ¼ teaspoon salt fresh ground pepper to taste 🥒Place spinach in a large bowl. Cut ends off of beets, cucumber and yam. Starting at top of each vegetable, cut halfway through from top to bottom. This will prevent you from getting one long vegetable noodle. Put the vegetables through the spiralizer and add the vegetable noodles to the spinach. If you don't have a spiralizer you can cut the vegetables into long, thin strips. To make the dressing, combine onion through pepper in an immersion blender or regular blender. Pour over salad and toss. We can tell you that the children, teachers, principals and all that have tried this recipe have asked for seconds and thirds! It has been a pure joy to go into our schools and teach about healthy cooking, food options when cooking and the fun you can have in the kitchen with kids cooking by your side. Opening the conversation about food, health, and all the wonderful foods there are in this world to try and experiment with in the kitchen is a conversation worth starting. Never too young or old!

Cauliflower And Bean Tacos

1 head cauliflower 
1/2 yellow onion cut into quarters
2 tsp olive oil
1 pepper, chopped
1 can black beans, rinsed and drained 
1/2 tsp salt
1 packet low sodium taco seasoning (1oz)
1 1/4 cups water 
1 bunch cilantro
Mexican style cheese
Salsa
Whole grain scoop chips 
Peel away leaves and cut cauliflower in half. Cut out the core so you have the florets. Place 1/2 into a food processor. Pulse until you have a rice consistency. Put into separate bowl. Add remaining cauliflower florets to food processor and repeat. Chop onion into quarters, pulse in food processor until chopped. 
In a large sauté pan, add 2 tsp olive oil. Sauté chopped pepper until softened. Add cauliflower rice and onion mixture, sauté for 1 minute. Add beans and salt, mix until well combined. Add water and taco seasoning pack. Mix until combined thoroughly. Remove from heat. 
Chop cilantro. Add favorite taco toppings of your choice: cheese, salsa, etc. 
Can be used with chips, taco shells or soft tortillas for snacks, lunch or dinner. **Can make without a food processor.  Cauliflower rice can be found at most grocery stores and sold in bags or frozen. .

⭐️Spaghetti Pie
12 ounces spaghetti, cooked 
3 large eggs
1 cup grated parmesan cheese
1 ½ cup shredded mozzarella 
8 oz Ricotta cheese
1/4 cup milk
1 tsp salt
1/2 tsp black pepper 
1 tsp Italian herb/seasoning
Olive oil
Marinara Sauce: Heated 
Optional: Add sausage, any Italian meats, ground beef, or veggie ground beef to egg mixture for fun.
❤️Preheat oven to 350 degrees. Boil pasta until al dente, drain and run under cold water to cool. In a large bowl mix beaten eggs, parmesan cheese, 1 cup of the mozzarella, ricotta cheese, milk, salt, pepper and Italian herb/seasoning. Grease a 9 or 10-inch pie pan with olive oil.  Add the spaghetti mixture and press it down to level it.  Sprinkle mozzarella cheese on top. Cover with foil and bake the pie in the oven for 30 to 35 minutes. Remove from the oven and let sit about 10 minutes.  Use a sharp knife or pizza slicer to cut into wedges like a pie. Top with your favorite marinara sauce or use on the side for dipping..
⭐️Chocolate Peanut Butter Mousse Pie Cups
1 cup chocolate wafer crumbs (pulse in food processor)
2 cups heavy whipping cream
1 cup creamy natural peanut butter
¼ cup granulated sugar
½ teaspoon vanilla extract
1/2 cup mini chocolate chips
❤️Spoon 2 tablespoons of chocolate wafer crumbs into 8 tumbler cups.  Using a stand mixer or hand mixer, beat heavy whipping cream until soft peaks form, about 4 minutes.  Add peanut butter and beat for 1-2 minutes.  Gradually add sugar and vanilla and continue beating until stiff peaks form, about 2-3 minutes.  Divide between tumbler cups.  Top each cup with 1 tablespoon chocolate chips.

Hummus Pizza!! This is great as people come over for the holidays or as a snack to hold the family over before the big festivities. 
Enjoy❤️
1 3/4 cups drained chickpeas (15-ounce can) 
1/2 cup tahini paste
2 tablespoons freshly squeezed lemon juice
2 small cloves garlic, chopped
3/4 teaspoon table salt
1/4 cup water 
Pitas
Toppings: cucumbers, tomatoes, feta cheese, avocado, arugula AND/OR any toppings that you like

Blend the chickpeas, scraping down the sides. Add the tahini, lemon juice, garlic and salt and blend until pureed. Drizzle in water 1 tablespoon at a time, until you get very smooth, light and creamy mixture. Adjust seasonings to taste. Spread hummus on pita and add toppings of your choice.

