Solo-travel isn’t exactly a smooth sailing/“finding yourself” ride, to be honest it’s lonely at times & challenging. A big part of why I chose to do this trip was to help with my self development: embracing difficulty instead of running from it. There is power in pain, and power to be found when we are anxious and struggling. Some days I’ve been too anxious to leave my apartment... it’s hard being on your own & being forced to confront yourself/your thoughts. But if you can overcome your negative thoughts/behaviours and fight through the self-doubt you come out stronger and more resilient and that’s the beauty of it. We are so busy comparing & trying to make our lives look amazing/perfect/spectacular through social media handles that we forget what it is like to be a human being, to be honest & real. So be honest - always, embrace the difficult, be grateful that you are alive & fall in love with yourself - fall in love with every fibre of your being.

the beautiful flowers on the side of the road, gazing upon the stars, eating fresh fruits (especially mangoes & passionfruit!), hearing laughters, seeing smiles on the faces of my loved ones, being around people I love and having deep meaningful conversations with others. —————————————————

I love these kind of meals! I started a new job this week which is honestly a bit weird for me as this year has been really quiet but it feels good to get back into the swing of things. This has meant that I’ve had less time to make my meals so I prepared by making a big batch of falafels 🌱 This way I can just chuck them into a bowl with some veggies and a carb of some sort (I like potatoes, rice or quinoa) and that makes such a satisfying, nourishing and delicious meal 😍

We got together about two weeks after I went vegan and has supported me on my vegan journey since day one ☝🏽. He explains with confidence why I’m vegan, when people ask. He has jumped to my defence, when people have dissed and stereotyped me as vegan. He listens to my rants. He comforts me after watching terrible and confronting videos. He encouraged me to make this blog to show people how easy it is to be vegan. 💞

I’ve been on a health journey for about 10 years. Some shit started happening after my first daughter was born in 2008 and then after my third daughter was born in 2015 I became bedridden. It’s just been this insane battle of going why the hell is my body freaking out and trying to kill me?! I’ll go into detail soon!
In February this year I started #keto and I started to have some changes. I kept a strict food journal to find allergies or intolerances to foods. Why could I eat X and be ok and why could I eat X and fall asleep/want to kill myself.
I started having reactions to pretty much everything and they would happen within 2 hours of eating.
I figured out I was seriously allergic to corn and it’s derivatives. That means walking into Natural Grocers and picking up an apple doesn’t cut it because pretty much every organic product is sprayed with citric acid made from corn. I kinda felt like this was a fucking joke and I was going to starve to death!
I kept researching and I came upon the carnivorediet. I had a hard time believing I could survive only on meat!
I said welp if this is my only choice it looks like 🥩 it is!! I want to LIVE!!! I want to thrive and not just survive! I’ve been 98% carnivore since May 2018. I’m now down 42lbs. My inflammation is pretty much gone. My brain is back. My energy is returning (I’ve basically been homebound for 3 years now), my hair has stopped falling out. My cycles are perfect and pain free.
The systematic response to an invader in my body can finally take a breath and the healing has started.
I just bought my first size 6 jeans since I was 20 years old. I haven’t worked out one time. I still have a baby pooch and when that goes it goes but until then I don’t even give a rats ass! I can walk! I can play! I can live!
Anything that your body is trying to fight as an invader will cause serious health problems. I encourage you to be your own advocate if you’re having problems! You know your body better than anyone!! Carnivore sounds insane but it’s healed me and I’m so grateful!!

Stuck for time? This is what I meal prepped for my lunches last week 🤗 this pasta is packed with fibre and protein and will keep you fuller for longer. So quick, easy and yummy👏🏼 1. Cook 4 cups dry whole meal pasta to packet instructions.
2.Finely chop an onion and pan fry until fragrant and browned.
3. Cut a head of broccoli into small florets and add to pan, cook until softened (also could add cauliflower, zucchini, asparagus etc)
4. Cut a punnet a cherry tomatoes in half and add to pan with around 1-2 cups of passata and 4 cloves of garlic, finely chopped. Cook until the tomatoes start to break down a little.
5. Add 2 cans of drained and washed lentils to pan and additional extras such as mushrooms, olives, sundried tomatoes etc.)
6. Add oregano, thyme, basil, parsley or any other Italian herbs to taste, as well as salt and pepper.
7. Put a layer of baby spinach, kale or silverbeet over the sauce, wilt it down and mix it through.
8. Add to pasta and eat!
Cold soba noodles with vegetables and miso/mandarin dressing 🍊🍜
Ingredients: 2 mandarins, white miso, 270g organic soba noodles, fresh ginger, red pepper flakes, soy sauce, black pepper, garlic powder, 200g green peas, 2 small zucchini, 6 shiitake mushrooms, 1 brown onion, 3 green onions, toasted sesame seeds, 1 big carrot, 1 small green capsicum, vegetable broth, maple syrup, vegan fish sauce.
1. Dice the brown onion and zucchini, slice the shiitake mushrooms. Add them to a pan with 5 tablespoons of vegetable broth, cook until soft (5-7 minutes). Add the peas, 1 teaspoon of garlic powder, 1 teaspoon of black pepper and 1 tablespoon of soy sauce. Cook for 5 minutes, stirring regularly. Set aside and let it cool down completely.
2. Cook the soba noodles in boiling water for 5 minutes. Drain and rinse thoroughly with cold water.
3. Cut the capsicum in small thin slices and the carrots in cubes. Add them to a big bowl.
4. Add the cold soba noodles and mix everything with your hands.
5. Add a generous amount of toasted sesame seeds on top. Set aside.
6. Prepare the dressing: mix 3 tablespoons of white miso, 5cm piece fresh ginger (grated), zest of 1 mandarin, the juice of the two mandarins, 1 teaspoon of red pepper flakes, 1 tablespoon of maple syrup and 1 teaspoon of vegan fish sauce. Mix well until smooth. Taste and adjust sweetness (maple syrup), spiciness (red pepper flakes) to your liking.
7. Once the veggies are cold, add them to the noodles and combine evenly.
8. Pour the dressing over and combine. Finish with chopped green onions and some more toasted sesame seeds.
