I made these delicious vegan black bean mushroom burgers after a fun day of riding mountain bikes 🚵🏽‍♀️! A great way to end an awesome day!! I made up this recipe as I was driving down from the mountains. My favorite thing is to invent new recipes! The burgers are sautéed garlic, onion, mushrooms, spinach and a bunch of spices. Then I stuck the veggies in the food processor with the black beans. Then in a large bowl I mixed the veggie/bean mixture with almond flour and oats (it needed something to make it all stick, the oats did the trick)! Sooo good!! Ive been slow cooking this vegan birria for 4 hours, and its finally done! Taste just like birria I kid you not. Yumm😋🌱👌 Birria sauce recipe:
2 guajillo chiles
2 anchor chiles
2 cascabel chiles
4 garlic cloves
1 tsp cumin
1 tbs oregano
1 tsp salt
1/2 of an onion 
I used 2 cans of shredded jack fruit.

Boil chiles in a pot for 20 minutes or until soft. Transfer all ingredients to a blender and  puree. Shred jack fruit once your finished transfer jack fruit to a pot and with 1 tbs grapeseed oil, saute for 5 minutes. Add the birria sauce  plus 4 bay leaves and slow cook for 4 hours.

Do you like eggplant? Try this easy and healthy recipe. Baked Eggplant 🍆 with Tahini Sauce 😋 
Find all ingredients in our market 🛒 .

1 eggplant, sliced in half 
Drizzle of olive oil 
Sprinkle of sea salt 
Handful cherry tomatoes 
Handful Arugula 
2 tablespoons tahini 
1 tablespoon olive oil
2-3 teaspoons lemon juice 
Salt, to taste .
Preheat an oven to 375F. Score each half of the eggplant with a knife in a cross cross pattern. Drizzle with the olive oil and sprinkle with salt. Bake for 40-45 minutes until soft.
Whisk together the tahini, lemon, oil, salt and water until smooth. Drizzle over the warm eggplant and top with the tomatoes and arugula.
This makes a tasty side dish! .

Mediterranean rolls with smoky red bean hummus by @amelietahiti. Ingredients:
Hummus -
1 can of red bean (rinsed, drained)
1 dollop of tahini 
Half a lemon juice 
dash of water
1/2 tsp salt
1 tbsp smoked paprika 
1/4 cup colored peppers 
2 cloves of roasted garlic in olive oil - 1 if not too font of garlic. (add a tsp olive oil if you don’t use garlic)
Rolls -
Rice paper
Lettuce
Hummus
Cucumber
Dried tomatoes
Roasted eggplants
Colored peppers
Mint 
Method:
Take a clove of garlic and cut off the top with a knife. Drizzle olive oil on top, wrap in foil and cook 10 minutes at 180°C in the oven.
For the hummus start blitzing beans, tahini and spices together, then add remaining ingredients. Adjust water if needed.
For the rolls, dip each paper in warm water a few seconds until it get softs. Then lay on a clean surface and start adding all the fillings. I like to start with lettuce because it nicely tighten everything. Wrap the paper over the ingredients, then fold at the sides and keep on rollin’ 😎. Finally dip your rolls in remaining hummus.

Even better when they are smeared with more almond butter while they are still warm 😍

I used @navawholefoods maca powder for this bowl. Maca is actually a plant native to Peru and has an earthy and slightly nutty taste to it. It can be used in many things like smoothies, oats, protein balls etc.. Maca also has some great health benefits to it. It is a good source of carbs,  protein and fibre, low in fat and is high in essential vitamins and minerals such as vitamin C, copper and iron as well as containing eight essential amino acids. Studies have shown that the use of maca powder can help improve your mood and reduce anxiety as well as balancing hormones. It’s great for increasing strength and boosting energy. It has also been linked to increased fertility in men and women. It’s a great little superfood and I highly recommend trying it out. 🌱

Usually I use maple syrup but these bananas were so ripe it wasn’t necessary. There is also #reishi powder blended in for an extra boost. Topped with chia seeds and fresh raspberries #veganrecipes

Chia “porridge” - a delicious breakfast or, in tonight’s case, dessert.

Inspired by: the “raw superfood porridge” I ate at Sedona’s fantastic @chocolatree eatery.

My version: 1/4 cup chia seeds + 2 TBSPs cacao/cocoa powder + 1 TBSP cacao nibs + 1 TBSP shredded coconut + 1 teaspoon maca powder + 1/2 tsp mesquite powder + 1/2 tsp camu powder (optional).

Mix all dry ingredients. Then, pour 1 cup warm/heated non-dairy milk (in this case, homemade almond-pecan-hazelnut) over dry ingredients.

Let sit for 5-7 minutes. Then, drizzle 1 Tablespoon coconut butter over porridge and garnish with fresh berries.
Chia “porridge” - a delicious breakfast or, in tonight’s case, dessert. 🥣 Inspired by: the “raw superfood porridge” I ate at Sedona’s fantastic @chocolatree eatery. 🥣 My version: 1/4 cup chia seeds + 2 TBSPs cacao/cocoa powder + 1 TBSP cacao nibs + 1 TBSP shredded coconut + 1 teaspoon maca powder + 1/2 tsp mesquite powder + 1/2 tsp camu powder (optional). 🥣 Mix all dry ingredients. Then, pour 1 cup warm/heated non-dairy milk (in this case, homemade almond-pecan-hazelnut) over dry ingredients. 🥣 Let sit for 5-7 minutes. Then, drizzle 1 Tablespoon coconut butter over porridge and garnish with fresh berries.

We are so lucky to have such yummy VEGAN Japanese food available here in Melbourne... but I really do love cooking so I had a go and got it just the way I like it! Honestly I'm not a big curry fan, but I love love love Japanese curry! It captures the idea of curry but carries a lighter less pungent perspective that is just right for me! I kept this dish very Japanese making Shiitake mushroom the star of the show... talk about perfection 😋🍛

Topped with chia, amaranth, pistachio, coconut, flaxseed and fresh blueberries... this mornings breakfast has my body prepared for an active sunny winters day! I'm not the biggest fan of eating anything sweet for breaky, but the amount of goodness you can pack into one of these easy to prepare bowls is hard to go past! My eyes honestly feast on the colours alone 🌈👅

Coming home to my friends and loved ones has been such a heart warming delight! But boy do I love coming home to my kitchen 😋💕

I love experimenting according to my taste buds desires! I wanted to make a zesty zingy soup (to ease my body back into winter) that felt herbal/medicinal, whilst packed with green fresh veggies. So I made a VEGAN tamarind and ginger soup inspired by the Filipino favourite "sinigang", filled it with some fresh rice noodles, broccoli, green beans, Bok choy and white radish! Seasoned with some fresh lemon juice, grated fresh ginger, fried scallions and chillis to serve! SARAP 👅💗
