Autumn has officially begun 🎃🍁🍂 Do you like pumpkin?
It’s the most universal vegetable- you can literally make everything with it- from soup -to main course to dessert- to drink - to facial mask - I can continue forever! It’s high in potassium, beta carotene, vitamin C, B6, E, thiamin, niacin and is a great source of fiber. Oh yes, how could I forget the bonus: pumpkin is one of the greatest superfoods that promotes weight loss! How? Since it is high on fibre, it helps in keeping apetite in check by slowing down overall digestion. 🍁

And I know this isn’t the most beautiful foodie pic but let me tell you, it was definitely one of the most delicious AND nutritious! -
- soup starter pack which included 4 carrots, 1 wedge of celeriac, 1 parsnip, 1 onion and a wedge of cabbage. -chop onion and add to the pot with a little oil/butter (whatever you prefer) -once onion has browned, add the rest of the chopped veggies and 1-2 cups of veggie stock (I used the cubes mixed with hot water) and bring to the simmer for about 20 minutes or until veggies are soft.
- for the paprika tofu (very Hungarian) I added a little in to the soup halfway through simmering (I thought maybe I could get it all nice and spongy like the restaurants do...that didn’t happen 😂) and with the rest of the tofu I put it in a seperate pan and cooked until golden and served on top. Could have waited a little longer but I was hungry! -but the best tip/ secret ingredient for this dish is.....tahini!!! I added about 2 tablespoons in before I served the soup mixed it through the veggies which made it super creamy and delish. Seriously one of the tastiest and most simple weeknight dinners!!! And for the best tahini (got this from my gal @sophieflos.kitchen 😘) I went to a little middle eastern supermarket and got mine there! Seriously the best you will ever taste!
