I’m clearly obsessed with anything chocolate peanut butter. I made a pretzel 🥨crust to this baby and it added the perfect salty sweetness to this already delicious peanut butter mousse pie!
Got this haggis and mash pie from @cooljerkvegan at the great Yorkshire vegan festival this weekend. (I dropped it and it fell apart, so not all on the pic). It was incredible, I really wish I had bought more. Would definitely recommend if you get the chance to have one . Have good week everyone x
Tonight’s dinner consisted of a delicious @clivespies creamy mushroom pie, courtesy of my mum! 🍄 Also, a massive mound of peas, boiled baby potatoes sprinkled with salt, pepper and oil and some vegetable gravy from Sainsburys. In retrospect I should’ve probably made mash rather than boiled them but oh well! This was my first time trying any of the Clive’s pie range and it was absolutely delicious! I was expecting something similar to a Linda pie but this one was so so creamy and wasn’t a flakey pastry pie like others I’ve had. Honestly it was so good I’m going to have to try some of the others in the range now. If anyone’s interested the gravy I used was the Sainsbury’s own gravy granules for vegetarian dishes, which is labelled vegan, it’s pretty standard as far as veg gravy goes! 🌱💚 #whatveganseat#veganmeals#veganshare#vegandinner#clivespies#veganpie#veganstudent#veganonabudget

Mais que voulez-vous. Pour le dessert de dimanche, ma famille m’a réclamé une Tarte Amandine aux Abricots “à ma façon”. 🎈
Bon, évidemment, puisque c’est “à ma façon”, je n’ai pas pu m’empêcher de la twister un peu selon mon envie et inspiration du moment… 😺 Difficile pour moi de rester sur un classique, j’ai toujours envie d’essayer des choses un peu différentes. 🐣
Du coup, je suis partie sur une Tarte Façon Amandine aux Abricots, Framboises & Citron Vert. 🍊🍓
C’était si délicieux et tellement parfumé ! ✨ Le mélange des saveurs est divin, avec une pâte au bon goût de biscuit sablé, une crème au délicat parfum d’amande relevée d’une note acidulée de citron vert, et de généreux morceaux juteux d’abricots et de framboises… 💖 Fruité et gourmand à souhait, comme on l'aime. 🌈

Pies and Portholes 🥧
Key Lime Pie Recipe (makes 2 pies)
For the filling:
2.5 cups soaked cashews
2 cups coconut cream
3/4 cup coconut oil (melted)
10 large limes (or about 30 key limes) - juice & 2 tsp zest
1 cup agave
Blend in high speed blender until creamy
For the crust: 3 sleeves of graham crackers or digestive biscuits (Maria’s) and 1 cup melted plant butter - crumb in a food processor
Smoosh the crust mix in a pie dish and bake on 190c for 10(ish) minutes until golden. Remove from oven and let cool for about 10 minutes while making your filling. Pour filling mix into crust and freeze for about 4 hours. Let thaw for 10 minutes before serving 🍈
Vegan peach pie! When I asked Josh what he wanted to eat on father's day, I wasn't all that excited when he said he wanted a pie. I've never had much success with pie crusts and yesterday was no different. Yesterday was hot. We don't have air conditioning (Personal choice - we like living more naturally and aligned with the seasons, discomfort can be detoxifying) and it felt like no amount of fridge time helped my crust stay together. There were tears and yelling involved in the process and eventually, like all good life lessons where it is realized that clinging to an expecation can be detrimental - I finally let go. Isn't it funny how free you feel once you finally surrender to the circumstances, you look back and wonder why you held on so tightly? The idea of how things should unravel can be so woven into an experience and despite the pain and frustration, it can feel impossible to let go... But sometimes we must. Sometimes when we let go we find that we are strongest when we surrender the reins. .
Here's my failure. I am not a magical pie fairy. I successfully made bagels, banana bread, and then chocolate cake for my sister's birthday and I felt confident, but pie creation will take practice, practice without tears and yelling.
It wasn't pretty or latticed as intended, but it was still delicious. The secret ingredient is basil - thanks to Isa and Vegan Pie in the Sky for a great recipe. The basil complements the peaches exquisitely! Kai was in awe of our use of the basil we grew in our window. Oh, the little things in life make a world of difference. .
