Did you know half a cup of lentils provides 32% of your days worth of fibre?! Yep. Plus I have all the veggies providing even more fibre. If you want to get rid of toxins you must have fibre to keep you regular 😊.

I have come to really love tofu since being vegan, it was a real grower on me! My fave is @tofooco extra firm and I coat it in cornflour before frying to give it a crispy skin. Tofu is a great source of protein, calcium and iron as well as lots of other vits and minerals 💪
In my bowl: ✔️firm tofu mixed with cornflour and then fried ✔️cooked lentils mixed with tsp of following spices - curry powder, chilli, cumin, garam masala, onion granules, garlic powder, turmeric ✔️tinned chickpeas cooked and drained then mixed with tsp nigella seeds, tsp paprika ✔️tomatoes ✔️avocado ✔️roasted butternut squash and peppers (15 mins, 200 degrees) ✔️black olives ✔️spinach ✔️fresh basil ✔️spring onions ✔️sesame seeds

My best friend, Duck, eats a vegan diet, too!
Although there are plenty of acceptable vegan kibble brands out there ( @naturalbalanceinc @halopets for example), I eventually began feeding little Duck fresh food.
Her daily meal base is a blend of quinoa and lentils, and with that she eats a HUGE variety of other foods:
>> Fruit: bananas, berries, avocado (it’s a myth that dogs can’t eat avocado!), etc.
>> Veg: green peas, spinach, sweet potatoes, broccoli, etc.
>> Fats: peanut butter, coconut oil, flaxseed oil, etc. ***sidenote: I took this photo last week when Duck came to the gym with me and she crawled right up onto the towels 😂😍

Fat is caloric dense. Packing nine calories per gram, fat is a more concentrated source of energy than both protein and carbohydrates. In order to gain mass, as many bodybuilders are attempting to do, you need to be in a caloric surplus.
Because dietary fat provides so many calories in such a small volume of food, it is a lifesaver for many "hardgainers" who would otherwise have no way of consuming enough calories by the end of the day. Let me put it this way - would you rather chow down on a forest of broccoli or a tablespoon or two of peanut butter to grow? 😋🥜
❌Trans fats 🚫 are the worst type of fat you can possibly eat. These man-made fats can harm the body in countless ways. They can raise cholesterol levels, increase the risk of heart disease, Alzheimer's disease, cancer, diabetes, liver dysfunction, and infertility.
Trans fats can be found in margarine, butter, many packaged and frozen foods, soups, cookies, cakes, other desserts, and fast food. I recommend avoiding these at all costs.
❌Saturated Fat🚫 Most saturated fat comes from animal products, such as meat, poultry and cheese. Basically, any fat that is solid at room temperature, such as butter, is mostly saturated fat. Eating too much saturated fat can increase your LDL cholesterol, and thus increase your risk for heart disease. Additionally, saturated fat may also increase your risk for type 2 diabetes.

Tropical fruit plate.... for one! 😉🍉🍍🍌 We really need to ditch our fear of fruit. Fruit is full of essential vitamins, minerals, enzymes and phytonutrients which are completely bioavailable - and many of these nutrients aren't found in other foods. But fruit is high in sugar? The natural sugar in fruit, when eaten as a wholefood, is digested much differently to part-foods or even fruit juices. Fibre is known to help control blood sugar levels; when fruit is eaten as a wholefood, the fibre helps slow down the absorption of carbs/sugars in the small intestine - this aids digestion and excess sugars are then excreted from the body. However, if fruit doesn't agree with you, then there is more going on - and fruit is merely a trigger, not the cause 🍉🍍🍌
Magnesium helps regulate blood glucose levels, and together with potassium, both minerals assist in insulin secretion (different types of Type-Two Diabetes medications actually raise magnesium levels in the body)! Many people are magnesium deficient, so if fruit is messing with you, I'd highly suggest looking into mineral deficiencies, as well as your gut health 🍉🍍🍌
Fruit is also the highest lifeforce food on Earth - it's full of Sun energy (lifeforce) which is essential to being alive! We can't be alive without lifeforce, and only when we are low on lifeforce, is when we get sick - a high lifeforce body cannot get sick 🙏
Lifeforce is Universal energy, and the way that lifeforce reaches us on Earth is from the Sun and through the Earth. Trees spend years in the Earth soaking up Sun energy, and when they grow fruit, their fruits spend time growing in the Sun - also soaking up Sun energy. Don't be afraid of fruit! Eat whole fruits, eat the skins where possible, and opt for smoothies over juices - without the fibre, the natural sugars aren't as easy to digest and excrete. And don't rely on 'powders' for your fruit; many of the nutrients are lost during the processing stages, and powders don't contain lifeforce ☉🍉🍌🍍

