Vegan gingerbread pancakes with peanut butter caramel sauce and gingerbread bliss balls🎄🧡✨ As Christmas is approaching I’m getting more inspired to create Christmas recipes each day. This stack is wonderfully seasonal and the flavours are super complementary💫
75 g spelt flour
15 g coconut flour
10 g cornstarch
Pinch of salt
1 tsp gingerbread spice mix
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1 tsp lemon juice
3 tsp vanilla sugar (or sweetener+vanilla extract)
1 medium mashed banana
1 tsp peanut butter
150 ml plant milk
Mix dry ingredients in a bowl,(except baking soda) set aside. Combine milk, banana, peanut butter in another bowl, add to dry ingredients, mix well. Combine lemon juice and baking soda and finally add to the mixture. Let rest for about 15 mins.
Peanut butter caramel sauce
1/4 cup peanut butter
2-3 tbsp liquid sweetener
Water (if desired)
Heat all ingredients in a pan, keep stirring on medium heat until it reaches caramel consistency. If too thick, add some water.
Gingerbread bliss balls
70 g almonds
9 dates (soaked in hot water for 10 mins)
1 tsp peanut butter
1/4 cup almond meal
Mix all ingredients in a blender, form small balls with wet hands and roll them in your toppings of choice.

I can’t figure out how I want my feed to be. I’m inspired by so many people, but when it comes to making decisions about my feed, I can never decide. I’ll just keep it simple, ‘till I figure it out.🙁 Today’s breakfast was a pear oatmeal, with raspberries, clementines, pineapples, kiwis, plums, chestnuts, sugar-free chocolate, pecan and peanut butter.🌈 It was really good, but it tasted better than it looked for sure. This picture is not appetizing at all..😂 I have just a few days left to finish christmas shopping, which I’m stressed about, and I’m still not in the christmas spirit!😢 And the weather is so sad☔️🌚 But all these doesn’t matter as long as I got my trusty oatmeal by my side.😏🥣🥄

🥞 This is my pancake stack breakfast! It was quite delicious, but i also noticed something: Almost all vegan accounts I’ve seen on here post pancake pictures every week. And oh, the pancakes they post! They’re always perfectly circular, miraculously fluffy, and topped with TONS of different toppings. Also, they’re all on white plates that don’t have the slightest bit of yellow-ish tinge from any light. They look amazing, but while that may work for some people, vegan food isn’t always perfect and pretty and luscious. As long as you’re nourishing your body, you shouldn’t worry about wether or not your vegan food looks like something that belongs on the cover of a magazine. My vegan pancakes are lumpy, nowhere near round (that’s what happens when you use a thick batter) and plainly topped with apples and almond butter. And guess what? They’re great. Vegan food doesn’t have to be pretty, or luxurious, or filled with twenty varieties of fruit per meal. So here’s my vegan pancakes, here’s my vegan food account. Not perfect, but perfect for me. 🥞
Exactly two months ago I left a relationship that was no longer serving me. I never thought I would... I ignored my guidance system for YEARS due to guilt and that I am perpetually the nice girl that doesn't want to cause conflict(empath probs 😅)..But.. Um... I moved into a beautiful place with my mom, I booked a Universal shoot, I released my "karmic kits", and my business is better than ever🙏It's crazy what happens when we listen to our gut and get in alignment!💯 Change is never easy, but it is necessary for our growth in this reality. And I won't lie, it was the hardest thing I've ever done (this past week has been tough, lots of shadow work) but my freedom is what I am thankful for the most🙌I'm free. Wow. I have my identity back and watch out y'all, ya gurl has big plans for 2019🦄 Stop making excuses and procrastinating!! It's end toxic relationships season✌️Love and freakin light to all you bomb ass light beings!! If I can do it, so can you❤️❤️❤️LET GET THIS COSMIC BREAD 🍞
Here’s a toast to this amazing Tuesday! I had an amazing day today, and hope y’all did too. Firstly, I got a 74/75 on my AP calc test that I was super stressed about. Secondly, I didn’t have too much homework and I crushed a leg session at the gym. Thirdly, I’m about to do some final Christmas decorating AND go to costco tonight. 🌚 Having a GOOD MINDSET is so important. When faced with a challenging situation, staying optimistic can help you gain resilience. If we constantly occupy our brains with thinking negatively we will be more inclined to stay in that headspace and it might even ruin our whole day.
However, we have the power to change our brain through the habits we create for ourselves - neuroplasticity. If we make an effort to be positive and stay calm when faced with a challenge we can handle future challenges more positively and we can totally change from a fixed mindset to a growth mindset.🌥🌞

