Pesto Pasta is a favourite meal of mine and this version has extra veg making it even greener and delicious! 😊 🔺Serves 2
* 150g of pasta (I used fettuccine)
* 1/2 avocado
* 60g bag of spinach
* 1 tablespoon lemon juice
* 1 tablespoon e.v olive oil. * 1+1/2 tablespoon lightly dried basil
* cashew parmesan
🔺Cook your pasta. Blend all the other ingredients until fairly smooth. Mix pasta and sauce together. Cover in cashew parmesan and tuck in ✅ I used @GourmetGardenAustralia’s Lightly Dried Basil and it packs a serious flavour punch 🤜 with the added bonus of leftovers staying fresh in the fridge for up to 4 weeks!

This is simply black beans that I mashed in a bowl and added to the shell then topped it with a homemade nacho cheeze sauce, lettuce, salsa, green onions, and a homemade cashew sour cream 😋
Nacho Cheeze Sauce:
1 cup raw cashews (soaked overnight, rinsed, and drained) using a high speed blender like a Vitamix is critical to get a smooth texture 👌
2 tbsp lemon juice
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1-1.5 tsp salt (try 1tsp and add another if wanted- I like it at 1.5)
1 raw red bell pepper
1/4 cup nutritional yeast
1/2 cup water- add more slowly if needed
Put everything in your high speed blender and blend, slowing adding water as necessary or until you're happy with the consistency.. keep blending on high to warm the cheeze 😋🎉💓

Pretty pink nice cream in my @coconutbowls 🙌🏽🤤💓! I love to create food that looks good ans well as tasting it! I don’t know what it is but it just makes it more special - that said a lot of my meals are not #instaworthy but still tastes amazing 😜! These bowls were a simple combo of frozen bananas 🍌 and strawberries 🍓 - so easy and so tasty 😋!! These last few weeks of holidays are speeding by!! Only 2 weeks until school starts 😭😭😭 - gonna make the most of my last 2 weeks anyway! #dancingfoody
These are my potato and leek pies. Quick and easy comfort food.🥧💚
Recipe for 6 pies
3 sheets of vegan shortcrust pastry.
350g button mushrooms
2tbs wholemeal flour
1tbsp olive oil
2 tbsp vegan butter + extra for pie top
1tsp vege stock powder
1/2 - 1 cup water
1tbsp soy sauce
Dice up potato into small pieces
Chop up leek, onions and mushrooms
Fry the diced and chopped vegies in pan with oil &butter. Cook until leek and onion are soft.
Add flour and mix through for a minute to cook flour, add vegie stock, sauce and slowly add water mixing continuously.
Once it is a chunky gravy consistency. Set aside.
Prepare pie bases you can either blind bake bases in the oven first, then fill and cover and bake 15 minutes in oven, brush top with melted butter. Or as i did cook in electric pie maker. I hope you like them. My family love them 🥧💚
Been loving refried beans so much recently! They’re soo versatile and yummy is salda, bowls, pastas and wraps! 😍 This bowl of goodness here is some steamed sweet potato, a couple of baked portobello, some refried beans, sautéed watercress and half an avocado 🙌🏻🍃 Have a great weekend guys! 💛
