Hi everyone 👋 Happy #toasttuesday 😄! To celebrate this week I decided to make this beautifully delicious crispy chickpea and kale topped avocado toast 😍 inspired by @veganstars and her #10ingredientchallenge ... today being chickpeas 🤤. I think crispy chickpeas are the perfect all-around snack and can be sprinkled on toasts as I did along with soups and buddha bowls... the options are endless 🙌! ⬇️Recipe Below Serves 1-2⬇️

•••Crispy Chikpeas•••
1 Can Chickpeas, Drained & Rinsed
2 Tsp Olive Oil
1/4 Tsp Tumeric
1/4 Tsp Paprika
1/4 Tsp Cayenne Pepper
1/4 Tsp Garlic Powder
1/4 Tsp Onion Powder
Salt & Black Pepper To Taste.
•••Mashed Avacado•••
1 Large Avacado
2 Tbsps Red Onion, Finely Chopped
Squeeze of Lemon & Lime
Parsley, Finely Chopped (Optional)
•••Toast•••
Few Large Handfuls Of Kale, Roughly Chopped + Olive Oil
1 Tbsp Oil
2 Slices Of Bread Of Choice, Toasted (I used a tiger chess loaf)
Sriracha Hot Sauce
⭐
1️⃣ Start by preheating the oven to 200°C. Combine all the crispy chickpeas ingredients and then layer onto a lined baking tray. Bake for up to 30 minutes. When done set aside.
2️⃣ Meanwhile, make the avocado by mashing the avocado and combine all the ingredients and mixing. Set aside when done.
3️⃣ When the chickpeas are done remove from the oven and set aside. Saute the kale over a medium heat for 5 minutes then set aside.
4️⃣ To assemble layer some of the mashed avocado on the toast and then top with some of the sauteed kale. Add some of the crispy chickpeas then drizzle some sriracha hot sauce over top. Serve and enjoy💚!

Cooked a peng sweet and sour ‘chicken’ stir-fry for my house mate and me 😁. I used @icelandfoods ’no-chick’ chicken style strips which are so good! - They go well in pretty much any normal chicken dish and are only £2 for a pack with just as much protein as chicken (and less fat, zero cholesterol,). I basically just fried a load of whatever veg I had in, added in the chicken strips, and once everything was cooked, I added the #unclebens sweet and sour jar and let it all simmer for 5-10 minutes 👌🏼. I guess we can all agree that this day should actually be an international holiday, right?😉 To honor this beautiful day full of carbs I decided to make my all time favorite: spaghetti with tomato sauce 🍝🧡

Recipe:
Quick & Easy Basic Tomato Sauce🍝
Serves 2 - Enough for ca. 300g (makes two big portions) of your favorite pasta
.
Ingredients:
•Olive oil
•1 medium onion,chopped
•4 cloves of garlic, minced
•250g cherry tomatoes, halved
•1 1/2 tbsp. dried basil
•1 tbsp. dried oregano
•1 sprig of rosemary, finely chopped
•3 tbsp. tomato paste
•1 can (400g) plum tomatoes
•salt and pepper to taste
•Optional: fresh basil, pine nuts or other nuts and seeds

Directions:
•Heat olive oil (enough to cover the bottom of the saucepan) in a saucepan over medium heat
•Add onion and garlic and cook for about 2-3 minutes or until onion becomes translucent
•Add cherry tomatoes and cook for another 3 minutes. Try to pop the cherry tomatoes with a wooden spoon
•Add all the other ingredients (except basil and pine nuts) and stir well
•Bring sauce to a boil, reduce heat to low and cook for 4-5 minutes
•Mix sauce with your favorite pasta, add more salt and pepper if nedded and serve with fresh basil and pine nuts
•ENJOY!🌿

Raw Caramel Apples

A naturally naughty delight

When we do not allow ourselves to enjoy the sweetness that nature provides us we can go into deprivation and binge mode.

Enjoy this oh-so-yummy alternative to processed treats.

TIP: Double the Caramel Sauce and use as a dip throughout the week with fresh fruit, in smoothies or over Nice Cream.

4 green apples
2 cups dates, pits removed
1 tsp cinnamon
1 tsp vanilla extract or vanilla powder
Optional toppings: crushed nuts or seeds, shredded coconut, Pointed candy skewers

Place dates into a bowl of warm water and let sit for 4 hours.

Drain and the dates* and place them into a food processor. Add in the cinnamon and vanilla. Process until smooth and creamy. Use any of the reserved date water if you need more liquid. You do not want it runny; just smooth. Set aside.
Place the optional toppings in bowl(s). Set aside.
Place the parchment paper on a plate. Insert a wooden pointed skewer at the bottom of each apple.
Take a spatula and coat the apples with the caramel sauce. Dip the apples in the topping of choice.
Place the apples, top down, on the parchment paper. Place them in the fridge for at least 1 hour to help harden.

