Not gonna lie... this is such yummy comfort food.
Vegan Pasta Bake 🍝

500g cooked pasta
1 chopped onion
1 tsp chopped garlic
1 red capsicum/pepper
1 tbsp oil
Dried Italian herbs
250g sliced mushrooms
1 tbsp soy sauce
1/2 cup tomato paste
400g canned lentils
800g canned chopped tomatoes
1-2 tbsp brown sugar
Salt and pepper to taste
Cashew Cream (blend together):
1 cup raw cashews
1 squeezed lemon
1/2 cup water
1/2 tsp salt
White Sauce (stovetop):
3 tbsp vegan butter (melt in pan)
2 tbsp flour (whisk quickly)
400ml canned coconut milk
1/3 cup vegetable stock
Bring to boil and stir 4 minutes (til thick)
Remove from heat, add:
1 tsp black pepper
1 tsp dijon mustard
1/4 cup nutritional yeast
Salt and pepper to taste
Put cooked pasta in large oven safe dish. Combine red sauce and cashew cream. Add the sauce to the pasta and mix. Layer the top with white sauce. Bake at 430F (220C) for 15-20 minutes.
Last nights tea was a bbq cheesey pasta bake with G bread!!!! I made the garlic bread by slicing an oven baguette and filling with a mix of margarine, garlic puree, and parsley and then in the oven for 10 mins.
Also using crunched up crisps on top of the bake and then topped with cheese creates the most perfect crunchy chewy cheesy goodness!!!
Today I decided to make a pasta bake with the left over squash and eggplant I had from the Ratatouille.
started off sautéing onion and garlic, then added the quartered squash (zucchini and yellow) and eggplant. Tossed in some sweet peppers and tomato paste, added some almond milk to make it creamy.
Brought it all to a boil, and then added some Earth Grown cream “cheese.”
Let it simmer for about 15 minutes and then put it in a casserole dish with some bow tie pasta and tri colored pasta. Really just trying to clean out the pantry.
Topped it all with @daiyafoods shreds and bread crumbs, set it in the oven to bake for 10 minutes, then on broil to brown for a few minutes.
