Routine———————————————————————This time of year, it is very difficult to stick with a fitness routine. The holidays, going out of town, spending extra time with family and friends, etc. all make it difficult to stick with your routine, but let me tell you something. Who cares?———————————————————————Working out 1-3 days a week instead of 3-5 IS OKAY. Missing a week is OKAY. Family is important! Making memories are important! Health is so much more than just exercise. Health also has to do with your relationships and your mental state.———————————————————————PLEASE do not get down on yourself because you are not on your normal routine over the holidays this year. As long as you get back on track, that’s all that matters. This Thursday, Thanksgiving, as well as over the following weekend, be present with your family and friends. Hang out, eat good food, have good conversations! ENJOY IT! Then next week, get back on track. ————————————————————— YOU’VE GOT THIS ❤️
I love #fall everything -- the warm drinks, the comforting food, the candles and blankets, and most importantly, the crisp weather! After a particularly long day, I made this simple 6-ingredient, 1-pan dish for an easy dinner with an acorn squash I had from @harristeeter. @mikeshothoney was just the right touch it needed to take it to the next level (thanks for the recommendation, @thechutneylife)! 🍯Ingredients: 1 acorn squash, de-seeded and sliced into wedges; 1 tablespoon olive oil, 1 teaspoon salt, tablespoon parmesan cheese; freshly crushed pepper and #mikeshothoney (as much as you desire). 🍯Method: Preheat oven to 325F. Place the squash on a sheet pan and massage the oil and salt into it. 🍯Top off with the pepper and parmesan, and bake for 40 minutes. 🍯Broil for an additional 5 minutes on high and remove from the oven. 🍯Drizzle with the honey right before serving but careful -- it's got a real kick! 🍯The warmth of the honey combined with the roasted squash is an explosion of Fall on your taste buds. 🍯This is the perfect side dish for your upcoming #friendsgiving and #thanksgiving#dinner -- easy to make and filling!⠀
A T H O M E 🍽 Winter warming stew with veggies 😋 last weekend I did a whole load of food prep for the freezer including this delicious, and low calorie, stew made up of chicken, cannellini beans, tomatoes, lemon, leeks, stock, herbs and seasoning. It’s so simple but so tasty, this time I paired it with roasted parsnips and carrots and steamed broccoli for a warming Sunday dinner. I’ve been a bit absent from Instagram of late for a number of reasons, but I’m back now. Would you like to see a tutorial/recipe for this stew? Let me know! When my kids were younger I started giving them fruit, veggies and berries. It has paid off! They crave them for a snack! Now don’t get me wrong, they want candy, chips and cookies too lol. Artichokes from my garden. Admittedly, I think I have a green thumb, but these are difficult to grow. I boiled them to death and still could not eat them. Good Morning Friends! Who is cooking for Thanksgiving this year? Since I am in charge I plan to have lots of roasted veggies and healthy side dishes to enjoy. Of course there would be mutiny if I didn't have the traditional cornbread dressing and sweet potato casserole. So I just enjoy a little of that and fill my plate with more roasted veggies. What are your plans this Thanksgiving? I like to try one new recipe and see if it goes over in the family. This year I found a healthy option for Brussel Sprouts with a Balsamic Glaze. Basically if you put balsamic vinegar on it I will eat it, lol 🤣
Blistered Brussels Sprouts
1 cup balsamic vinegar
2 cloves garlic, coarsely chopped
1 lb. Brussels sprouts, ends trimmed, cut in half lengthwise
¼ tsp. sea salt (or Himalayan salt)
2 Tbsp. water
1. Place vinegar and garlic in small non-reactive saucepan over medium heat. Bring to a boil. Reduce heat to low; gently boil for 25 to 35 minutes, or until vinegar has become thick enough to coat the back of a spoon. (Watch vinegar carefully after 20 minutes of cooking to avoid burning.)
2. Remove from heat; cool. Remove garlic. Set aside.
3. Heat a medium cast iron (or nonstick) skillet over medium-high heat for 4 to 5 minutes.
4. Place Brussels sprouts in skillet, cut side down, in a single layer; cook for 4 minutes, or until browned.
5. Add salt; cook for 1 to 2 minutes.
6. Add water; cook until water has evaporated.
7. Top each serving with 1 Tbsp. balsamic glaze; serve immediately.
