This sandwich is sooo delicious and is made with such simple ingredients!! It’s the perfect thing to make when you have a bunch of veggies in the fridge that need to be used up! ⁣
• 2 toasted slices of rye bread (one spread with hummus, one spread with mashed 🥑)⁣
• cucumbers + carrots⁣
• rotisserie chicken ⁣
• side of celery + hummus

I marinated my cod with a bit of EVOO and Chili Lime Seasoning from @traderjoes
for about an hour. The fillet of cod literally melts in your mouth after being pan seared (5 minutes each side give or take). 🤤 •
And I HATE runny zoodles (yall know what I'm talking about, and yes I may have made up a word), so I just put it in right after the cod (for 3-5 minutes), and added Seasoning after it was off the heat...BEST decision I've ever made! •

Meal prep sunday, tacklebox snack pack.  I meal prep for 3 days at a time so when i get to day 3 I can switch it up.  But these are my favorite lunch ideas to put together.  Some days lunch isn't possible and easy finger foods are clean, requires no heating and easy to store away at work.

Late post again! Last nights dindins! Taco Zucchini Boats on rice!! This was so good!!!😋 👌🏼 🥑 🥑

•cook organic brown rice as per packaging •cook lean ground beef in skillet and season with taco seasoning - I make my own - garlic powder, chilli powder, paprika, lots of cumin, red chilli pepper flakes, salt and pepper!
•cut zucchini in half lengthwise and scoop out the seeds (super easy to do with an apple corer!)
•season with EVOO salt and pepper
•when beef is almost done, add chopped bell peppers and then fill your boats!!!
•bake at 375 for 15-20 min (depending on size of zucchini and your preferred level of cooked-ness! Lol)
•sprinkle on lactose-free cheese mix and bake at 350 for 5-10min until cheese is nice and melts
•lay rice in bottom on bowl
•top with a couple boats and sprinkle in cilantro, diced tomatoes and green onion! Don’t forget the Siracha and avocado!! #obviously!! Lol

As hubby told me last night, its best we keep our holiday eating under wraps and not allow ourselves to go hog wild! Great comfort food on crummy Weather day! 🍗

•cook organic brown rice as per packaging
•slice chicken into bite size pieces, season with salt and pepper and coat with corn starch
•dip in egg wash and cook in frying pan in avocado oil until golden brown
•place on paper towel to remove excess oil and place in cookie sheet on parchment paper
•make the sauce - 1/4 cup organic coconut sugar, 1/3 cup Buffalo hot sauce, 1tbsp apple cider vinegar, chili pepper flakes for extra heat and bit of salt
•coat chicken in sauce and bake for 30min, flipping halfway and basting with more sauce •chop desired veggies (bell pepper and onion) sautés in avocado oil •layer rice, veggies and chicken, sprinkle on some hemp seeds and enjoy!!!

I turned down penn station for this salad! Now that I think of food as fuel for my body, I am encouraged to choose healthier choices because I know the proper nutrients will make me feel good! 👉🏼That to me is more important than eating something just for the taste. 
After figuring out how to eat healthier, I crave salads and enjoy the taste! 
I know it’s nourishing my body and that feels good! 💁🏽‍♀️Yeah, I have my days where I still eat things that aren’t necessarily good for me. I had pizza 🍕 last night but it’s in moderation now and not every day. 
My body thanks me and I can feel it changing. Most of the time now when I eat junk, I don’t feel well afterwards. I get really tired and sluggish and sometimes even a stomach ache. That’s not worth it for me. 🙅🏻‍♀️
My current accountability group is helping people learn moderation and proper nutritious foods to fuel their body and make them feel great for the holidays! 🎄There is still time for you to get in on this!

Happy meal prep Sunday friends! This weeks theme is simple and fresh. On the menu:
➡️ Cheddar biscuits. I’ve made a few different recipes and this one is my favourite. It’s simple and the texture is the most similar to a traditional biscuit 👌🏼Recipe found on isavea2z.com
➡️ Zuppa Toscana soup after seeing a few of my fellow #ketokitchenqueens make it last week. ➡️ Lemon & herb pan fried chicken breasts. I bought this marinated from the grocery store. It was a really busy weekend so this is where I’m keeping this week’s prep simple.
➡️ Fall veggie stir fry made with squash, zucchini, radishes, rutabaga, bell pepper, red onion, garlic & power greens. I seasoned it with chilli flakes, garlic powder, adobo seasoning, paprika, chilli powder, turmeric powder & Himalayan pink salt.

I also got some frozen marinated salmon that I’ll cook up during the week. I don’t like to make salmon ahead for some reason. .

Then finally, I have all of the ingredients for a Greek salad that I’ll chop up the day of. I don’t like my cucumbers soggy 😂

Ok just kidding but there was a lot of meal repetition this week and more fun doing Pilates and new developments @aikhanoumladymoon to worry about meals. Always a good thing. Free morning so here goes - what’s better than soft fluffy scrambled eggs? Absolutely nothing! Add steamed cauli, grilled zucchini with dollops of homemade basil pesto, baked pumpkin w kale and Parmesan and some grilled cherry toms. #fitforaking #1200calories. Admittedly bread is like Caviar and Champagne for me now - and when you have it it better be warm soft toasty and buttered. Ok guys I got creative today and wanted to share/record the recipe before I forget 😂 tortellini mushroom soup. 
Ingredients:
Pack of shiitake mushrooms
Box of creamy of mushroom soup
Head of cauliflower 
1-2cups kale 
2tbsp pesto
4 cloves garlic
Pack of tortellini
Pack of chicken sausage (garlic and cheese) 
Black pepper and garlic powder to taste

1. Steam cauliflower and purée add box of soup and blend again
2.Sautéed garlic mushrooms and pesto, set aside
3. In same skillet cook sausage (remove from casing) 
4. Add cooked mushrooms and kale stir and cover for about 5 minutes 
5. Add cauliflower/mushroom purée and tortellini to skillet. Season to your liking. 
6. Stir and cover cook for 15 minutes and enjoy! 
The color is not the best (mushrooms are brown🙄) but the taste is on point. Perfect for the fall and filling. If you try it let me know what you think! 
Note: I wouldn’t add salt until your done and taste the sausage and soup have plenty already! Also if you want lower carb leave out tortellini. It’s just as good without it!

