alright folks to start off your day I have something special for you. This right here is a SCOOKIE!!! Yes you heard me. It’s a combo of a scone and a cookie. And let me tell ya it is the BEST. THING.EVER. It’s is the perfect way to start up any morning or as a post run snack. These are BLUEBERRY SCOOKIES made with my fav @suncorefoods indigo blueberry super food powder- this stuff is packed with antioxidants and nutrients that are amazing for you plus it adds that perfect blueberry taste. These are vegan and GF!!!! So go turn on your oven rn and bake me up. ✌️✌️✌️✌️✌️✌️✌️
BLUEBERRY SCOOKIE: mix dry ingredients and cut in coconut oil then add milk and flax egg - bake at 400 for 15 min
1 cup GF oat flour
1 cup GF oats
1/3 cup coconut sugar
2 tsp baking powder
Pinch of salt
1/3 cup coconut oil
1 flax egg
2 tbsp almond milk
2 tbsp @suncorefoods blueberry indigo powder
Chocolate chips (optional but fun )

FINALLY! I think I just found my version of the perfect pancake! Great texture, really good flavor & loaded with whole grains, fiber & protein! 🌾 🥞 #oats#flax#glutenfree#veganpancakes
Recipe below (so I'll remember!) 1 c GF oats, whirled to make flour
3/4 c cashew milk
1/3 c organic unsweetened applesauce
1 T ground flax
1 tsp baking powder
Pinch of salt
Combine and let sit in a bowl for a few minutes to let everything soften and firm up. Takes a little longer to cook that regular 'cakes. This batch made about 15 mini's. (had to test one for QC 😉)
the yummiest pillow clouds I’d like to call gnocchi. I always find that the “I just used random things in my fridge” always turn out to be the absolute best. Trader Joe’s cauliflower gnocchi sautéed in @earthbalance butter with sriracha tofu, zucchini and topped with fresh basil and red pepper flakes !!
last SUNDAY STACK before I head off to college!!!!!! Very bittersweet but I decided to make the best stack of pancakes around. Made these vegan FLUFFY cinnamon PANCAKES!!!!!!!!!!!! Had these after my quick shake out run and couldn’t be happier. 🥞🥞🥞🥞🥞🥞🥞🥞
CINNAMON OAT PANCAKES:
1/2 cup oat flour
1/2 banana smashed
1 tsp baking powder
1/2 cup almond milk (used @elliesbest milk bag)
1 tsp coconut sugar
1 tsp cinnamon
1 flax egg
Topped off with some freshly picked blackberries and @parkersrealmaple syrup!!!! #maplemade#elliesbest

The best and only way I make crispy oil-free tofu...
Use a tofu press or heavy item to drain the tofu for at least 1 hour. Preheat oven to 400 degrees. Cut the block into small chunks (the smaller the pieces, the more crispy they get). On a parchment paper lined tray line up your little soy army and drizzle lots of @coconutsecretofficial 🥥 coconut aminos (⬅️game changer). Bake the tofu for 30-40 minutes, serve + enjoy!

Whipped up the BROWNIE BANANA BREAD last night and I’m OBSESSED!!!! This bread is moist, gooey, delicious plus it’s vegan and paleo!!!!!!! Doesn’t get much better than that now does it? 🍫🍫🍫🍫🍫🍫🍫🍫🍫🍫
BROWNIE BANANA BREAD: mix and bake in pan @ 350 for 55 min
2 cups mashed bananas
2 cup almond flour
1/4 cup coconut sugar
1/4 cup coconut oil
2/3 cup @parkersrealmaple syrup or honey
2 tsp vanilla
1 tsp baking soda
1 tsp baking powder
3/4 cup cocoa powder
2 tbsp @eatnuttzo power fuel or other almond butter
