Grilled teriyaki tofu with @followyourheart pepper jack cheese and homemade chipotle mayo coleslaw on White Bread Done Right from @daveskillerbread 🌱😋✌🏼🌱
This did the job and had a very complex multilayer flavor. Sweet teriyaki with spicy pepper jack followed by tangy apple cider vinegar with a smokey chipotle finish. The crunchy coleslaw went welll with the smooth texture of the tofu. 🌱🌶😲😍🌱
I had 20 mins to cook up something delicious, nutritious & filling! Today I've basically lived out of my car, I've been going back and forth and running the kids all over tarnation! And we still have more places to go. It's 2:00 and I feel done for the day already 😂 So here's what I made 😁 I boiled 1 cup of red lentil pasta and after it was cooked I drained it but saved some of the pasta liquid. I added a ton of roasted garlic hummus, s&p, garlic powder, a bazillion handfuls of chopped baby kale & spinach, and a wee little bit of pasta water. The water thins out the hummus 😁 Add it 1 TBS at a time because you don't want watery pasta. Or flavorless pasta! Oh, I added sriracha too! Sriracha adds some heat and depth to this super simple dish 😁 I loaded it up in my BAB and ate it in the Kumon parking lot lol Here's a little factoid about me, even tho it's not Factoidfriday... I eat most of my meals in parking lots, school of rock or my bed lol. When soccer starts up I'll be eating there too lol. I never imagined that being a momma would be so chaotic! A big change for an even bigger reason. Natalie Portman explained why she chose to become a vegan during her first pregnancy.
The 37-year-old actress read Jonathan Safran Foer’s critically acclaimed book Eating Animals while she was expecting her first child. Portman said the read changed her perspective about what she is willing to consume. “I became vegan after reading the book, and you know, [I have] been able to find over the years really great products. There’s like tempeh bacon, you know, coconut milk, yogurt, cheese is made out of cashews and all sorts of delicious things that they’ve figured out that are great replacements for those things you crave.” Portman’s children — she shares Aleph, 7, and Amalia, 15 months, with husband Benjamin Millepied — follow her lead in the healthy eating department. “It comes really naturally because I think, you know, you tend to make one thing that everyone eats for dinner.”
Made these delicious raw snickers slices yesterday using a recipe on @asunshinemission blog and they turned out delicious. I was hoping they’d be similar to the one I had in 42 juice in Brighton and they’re so similar so overall a great success 😏 anyway today’s been a pretty chill day, just starting to sort out stuff for my placement now as I actually have a job sorted now finally woo 🙌 so if anyone has any recommendations of finding a place to live in Barcelona then please let me know 😂 very nervous but exciting changes happening soon and not sure how to feel but I’m still so happy I got the job that I’ve wanted for well over a year now! Trying out @ripplefoods Vegan Half & Half today for the first time. Not bad overall, with less sugar than the other nondairy creamer‘s I’ve been using. One thing I was not fond of was that last ship of coffee where there was a silty residue from the creamer. With the 2nd cup I kept stirring and did not have the same issue. 🌴😎✌🏼🌴
Love the flavor mixed with @cafebustelo coffee and loved the BOGO at @publix which enticed me to buy it! 🌱😋✌🏼🌱

No sé ustedes pero el tofu es una de las cosas que más me ha costado incorporar en mi dieta. Por un lado por su disponibilidad y por otro su falta de sabor 😖. Es por eso que con este ingrediente hay que ser un poco más agresivos con el sabor que se le va a dar y créanme que queda sabroso. La magia está en la combinación de especias que se le pone y dejar marinar por un tiempo💕. Aquí les dejo una combinación que me sirvió mucho. .
4 rodajas de tofu horneado con albahaca 🌿. (Podrían usar el regular).
1 cda de aceite de oliva extra virgen.
1 cdta de cúrcuma.
1 cdta de paprika.
1 cdta de tomillo.
1/2 cdta de sal marina.
En un bowl colocar las rodajas de tofu espaciadas y esparcir por encima el resto de ingredientes. Con las manos masajear el tofu para que absorba todos los sabores. Tapar y dejar macerar por lo menos una hora (yo lo dejé toda la noche en la refrigeradora). Para cocinarlos, simplemente calentar una sartén y colocar los pedazos de tofu. Esperar a que doren y se los gira para tener un dorado perfecto en cada lado. Yo me lo serví con una ensalada fresca, se puede añadir también un poco de arroz. .
Spicy Vegan Jambalaya ~INGREDIENTS~
3 Tbsp. extra virgin olive oil
1 large yellow onion, diced
3 cloves garlic, chopped
4 large stalks celery, diced
1 heaping Tablespoon diced jalapeño (use more or less depending on how spicy you like things – 1 Tbsp. gives it a nice kick)
4 cups diced fresh tomatoes (you could also use whole cherry tomatoes or one large can of crushed tomatoes)
2 cups uncooked brown rice
4.5 cups vegetable stock
2 teaspoons vegan worcestershire sauce (you can find some good vegan varieties online or, if you don’t have any of the vegan stuff handy, just leave it out!)
3 bay leaves
1 teaspoon smoked paprika
2 teaspoons hot sauce (I use Sriracha)
salt and pepper to taste
1.5 cups chopped cilantro, plus extra for garnish. ~INSTRUCTIONS~
1.) Heat oil in a large skillet or saucepan (use one that has a tight-fitting lid). 2.) Add onion, garlic, celery, and jalapeño to oil and sauté until onions are translucent, about 3 minutes.
3.) Add tomatoes and cook an additional minute or two to soften them up.
4.) Add rice, vegetable stock, worcestershire sauce, bay leaves, paprika, hot sauce, salt, and pepper to pan and stir to combine. Cover and bring mixture to a simmer. Let it cook for 20-40 minutes, until the rice has absorbed all the liquid and cooked through.
5.) Stir in fresh cilantro and serve immediately. Garnish with extra cilantro.
Notes ~This jambalaya has a nice kick to it. Use more or less jalapeño and paprika depending on how spicy you like things. Add cooked shrimp or andouille to make this a heartier meat dish. ~ ~If you don’t have vegan Worcestershire sauce handy, leave it out, or – if you aren’t a vegan/vegetarian – just use regular Worcestershire. I like this vegan variety from Annie’s. ~

When I finally went to bed at 630am on Sunday morning, 2.5 hours before I was due to get to the event, I was hoping you would all come out and support. And you did, in your droves! You sold me out of cakes and I'm sorry to those that didn't get what they came for, it was just gone 💥!!