I love sweet potatoes! Since I am eating carbs again (because muscle building) I am looking for fun and delicious (and easy)ways to incorporate them in my first post-workout meal💪🔥And I finally came out with a dressing with Tahini that I like! It's full of protein, micronutrients and probiotics!
Total servings: 1
-1 serving of carbs
-1 serving of veggies
-1 serving of healthy fats
-1 serving of fribrous protein
•1 small sweet potato (around 1/2 cup).
•1/2 cup of your favorite meatless chilli.
•1 cup of baby spinach spring mix or the leafy green of your preference.
•1 Tbsp of tahini.
•1 Tbsp hemp heart seeds.
•1 Tbsp of coconut aminos or low-sodium tamari.
•1 Tbsp of saukernut.
•1 tsp of Apple cider vinegar or lime.
•1 sacket of stevia or, 1 and 1/4 teaspoons of pure maple syrup.
•1/2 tsp of siriacha sauce.
•1/2 to 1 garlic clove.
•1/2 tsp of turmeric.
•1/8 tsp ground black pepper or few twists to your liking.
•1/2 tsp of freshly grated ginger or 1 tsp of ground ginger .
•Cut your sweet potato in wedges or slices and Airfy for 15 to 20 min.
•Heat your favorite chilli in a saucepan over low-medium until heated through.
•Blend all the sauce ingredients on a high-power blender or food processor.
•Serve it by putting the cup of spinach or greens, first on a bowl followed by the sweet potato chips andthe chilli. Drizzle the sauce on top and enjoy! 😁🥗

Your thoughts and behaviours change your cells. What you put out into this world matters for yourself and others. Be a jerk and it will eat you up and make your cells sick. Practice kindness and be a grateful person and your body will love you for it. Others will also feel your energy and warm to your presence 💛.
My first attempt at the Garden Vegetable Rice from #simpleveganblog and although I probably get no points for presentation, it is full of nutrition and tastes pretty darn good!👍🏼
Creamy Polenta with Mushrooms and Spinach🌱
Polenta (Basic Recipe):
- 1 cup polenta (150 g)
- 3/4 cup coconut milk (200 ml)
- 1 1/4 cup vegetable broth (300 ml)
- 2-3 tbsp nutritional yeast flakes or vegan parmesan cheese.
Mushroom Spinach Topping:
- 1 tbsp olive oil or coconut oil
- 1 onion sliced
- 200g sliced mushrooms (200 g)
- 2 cloves garlic minced
- 1-2 tbsp soy sauce
- 2 cups spinach roughly chopped
- 2-3 tbsp pine nuts
Bring coconut milk and vegetable broth to a boil in a pot. Stir in polenta by using a whisk.
Reduce heat to a low simmer and continue to whisk for 1-2 minutes to avoid lumps.
Then cover and let simmer for about 10 minutes (or according packaging instructions), stirring occasionally. (If the polenta thickens too much you can add additional milk and/or water and stir to thin.)
Once the Polenta is creamy and smooth, remove from the stovetop. Add nutritional yeast or vegan parmesan and stir.
Mushroom Spinach Topping:
Heat oil in a pan. Add mushrooms along with onions and fry for about 3 minutes on high heat or until beginning to get golden-brown.
Add minced garlic and roast for 30 seconds longer. Then add soy sauce and spinach and cook for 1-2 minutes or until spinach is wilted. Season with salt and pepper to taste. Add a splash of fresh lime juice, if you like.
Toast pine nuts in a small pan without oil until lightly browned.
Serve polenta with mushrooms, spinach and pine nuts.
