This delightful mess is one of my favourite ways to reduce food waste & fortunately tastes much better than it looks 😋 Grab all those broccoli stems, cauliflower stems, wonky carrots, half turnips, end bits of pumpkins & blitz them in your food processor with lots of garlic until they’re cous cous sized 🥦 🥕 🎃 Fry off half an onion in olive oil, add your veggie cous cous & a cup or more of half mashed chickpeas or lentils & cook over a medium heat until just soft. I like to add some sea salt, ground cumin, smoked paprika & dried chilli flakes too 🌶 Serve with hummus (of course 😆) and/or 🥑 & a good squeeze of 🍋 This dish makes a great nutrient dense, high fibre and protein sufficient breakfast or can be added to burritos 🌯 tacos 🌮 veggie 🍝 or wraps 👩🍳
I absolutely LOVED these quinua + oats pancakes 🤩 they are so healthy and loaded with essentials amino-acids and fibre. You can have them for breakfast or dinner. I topped them with blueberries, homemade peanut butter and coco flakes.
It’s pretty quick and simple you will need
2 bananas 🍌
1 cup of oats
1/2 cup of quinua
300ml of soy milk 🥛or the one you have available
Little bit of vanilla

The blueberries add a delicious plump juiciness but of course you could switch it up and use any fruit you like! Let me know if you give it a go💫

First heat Oven to 170 deg
You will need a cake tin Aprox 8" I use a fluted loose bottom one (easier to lift out)
1 C Oats
1 C Almonds
3 Tbls Coconut sugar
5 Tbls melted Coconut oil
Place all ingredients into food processor EXCEPT coconut oil.. pulse till fine.. add coconut oil and pulse till combined and becomes a ball..
Place in tin and flatten base and sides..place baking beads on top and Place in oven for Aprox 27 mins.. keep an eye on it, my oven is a fan oven so it may vary!
Take out and leave to cool completely.
600g organic Silken Tofu
1/2 Tsp pure vanilla extract
4 Tbls pure maple syrup
4 - 6 Tbls Lemon juice (stick your finger in and see if you want more or less tangyness)
Zest of 1 1/2 - 2 Lemons
5 Tbls melted coconut oil
Lemon zest and Blueberries for decoration
In a high speed blender combine all ingredients above except coconut oil, once the above is smooth and creamy add melted coconut oil and combine fully.
Pour into cooled biscuit base and place in fridge until fully set.. Aprox 3-4 hrs
Once set..grate some lime zest on top and add blueberries.

Vegan “Waldorf” salad. I made up my own version based on different Pinterest recipes.
Most recipes called for chick peas but I had an open can of kidney beans I wanted to use. Here is what I did:
2 tablespoons tahini,
1 tablespoon apple cider vinegar
1 1/2 teaspoons pure maple syrup (optional)
Dash of onion powder
Dash of garlic powder
Pinch of salt and pepper
Mix in small bowl.
1 1/2 cup sliced grapes
2 chopped celery ribs
1/2 cup chopped walnuts
1/4 chopped red onion
1 can kidney beans drained.

Almost nothing floats my boat like fresh raspberries! They remind me of my childhood munching on raspberries all day at my grandparents forest home and waking up to black bears under my window at night - they like berries too!

Literally stumbled upon @vanleeuwenicecream while in SoHo and actually freaked out. This ice cream was a cashew and coconut base which was different than the usual banana base!! I got cookie dough and mint chocolate chip ice cream topped with vegan chocolate sauce, vegan whipped cream, sprinkles, and cacao nibs 😍😍😍 This was literally so good and I ate it in like 5 minutes #cheatday#icecream#nyc#newyorkeats#newyork#nyc#soho
Four different vegan meals and the nutrition info for each one! All are highly nutritious, rich in protein, and also easy to prepare!
Meal #1 :
- 7oz romaine lettuce
- 1 medium tomato
- 4 kalamata olives
- homemade hummus (4 oz chickpeas, 1 tbsp lemon juice, 1/2 tbsp grapeseed oil, 2 tbsp nutritional yeast flakes, dash of Himalayan sea salt & pepper, plus some water to blend smooth)
- 8 oz tofu, cooked until crispy (no oil needed)
- 2 tbsp just ranch by Hampton Creek
Meal #2 :
- 5 oz whole wheat pasta
- 8 oz marinara sauce
- 4 oz salt-free tomato sauce
- 1.25 oz minced tvp
- 2 tbsp nutritional yeast flakes
- 4.5 oz broccoli
- salt & pepper
FYI: this is so easy to make. All you have to do is put the dry tvp in the tomato sauce and let it sit on medium heat, stirring occasionally, until tvp is soft.
Meal #3 :
- 3 oz brown rice, 1 tbsp lemon juice
- 8 oz spinach
- salt & pepper
- homemade hummus (8 oz chickpeas, 2 tsp grapeseed oil, 4 kalamata olives, 2 tbsp nutritional yeast flakes, salt & pepper, plus some water to blend smooth)
Meal #4 :
- 2 small Ezekiel tortillas, toasted
- tofu “egg” spread (8 oz tofu, 3 tbsp nutritional yeast flakes, 1.5 tbsp just mayo by Hampton Creek, tbsp lemon juice, salt & pepper)
- 11 oz strawberries
- walnuts, approximately 6 halves
That’s it! These are some of my go-to healthy meals. As you can see I’m not afraid of calories. There’s nothing to be afraid of there. We need calories to survive, to gain muscle, to become better versions of ourselves. It’s all about the nutritional value behind those calories. I cannot recommend the Cronometer app enough. Start tracking your nutrition and you’ll get the hang of it sooner than you think! Adopting a healthier lifestyle doesn’t have to be hard.