⚡️ Reading this quote really changed my perspective on so many things. Although we may think that all the little and annoying things in life seem extremely important, in the grand scheme of things they are far from even being mildly important.
🌈 Whether it’s exams, your job, your instagram account or literally anything else you are struggling with right now - just know that those things will not affect you in the long run and absolutely everything will pass. You will constantly be going from one struggle and hurdle to the next without even thinking about the real scope of your stress, but for what reason? Why waste all that time and energy? Why should you spend your life searching for superficial things which do it matter, so that before you know it life has slipped past you and you’ve missed out on many of its wonders and opportunities?
💙 I want to make sure I focus on what really matters in life - which for me personally is family, self love, mental and physical health, exploration and fulfilment. I want to reevaluate my aims and prioritise to make sure I live my life to its fullest without wasting one precious moment on this beautiful earth!
Stir fry is always a good option. I haven’t done much exercise or yoga in the past two weeks, and let me tell you, I can tell a difference. Other than the fact that I have more time so I get bored and I’m super antsy, I have noticed that I am so stiff. The other day I was looking in the mirror and I noticed my right shoulder was lower than my left. I’ve been to a spinal doctor because I’ve had back pain for years, so I’m almost positive I don’t have scoliosis, but I think the lack of movement is making my shoulders uneven. I have pretty bad pain on my right scapula, but I’m sure things will get better once I start moving. I never realized how much exercise plays a role in my life till now. I love to move my body, but for now, it’s just walks since I’m still recovering from surgery and I don’t want to mess anything up. I have to admit though, I am so excited for the day I can do yoga again. What is your favorite form of exercise?
🍲: kamut, broccoli, turmeric, black pepper, ginger, mushrooms, green peas, cilantro, cashews, black and white sesame seeds, and avocado
Vegan beet chopped pasta salad. My daughter LOVES pickled beets. I soaked these in white balsamic vinegar overnight and added them to a delicious chopped (shredded broccoli stem, carrot, kale, purple cabbage, Brussel sprouts, pumpkin seeds) pasta salad.
I used a balsamic vinaigrette dressing. This is her school lunch for today. I don’t have to talk her into eating healthy. Although I’ll admit, she is SOOOO PICKY. But I guess it keeps me on my toes and always exploring new recipes.
home from uni for Christmas!! so excited to be back and able to just chill!! finally able to have my fave breakfast fo the first time in forever because I have no blender at uni and can’t afford fresh fruit because I get through it soo quick😂 sooo enjoying this (yep at half one😅) after a lay in and very chilly dog walk!! just going to eat this while watching greys anatomy and then finishup my final essay of the term..and hopefully pop out for a coffee later!! hope your having a fab week guys!

I had this delicious smoothie bowl after a speed swim🏊♀️ training this morning, then off to the dentist for a clean and now I have pearly whites😁, I did some yoga🧘♀️ and stretching and flexibility🤸♀️ training, then this evening it was to the gym🏋️♀️. Busy day but it felt so good

The @subifarmersmarket running at Subiaco Primary School every Saturday is an absolute vegan haven!! 🍃🌸⚡️🌿💥 Couldn’t go past the PB & J special with @honestgoodscompany cocoa bread + @thehonestpantry smooth peanut butter + jam🥜🍓🍫🙌🏼🙌🏼 Also check that array of vegan spreads in the background!! 🤩 I had to treat myself to a jar of choc hazelnut spread for the fresh loaf of bread I bought!! 😋😋