These egg white baked are the easiest best way to stay on plan, have a great meal and did I mention it’s so easy! You can add whatever you want to it. 3️⃣ Anda Curry/ Egg Curry with a homemade Hyderabadi fiery hot masala ( courtesy @anjaliraje21658) and  toned it down a bit with Coconut cream.
4️⃣ Mutter Paneer / Cottage cheese and peas simmered in Tomato purée and grated ginger along with Shahi Paneer Masala .
5️⃣ Hot Whole-wheat chapattis / Rotis .
6️⃣ Lasoon Chutney / Dry Garlic and Coconut Chutney Hand pounded with salt, Jeera and Red Chilli powder.

I wanted to share in case you want to use this idea for any group meals or parties you throw in the future! Curry roasted cauliflower and brussels sprouts, roasted sweet potatoes, balsamic mushrooms, cucumber matchsticks, oven roasted turkey breast and roasted red pepper hummus. YES!

Curry roasted cauliflower and brussels sprouts, roasted sweet potatoes, balsamic mushrooms, cucumber matchsticks, oven roasted turkey breast and roasted red pepper hummus. YES!

Rebekah's ridiculously easy butternut soup

1 medium butternut squash
1 yellow onion
1 inch fresh ginger 
1 carton no sodium chicken broth 
1 tablespoon olive oil 
Put your squash on a baking dish and roast at 400 degrees till you can press the flesh with an oven gloved hand (up to an hour). Let cool till you can touch it. 
Or buy a frozen bag of cut up butternut squash and save yourself some time! This can literally be a 10 minute supper. 
In a soup pot pour oil and add chopped onion. Once it's translucent add your peeled chopped ginger. 
Cut your squash in half and scoop out seeds. Scoop flesh out and into pot with onions and ginger. Add broth. Cook about 10 minutes. 
Blend with immersion blender or in your regular blender till very smooth. It will be pretty thick but you can thin with more broth or water if you prefer it thinner.

Serve with a scoop of ricotta cheese or Greek yogurt and pumpkin seeds for garnish.

So fast and easy! Enjoy!

Had the idea to make a casserole with veggies and flank steak. Dry rubbed the steak and cooked to a rare doneness with onions,yellow,red,and green peppers in a cast iron skillet. Let the steak rest for about 10 minutes before cutting up and mixing in with whole grain pasta, the peppers, onions, and diced tomatoes put it all in a casserole dish and cover with mozzarella. Baked for 25-30 mi at 350 bump to high broil for 3-5 to brown the cheese at the end. Had the idea to make a casserole with veggies and flank steak. Dry rubbed the steak and cooked to a rare doneness with onions,yellow,red,and green peppers in a cast iron skillet. Let the steak rest for about 10 minutes before cutting up and mixing in with whole grain pasta, the peppers, onions, and diced tomatoes put it all in a casserole dish and cover with mozzarella. Baked for 25-30 mi at 350 bump to high broil for 3-5 to brown the cheese at the end. Methi Chicken 🐔 
Recipe👇🏻
( if u are like us, and absolutely hate vegetables this is a best way u could incorporate it in ur diet)

Ingredients mentioned in the method. 👉🏻clean the methi thoroughly and set aside.
👉🏻grind 1 tomato, 2 onions,5-6 dry red chills, 2tbsp coriander seeds and 2 tbsp jeera with some water and set aside.
👉🏻take ur pot, heat oil and fry some whole garam masala ( few peppercorns, 2 bay leaves, 3-4 cloves , 1 cinnamon stick)
After a minute of sautéing the above add 1 finely chopped onions.
Fry until onions turn translucent.
Now add 1 tbsp of ginger garlic paste and sauté till raw smell goes.
👉🏻 now add the blended masala and fry it continuous on medium flame for 2 mins.
👉🏻now add the chicken and fry it along with the masala.
👉🏻at this point u may add chilli powder for more spice and 2 tbsp coriander powder and mix well.
👉🏻once the chicken is nicely coated put the lid on. Let it cook for above 5 mins on medium heat.
👉🏻after 5 mins, add little water and salt as per taste and put the lid on.
👉🏻check after 5 mins for seasoning. 👉🏻now add the methi leaves, stir it well and put the lid on for 10 mins and let it cook, stirring occasionally.

Last 5 mins keep it on slow flame.
Do not open the lid until ready to serve.

Cranberry balsamic chicken - simple marinade, then basically just throw in the oven. Really good and smelled like Thanksgiving.

Maple glazed carrots, made in the instant pot. Like 15 minutes from start to finish, and soooo good. I make them all the time. I tell my toddler it’s candy carrots. Cuz it basically is.

Artichokes. These take a while to cook, but don’t require much work. I dip the leaves in melted butter , olive oil, and garlic.