When ready, enjoy! *The caramel will be less sticky then a regular caramel sauce but just as delicious!

Lasagne är absolut på vår topp 10 över bra mat till veckans alla matlådor. Inte allt för stor ansträngning som ger hög avkastning i antal matlådor. Testa själv och se hur mycket det faktiskt blir! 
Ingredienser:
2 st gullökar
4 vitlöksklyftor
800 g champinjoner
400 g spenat 
400 g vegofärs
400 g tomatkross 
Bechamelsås:
1 L mandeldryck osötad
100 g mjölkfritt margarin 
8 msk mjöl
1 krm muskotnöt
1 tsk salt
1 tsk vitpeppar

Lasagneplattor
Vego-ost

Gör såhär: 
Sätt ugnen på 225 °C. Hacka lök och vitlök, stek tillsammans i olja. Tillsätt champinjonerna som du skivat och vegofärs, stek tills de får yta. Tillsätt 350 g av tomatkrosset. Krydda med salt, peppar och paprikakrydda. Stäng av plattan och börja med bechamelsåsen. Smält det mjölkfria margarinet. Rör ner mjölet och blanda så det blir klumpfritt. Tillsätt mandeldryck och kryddorna. Låt koka upp på medelhög värme och rör om till såsen tjocknar. Tillsätt eventuellt mer mandeldryck om tunnare konsistens önskas. Nu är det dags att börja montera ihop lasagnen. Börja med att lägga resten av tomatkrosset i botten av en form. Lägg sedan ett lager med lasagneplattor, därefter färgblandningen och till sist ett lager med bechamelsås. Fortsätt sedan i samma ordning från lasagneplattorna. Absoluta med att toppa lasagnen med ett lager riven vego-ost. Tillaga i ugnen i ca 30 minuter. Servera förslagsvis med en grönsallad!

Disclaimer: I struggled to eat all 3 of these this morning and really could have done with just the two 😅 trying to eat less bread so swapped it out for rice cakes and had some avo, lemon and pink salt on top. Btw, dont do what I did, and mash the avo in a bowl before putting it on the rice cakes, otherwise the rice cakes will break 🙃 would have usually topped with tomatoes or something but I didn’t have any left! Still good and a nice change to the usual avo on toast scenario 🥑

Kale & Walnut Pesto is my all time favourite 😋 such a simple and quick way to eat more greens, get some healthy fats from walnuts and all the benefits of the superfood which is garlic 👌 Just place washed kale leaves, a handful if walnuts, a clove of garlic, 2 tbsps nutritional yeast flakes and a tbsp olive oil into your food processor,  blitz and stir through pasta (reserve some of the cooking water from the pasta to make your pesto go further and create more of a sauce: top tip 😉). .

Sometimes the ugliest cupcakes are the MOST DELICIOUS. 😋 I made these cupcakes on Sunday night because I was bored from watching American football all day. These type of cupcakes were my favorite as a kid because I loved the chocolate icing but the yellow cake was ON POINT. When I tested these out and took the first bite, I thought they weren’t vegan. I forced Mike to try one and he said that it was the best thing I baked so far! I was inspired by @minimalistbaker. I changed a little bit of the recipe to my liking. Unfortunately, I couldn’t pipe them because I didn’t have the right tools. Eventually, I would love to be a pro. One day, we will see!

In the shower last night, I realized that Thanksgiving is next week. I started panicking because I didn’t realize it was coming up so quick! I’m trying to think of things to make for Thanksgiving. So far, I am going to make a simple vegan stuffing and sweet potatoes souffle to bring to my family’s house. Usually no one eats my food and honestly, I am fine with that! For dessert, Mike and I are heading to his parent’s house. Last year, I made a vegan chocolate pie and BOI it was a hit. I’m not sure what I should do this year. Rezept: 2El Margarine in einem Topf schmelzen lassen und 3Teelöffel (Dinkel) Mehl unterrühren.
150ml Gemüsebrühe oder Wasser (evt.Pflanzenmilch) unten Ständigen Rühren hinzufügen.
3-4El Hefeflocken unterrühren und abschmecken mit
(Kräuter)Salz, Pfefer u.a.

