So, the other day when I’d been out and cried half the way home, I came through the door to find a package with ‘Miss Avocado’ on! That made me smile straight away. 🙂
These amazing vegan chocolate bars were inside and a cute little note, and then I cried a bit more! 😂😂 It was my turn to do something nice for them next as they had only recently bought me chocolate anyway haha so I felt bad, but I so so appreciate how kind and thoughtful they are. •

Mushroom ragu with pan fried polenta.
Polenta is one of my favourite comfort foods. Polenta is a dish from northern and central Italy that is a boiled cornmeal, it can be served as a hot porridge, or you can cool it down and allow it to solidify into a loaf that can be baked, fried, or grilled. To make it, ground, dried corn is boiled in water or broth to create a warm, creamy mixture that has a mild, nutty corn flavor. I usually opt for a rich stew or sauce that has a high acid content or rich in umami, such as the mushroom ragu I paired with it in this photo.

Ingredients: · 1.5 lbs of cremini mushrooms
· 5 cloves of crushed garlic
· 1 large yellow onion
· 1 teaspoon of oil
· 1 tablespoon of butter (earth balance)
· 2 cups of water or vegetable stock
· 2 tablespoons of tomato paste
· 3 tbsp dried parsley
· 1 tsp dried rosemary
· 1tsp dried thyme
· 1 tsp of salt and pepper
· Pinch of chilli flakes
· Optional ½ cup of red wine
1.) Roughly chop and slice your mushrooms, onion and garlic cloves.
2.) With a large pan or sauce pot, turn your heat to high and allow to the pan to warm up and add a splash of oil. Test the pan with a splash of water, the water should bead away.
3.) Add your mushrooms, onion and garlic to the pan and sauté for 5 minutes till your vegetables start to sweat.
4.) Add in all your dried spices and butter and continue to sauté till the mushrooms start to reduce in size and give off extra liquid. (if adding red wine, add it in this step)
5.) Add in the tomato paste and 2 cups of water.
6.) Reduce heat, cover and allow to simmer for 30 minutes.
7.) Hi! You know that dish that you make and then you can eat that for weeks until you get sick of it? This happened this week with this lovely rice and veggie stew!
2 tbsp of olive oil
4 cloves of garlic, minced
1 onion, chopped
1 cup of mushrooms, sliced
400g of frozen Mexican veggie mix
2 bell pepper, chopped
2 tsp of paprika
1 tsp of cumin
1 tsp of turmric
3 cardamon seed
3 clove seeds
salt pepper to taste
500 ml of coconut milk, full fat
4 cups og veggie broth
2 cups of rice
1. Pre haet pan. Add olive oil, onions and garlic. Cook for a few minutes.
2. Add veggies and cook for 8-10 mins.
3. Finally, add rice, broth, milk, spices. Cook for 20 mins until rice is ready. If necessary add more liquid - broth or water.

1 Listen positive affirmation in the morning and don’t listen news in the morning ( because most of the case news aren’t good news)
2 Do 🧘♀️ yoga and remove stress from your body.
3 Make green smoothie for yourself. If you wanna eat muffins or cake, it’s totally okay to eat cakes 🍰 but please eat them in the morning with tea or coffee ☕️ (This is a secret between us. Eating cakes or sweets in the morning never make you fat because you can consume the calories easily later. and in my theory cake isn’t the cause of obesity. Cakes are my friends🤗🎂🍓and they always encourage me to work out hard and make me happy as human friends. If you have a time, I also recommend people to bake cakes or muffins by yourself.
