Scooped out Zucchini then sautéed in olive oil with potatoes, onions and portabella mushrooms left over from the night before with hot sesame oil pan fried pine nuts on top with a sprinkle of Parmesan, loved this side dish. Try something different #veggies#sidedish
Yesterday was a busy day in the garden. After harvesting the rest of the snow peas and prepping that bed for the next crop planting, my older daughter and I tackled the onion harvest!
Today I will add compost and finish pulling weeds, then re-seed the onion bed with something new and hopefully exciting. 🌱
As for the onions, we will be using some today when we make/can salsas and sauces. Others will be chopped and frozen. Some will wait patiently in the onion bin. AND, we will dehydrate a few, too! 🌞(with a dehydrator, not the sun)
My older daughter is a hiker and getting ready for another trip, so the dehydrator is already out...might as well put it to use. 😊

I found myself drinking my afternoon espresso this week and then passing out as soon as the boys took their nap 😂 Obviously not working anymore so it's time to get back to my juice! It does require more time and clean up, but if you juice in bulk and then leave it for your significant other to clean it's all good 😂😂🤣🤣😍😍

How to shop when your bf or significant other isn’t vegan: Try and limit or nix the meat as much as possible. Luckily, he hasn’t seemed to notice that his intake has greatly reduced & he now eats a mainly vegetarian wholefoods plant-based diet. The few times he craves meat, I’ll buy organic wild salmon & cook it in small amounts (so it lasts longer before I have to buy more) and fillup most of his plate with veggies. Sneaky? Perhaps. Healthier & better for the environ? Absolutely. #GoVegan
I am big on expanding your cuisine horizon, and trying hot pot is a great way to do that. You pick your broth choice (the beauty broth is a fun choice), pick your meat and then you have a choice if noodles if you want them. The broth is boiled at the table and you cook your meat and veggies in the pot. Make a trip to their sauce bar for all sorts if different ways to season your food. Their pop star sauce is amazing.