Chocolate Coconut Bars 
1 Pepperidge Farm Puffed Pastry Sheet, thawed
2 cups chopped pecans
2 cups butterscotch chips
2 cups chocolate chips
2 cups shredded coconut
1 can sweetened condensed milk
🍫Preheat oven to 400. Spray a baking sheet with cooking spray. Roll out pastry sheet on a floured surface. Transfer to baking sheet. Sprinkle pecans, followed by butterscotch chips, chocolate chips and finish with coconut. Pour sweetened condensed milk on top. Bake for 20 minutes or until starting to brown on top. Let cool. Cut into squares. ENJOY!

It’s a chili kinda day. Last week our kids class made veggie chili, cornbread and pumpkin cheesecake. And you say, kids do not eat chili.... well they do and they did AND they made it themselves! So good and not fair not to share. 
Veggie Chili
🌶1/4 cup plus 2 tbsp olive oil 🌶3 red onions finely chopped 🌶4 garlic cloves, minced 🌶1 red bell pepper, seeded and finely chopped 🌶1/4 cup chili powder 🌶1 tsp ground cumin 🌶1- 35-ounce can Italian peeled tomatoes in juice 🌶1 cup canned tomato sauce 🌶1/2 tsp dried oregano 🌶2 tsp Salt 🌶1- 19-ounce can black beans, drained
🌶1/2 cup finely chopped fresh cilantro
🌶Cheese, chicken, tofu, jalapeños optional

In a large, heavy, nonreactive casserole, heat 1/4 cup of the oil. Stir in the onions, garlic, bell pepper, 1/4 cup of the chile powder and the cumin and cook over moderate heat, stirring occasionally, until slightly softened but not browned, about 10 minutes. Coarsely chop the tomatoes and add them to the casserole with their juice and the tomato sauce. Stir in the oregano and 2 teaspoons salt and bring to a simmer over moderate heat. Reduce the heat to moderately low and simmer, stirring occasionally, until all the vegetables are soft, about 15 minutes.  Stir the black beans into the chili and simmer, stirring frequently, until the flavors are blended, about 10 minutes. Before serving, stir half of the cilantro into the chili; sprinkle the rest on top.

Our Kids Cooking Class was so much F U N last night! We are so grateful to have had amazing children join us in baking and cooking yummy and healthy foods this summer. The Fall Cooking Schedule will be announced next week. Marci and Shara have lots of yummy recipes and classes coming up for the Fall. 
Since last night was our last class of the summer, we have to share the goodies with you all. Enjoy the recipes and make them with your children. They really can cook🍴
Easy Salsa

Ingredients
Juice of 1 lime
10 Roma tomatoes
¼ cup packed fresh cilantro
1 clove garlic
¼ cup red onion
1 tablespoon olive oil
salt and pepper 
Directions
Combine all ingredients in a blender or food processor.  Pulse until combined but still chunky.  Season to taste.  Serve with tortilla chips. 
Peach and Corn Quesadillas
 Ingredients
2 peaches, pits removed and chopped
2 ears of corn, kernels removed from cob
4 tortillas
1 cup shredded cheddar cheese
2 tablespoons chopped cilantro
optional: guacamole and salsa for topping 
Directions
Heat a Panini maker or nonstick pan sprayed with cooking spray over medium heat.  Lay out a tortilla on a work surface.  On half of tortilla sprinkle cheddar cheese.  Top with peaches and corn.  Add more cheese and cilantro if desired.  Fold other half over.  Cook on a Panini maker or in non-stick pan for about 4 minutes.  Serve with guacamole and salsa if desired. .

E N J O Y!
Roasted Beet Hummus
 Ingredients:
2 beets, peeled, cut and roasted
1 15 oz can chickpeas, drained and rinsed
juice of ½ lemon
1 garlic clove, minced
2 tablespoons tahini
¼ cup extra virgin olive oil
salt and pepper to taste
 Instructions:
Combine beets through oil in a food processor.  Blend until smooth.  Season to taste with salt and pepper.  If too thick, add more oil or water.  Serve with pita chips or vegetables.

1/3 cup extra virgin olive oil
