NO BAKE VEGAN LEMON RASPBERRY BARS by @briewilly ❤️ Recipe:
1 1/2 cup pitted dates⠀
1 cup raw almonds or walnuts⠀
Pinch of salt⠀
3 cups pre soaked raw cashews ⠀
1/2 cup lemon juice ⠀
1/2 cup melted coconut oil⠀
1/3 cup pure maple syrup ⠀
2 tsp lemon zest ⠀
Raspberry chia topping: ⠀
1 1/2 cups fresh raspberries⠀
1 tbsp pure maple syrup ⠀
2 tbsp chia seeds ⠀
Soaking The Cashews⠀
In a bowl, cover the cashews with water and let soak for 3-4 hours. If you're in a pinch for time, you can put the cashews and water in a pot on the stove. Bring the water to a boil and then remove the pot from the heat and let sit for 45 minutes to 1 hour. You can prepare the other ingredients in the meantime.⠀
Making The Topping:⠀
Mash together raspberries, chia seeds, and maple syrup. Set aside to gel.⠀
To Make The Crust:⠀
Add dates and nuts to a processor and pulse a few times to break up the big chunks. Add the pinch of salt and process for 2-3 minutes, or until finely chopped. Mixture should hold together when pressed. If mixture is too dry, add in a few more dates and process until well combined. Press mixture into the bottom of a 8x8 or 9x9 pan with parchment paper.⠀
To Make The Filling:⠀
After your cashews have soaked, rinse and drain the dirty water. Add cashews to your food processor, along with lemon juice, coconut oil, maple syrup, and lemon zest. Blend until creamy.⠀
Putting It Together:⠀
Pour filling onto the crust and spread across the pan evenly. Spread the raspberry sauce on top of the filling until evenly distributed. Cover the pan well with foil and place into the freezer for 2-3 hours, or until mixture has firmed. Cut into bars and thaw for 10-15 minutes before serving. Best eaten when cold, but creamy. Keep in the refrigerator or freezer until ready to serve. Enjoy!

Tonight I got a bit creative and made falafel crumb flatbread with tzatziki and garlic spiced tomato!! This recipe was very much inspired by a flatbread and chickpea recipe by @lallimusic of @bonappetitmag 💕💕💕
I started by slicing some truss tomatoes and rubbing over a garlic spice mix, and then I just set that aside so all the flavours could sink in to the tomato 🍅
Then I quickly made the tzatziki with coyo, cucumber 🥒, coriander, tobasco and lime juice, and put that in the fridge to chill.
For the falafel crumb, I ground up some almonds with garlic and spices and then processed that with a tin of chickpeas and some coriander. Then I just fried up the mixture in a pan for 10 minutes or so until it was a crispy crumb!!
To make the flatbread I used a mix of buckwheat flour and spelt flour, with a lil bit of baking powder and salt, and coyo to bring it all together!! Then I just rolled it into 4 equal sized balls and let that rest for a bit, before folding in some of the falafel crumb and rolling them out into discs. I cooked these in the pan and then plated up!
Such a good meal, and the left overs will be great for lunches 😊😊😊
Japanese sweet potato 🥔
This is the most filling and healthiest meal ever! Purple sweet potato is the main ingredient used in Okinawan cuisine. Okinawa is a small Japanese island where people live off the earth. They are known to have the longest life span mainly because they follow a plant based diet 🌱
PS: you can use regular sweet potato if you want or can't find purple ones, but it won't taste as good... Purple sweet potato has a distinct taste and texture. Have a look at your local Asian supermarket in the fresh section.
Ingredients: purple sweet potatoes (as many as needed, count 1 potato per person), 2 green onions, white miso, Nuttelex.
1. Preheat oven to 220 degrees Celsius.
2. Wash the potatoes' skin thoroughly with cold water and a brush. Make sure you remove all the dirt. The potatoes should look bright purple when you're done.
3. Using a long knife, pierce the potatoes a few times all around.
4. When the oven is at the right temperature, place the sweet potatoes on a grill on the middle of the oven. Let them bake for 35 minutes, flip them on their other side and keep baking for another 25 minutes.
5. Meanwhile, place 5 to 8 tablespoons of Nuttelex in a bowl. Let it sit at room temperature until very soft (but not melted).
6. Mince the green onions. Mix them with Nuttelex (when it's soft enough) along with 2 tablespoons of miso.
7. When the potatoes are baked, cut them in halves. Use a fork to mash the inside without breaking the skin and flatten them. Place 3 teaspoons of the miso butter on each potato 'slice' and combine with the fork by mashing.
8. You can add some sliced green onions on top of you want. Serve warm.
This is a good curry. Made with cashew cream ☺️ I know a few people have asked for this recipe but I haven’t gotten around to completely nailing the flavours / writing out the recipe.. so I’m sorry about that but I’ll work on it. Nurse life is getting the better of me 😅 if you or your parents have high cholesterol, replace dairy cream for cashew cream - 0% cholesterol and 100% delicious 🤤

Made this taco tofu salad thing again, so good 😍 Also really simple to make - I toss spicy tofu in a spoonful of flour and a heap of taco seasoning, then pan fry. Drain a can of corn and chargrill on the stove. Wash spinach leaves. Then just toss it all together in a bowl! I also added a little garlic aioli too 👌 #vegan#whatveganseat
