🍆 MEAT FREE MONDAY RECIPE 🍆
🇹🇷 Imam Bayildi 🇹🇷(Or a version of it) -
A flavoursome Turkish dish based on Aubergine/eggplants and tomatoes -
- 2 aubergines
- 4 cloves of garlic
- 1 onion
- Jar of roasted peppers - chopped
- 2 x 400g tinned tomatoes
- 1 tsp paprika
- 1 tsp cumin
- 2 tsp oregano
- Dash of liquid smoke
- Squeeze of lemon juice
- Salt and pepper to taste
- Parmesan (vegan/vegetarian)
- Pine nuts
- Thinly slice the aubergines and salt, roast with full garlic cloves for 15-20mins
- Fry the onions, then add all the other ingredients except parmesan/pine nuts and simmer
- Squeeze the garlic cloves into the tomato stew when roasted
- Assemble aubergine slices and tomato mixture in layers in a baking tray
- Top with Parmesan and pine nuts and bake for 30 minutes
- Serve with bulgar wheat and a dollop of yoghurt (milk/soy) or whatever you want!

This is my Green Goddess Goodness
I didn’t want to crowd my pictures with the recipe and directions, so here you go...and by the way, I can’t stop eating this...you’ll have leftovers for a bit...maybe🔮😈 🔥Ingredients For the pasta:
Pad Thai Brown Rice noodles (gluten free!)
One head of broccoli 🔥Ingredients For the sauce:
3 cloves garlic
2 handfuls spinach
2 handfuls kale
1/2 c chopped walnuts
1 handful fresh basil (or 1 tbsp dried basil)
2 tbsp olive oil
2 tbsp nutritional yeast
Juice of 1 lemon
Dash sea salt
1.5 cups of pasta water 🔥Extra love:
2 handfuls of mixed greens (I used mixed arugula and baby spinach)
Mixed seeds/nuts, chopped (I used pumpkin, sunflower seeds, walnuts)
🌱Boil some water and add sea salt.
🌱Add broccoli and cook 5 minutes
🌱turn off heat and add noodles
🌱let sit in water for 5 minutes
🌱Drain noodles and broccoli saving 1.5 cups of water for the sauce
To make the Green Goddess sauce:
🌱Combine all ingredients for sauce in a food processor and blend
Bring it home, baby:
🌱slice up some tomatoes and add them to the pasta
🌱add a couple handfuls of mixed greens
🌱add the sauce to the pasta and fold it in 🔮Serve with a topping of the mixed seeds/nuts and vegan Parmesan (see the previous post for the recipe)

Spaghetti and meatballs for dinner tonight. It’s my homesick meal, I wish I was all bundled up on my families porch with my sister, with a roaring fire going while we watch the snowflakes fall. But I’m stuck on the “best” coast...
Tonight I made half of the meatballs in the sauce and the other half in the oven- sauce meatballs are definitely the way to go.
2 lbs beef
1 lb pork
1 lb bison
Herbs: 1.5 T of basil, oregano, and sage. 1/2c fresh parsley.
1 cup breadcrumbs (gf)
Caramelized larger chopped onion and 3 cloves garlic
-I did not add egg or Parmesan
Sauce meatballs: Quick sear in hot pan, tossed in hot sauce, and cook for at least an hour. .
Oven meatballs: 425* on sheet pan, for 20 minutes then 475* for 5 minutes and tossed into the sauce.
No I don’t share my sauce recipe because it’s a family thing.

We didn’t make these #cauliflowergnocchi (thanks @traderjoes !) but we did enjoy tossing them with a creamy lemon garlic sauce with mushrooms, white beans, peas, and onions.
#tbt to dinner last night 👉 This #plantbased#bowl is filled all veggies and flavor. Sauce is easy peasy! Lots of fiber, protein, and vitamins in here to name a few goodies.
Prepared the gnocchi based on package instructions- steam then sauté - but we used our @lecreuset instead of the called for non stick. Came out perfect.
