I love #fall everything -- the warm drinks, the comforting food, the candles and blankets, and most importantly, the crisp weather! After a particularly long day, I made this simple 6-ingredient, 1-pan dish for an easy dinner with an acorn squash I had from @harristeeter. @mikeshothoney was just the right touch it needed to take it to the next level (thanks for the recommendation, @thechutneylife)! 🍯Ingredients: 1 acorn squash, de-seeded and sliced into wedges; 1 tablespoon olive oil, 1 teaspoon salt, tablespoon parmesan cheese; freshly crushed pepper and #mikeshothoney (as much as you desire). 🍯Method: Preheat oven to 325F. Place the squash on a sheet pan and massage the oil and salt into it. 🍯Top off with the pepper and parmesan, and bake for 40 minutes. 🍯Broil for an additional 5 minutes on high and remove from the oven. 🍯Drizzle with the honey right before serving but careful -- it's got a real kick! 🍯The warmth of the honey combined with the roasted squash is an explosion of Fall on your taste buds. 🍯This is the perfect side dish for your upcoming #friendsgiving and #thanksgiving #dinner -- easy to make and filling!⠀

Lunch that I made for my mom & dad as well was local sun-dried tomato hummus mixed with butternut squash noodles, artichoke hearts, celery, carrots, and garbanzos cooked down over arugula + cayenne. Inspo for this came from a need to use up the butternut squash noodles because they go bad so fast when you buy them fresh. I also had this gorgeous raw sheep's/goat's/cow's milk Spanish blue cheese aged for 60 days that I got at a market because it was tje ugliest cheese there. lmk if anyone has tried any other Corazon de Ronda cheeses

Para hacerlo un plato completo necesitas:
👉Pechuga de pollo 🐥
👉Verduras al gusto (yo le puse brócoli y zanahoria) 🥕🍀
👉Arroz o quinoa cocida 🍚

Para la salsa thai:
👉Salsa de soya baja en sodio.
👉Miel de abeja pura.
👉Aceite de oliva.
👉Jugo de limón.
👉Una pizca de sal de grano. 
Opcional: jengibre en polvo y/o una cucharadita de crema de cacahuate sin azúcar o un puñito de cacahuates tostados.

Para la salsa sólo se licuan todos los ingredientes. 
Se coloca el pollo en cubos en una charola, se baña con la salsa y se mete al horno. 
Servir con verdura al horno, arroz o quinoa y más salsa encima.

Yesterday I made beyond burgers with Chao cheese and bok choy greens, together with this grilled potato /carrot /onion medley.  All was delicious. Good Morning Friends! Who is cooking for Thanksgiving this year? Since I am in charge I plan to have lots of roasted veggies and healthy side dishes to enjoy. Of course there would be mutiny if I didn't have the traditional cornbread dressing and sweet potato casserole. So I just enjoy a little of that and fill my plate with more roasted veggies. What are your plans this Thanksgiving?  I like to try one new recipe and see if it goes over in the family.  This year I found a healthy option for Brussel Sprouts with a Balsamic Glaze.  Basically if you put balsamic vinegar on it I will eat it, lol 🤣

Blistered Brussels Sprouts

Ingredients:
1 cup balsamic vinegar
2 cloves garlic, coarsely chopped
1 lb. Brussels sprouts, ends trimmed, cut in half lengthwise
¼ tsp. sea salt (or Himalayan salt)
2 Tbsp. water

Preparation:
1. Place vinegar and garlic in small non-reactive saucepan over medium heat. Bring to a boil. Reduce heat to low; gently boil for 25 to 35 minutes, or until vinegar has become thick enough to coat the back of a spoon. (Watch vinegar carefully after 20 minutes of cooking to avoid burning.)
2. Remove from heat; cool. Remove garlic. Set aside.
3. Heat a medium cast iron (or nonstick) skillet over medium-high heat for 4 to 5 minutes.
4. Place Brussels sprouts in skillet, cut side down, in a single layer; cook for 4 minutes, or until browned.
5. Add salt; cook for 1 to 2 minutes.
6. Add water; cook until water has evaporated.
7. Top each serving with 1 Tbsp. balsamic glaze; serve immediately.

🎷Ingredientes para 4 porciones🎷
🎻500 gramos de champiñones 🎻2 dientes de ajo (y si sos fana como yo podés agregarle más, pero no pienses en una cita romántica 😂😂)
🎻4 cdas de perejil fresco 🎻vino blanco 🎼Podés elegir portobellos, shitake o hacer un mix 🎼 🎷Forma de preparación🎷
