Cumin-roasted Chantenay carrot curry (#vegan#glutenfree ). Method (serves 2): Grind a tablespoon of cumin seeds with a pestle and mortar. Mix with 2 tablespoons of rapeseed oil and 1 teaspoon of hot chilli powder. Lay 500g of scrubbed Chantenay carrots in a roasting dish and mix with the spice mix - sprinkle with salt and pepper. Roast in an oven (200C fan 180C) for 15-30 mins, until soft and golden. Mix the carrots into a curry sauce (either homemade or shop-bought) and serve with basmati rice.
Tonight i tried one of @white_rabbit_pizza_co 's vegan & gluten free pizzas, and i wasn't sure what to expect. I usually despise vegan cheese, i dont understand when people say they think vegan cheese tastes like regular cheese. What kind of regular cheese was y'all eating?!😂 Anyway, i decided to dress this pizza up with sweet corn and "chicken" (tofu) just to add more flavor. This wasnt needed though, because this pizza is the BEST. The cheese is amazing and the base is amazing for it being gluten free. quick dinner after a long day - can safely say this is the nicest pizza I've ever eaten! it's the whole creations one from Sainsburys, had to double check the packaging lots of times because it didn't have the after taste a lot of vegan cheese had! definitely worth the £3.95 IMO

I also made a Blueberry banana bread and Almond crunch protein squares this afternoon. It was my first time making this Tiffin and it is so rich & delicious 😉 Definitely something to only make occasionally seeing as there are only three of us to eat it 😛
Chia vanilla pritein oats made super creamy with the addition of tofu. Topped with PB2, watermelon, seeds & walnuts. Plus, yay for portion control (I made twice as much and ate the second half 2 hours later but still 😂)

Another day, another festival, this time the holy colour festival is calling. My brother visited India last year and told me about the original holy festival in India, and one day I've promised myself to celebrate it there, but for now my hometown has to fulfill the purpose. So I've been at the festival all day and I was sooo much fun, I came back completely covered with all different colours. I mean good music, good drinks and good friends, what else do you need in life? 🎉🎉
I tried these @lindamccartneyfoods duck pancakes (found in Sainsburys) for the first time tonight🦆I had no idea what to expect since I’ve never tried actual duck but these were so delicious and so quick to put together, like 5 minutes quick👌In other news, we are on holiday now (for a whole week!) in the Forrest of Dean tucked away in a cozy cottage🧔🏻👩🏻🐶Exactly what we needed after an emotionally stressful few days😅If anyone has tips on must see/dos for the area I would love to hear them as well as any places to get vegan food!♥️