Omáčka je vhodná na zapečenie Pizze, lasaní či zapekanej zeleniny ale ja ju rada používam aj pri cestovinách či k nachos na večer alebo k hranolkám. Omáčka je hotová za 5 min a velmi chutná.
Recept: 2Pl rastl.màsla dame rozpustit do hrnca, primiešame 3čl (špaldovej) múky. 
150ml vývaru alebo vody (príp.rastl mlieka) pridáme za stáleho miešania
4Pl droždových vločiek a dochutíme (bylinkovou) soľou, peprom  a.i.DOBRÚ CHUŤ

Oh Canada, I'm finally home!!! •

As some of you know, I've been in Europe for the past 3 months (almost) and as much as it has been nice to be beside my family (and my best friend) during a difficult time, I've missed Canada so much and even more so, the important people in my life (as well as my kitties). I decided to come back on Mike's birthday (my boyfriend) and suprise him, however, nothing went as planned and due to some error at the passport control in Zürich, Switzerland, I ended up missing the flight. @aircanada was not helpful at all in trying to help me get on a different flight and I had to frantically call each airline and try my best to find the earliest flight home. I was finally able to purchase a new ticket for double the price leaving next day. •

At this point Mike still had no idea I was flying home for his birthday and thankfully his family rescheduled his birthday dinner and helped me suprise him when I arrived in Toronto the next day 🎁. Swipe ➡️ if you'd like to see me jumping out of a giant box and almost giving Mike a heart attack 🙈🙈 All in all, I'm so glad to be back and try to get my routine and life back honestly. Those 24 hours at the Zürich airport were some of the worst, but I tried to remain calm throughout it all and remember that soon I was going to be home with my loves 💛💛💛 •

Do you prefer sweetpotatoes or normal potatoes? By the wonderful @fitomatoes 👏🏻🌹❤️
I baked them with sesame and the potato wedges spice from @hartkorn_gewuerze which is almost empty because I use it all the time 🙈 ..it's super yummy and not too spicy 😋. I just don't like spicy food 😂🙈 what about you?
Btw you have to try baking your potatoes with sesame on top! I loove this combination! 😍😍 It adds a little crunch and super nice flavour, too! Just put the sliced potatoes in a bowl, add a little bit of water (or oil if you like using oil), add spices and the sesame, combine everything with your hands and place the potatoes on a baking tray (I love using a silicone baking mat) and bake them for about 30-40mins at 175°C.

I’ve made it by frying chopped apples in a bit of coconut oil with fall spices, and then topped on toast that’s thickly spread with almond butter. Tofu Revuelto 🥚🍳 Si todavía no toman desayuno, aprovechen de probar esta receta rápida y sana! 🍳🥚 Antes que todo seamos honestos, el tofu revuelto no sabe a huevo revuelto. Aún así, es uno de mis desayunos favoritos! Básicamente necesitas 3 ingredientes y de ahí todo el resto es yapa. Además, si andas en la volada fit fam verano sin polera no quiero que Green Peace me trate de rescatar de la playa como yo, esta receta es ideal ya que es altísima en proteínas, baja en carbohidratos y baja en grasas.
🍳Receta:
- 1 lonja de aprox 150gr de tofu
- 1 pizca de cúrcuma
- 1 pizca de levadura nutricional
- sal (si tienes sal negra, mejor) y pimienta a gusto, otros aliños como merkén ahumado también son bienvenidos - opcional: verduritas como cebolla, pimentón o tomate para ponerle onda al asunto.
🥚Preparación:
- Moler con las manos o con la ayuda de un tenedor el tofu, hasta tener "migas"
- En una sartén con un poco de aceite, saltear las verduras.
- Agregar el tofu molido y el resto de los ingredientes, y con la ayuda de una cuchara de palo, revolver el tofu hasta que agarre temperatura y se tueste un poquito
- Servir con así solo o con pan si te quieres a ti mismo

Sweet Chilli Chickpea Noodle Salad •
This is so quick and easy. I made it in under ten mins before work this morning. •
1 nest of rice noodles cooked as per package instructions, drained and rinsed in cold water
1 baby cucumber, sliced 
1 stick of celery, sliced 
1/2 orange pointed sweet pepper, chopped 
1/4 small red onion, sliced 
1/2 tin chickpeas, drained and rinsed 
Handful of mixed salad leaves 
1 tbsp sweet chilli sauce 
1 tsp sesame oil
1 tsp soy sauce 
1 tsp sesame seeds
1 tsp chia seeds
•
Mix all ingredients together in a bowl, put into your fave container and off to work you go!

Sweet Chilli Chickpea Noodle Salad • This is so quick and easy. Really craving some ☕️☕️☕️ oats right now to get my caffeine buzz going and scare away the Tuesday Terrors. Anyone else not ready to face the new week after a long three day weekend? 🙋🏽 (especially when that means trying to pretend like I know what AP Calc is for yet another week...) The good news though? FOUR days until Thanksgiving break!!!! (Can I get a whoop-whoop?!)

Recipe:
* 1/2 cup rolled oats
* 1 cup brewed coffee * 1 scoop @traderjoes unsweetened pea protein powder * 1 tablespoon maple syrup .
1). Pour coffee into saucepan and bring to a boil.
2). Add all the remaining ingredients and reduce to medium heat.
3). Cook until your desired oatmeal consistency is reached and then transfer into your favorite oatmeal bowl. 
4). Top with allllllll the toppings and enjoy! 💗

Seitán 🍖🍗 Está semana voy a aprovechar de subir varias recetas "básicas" para todos aquellos, aquellas y aquelles que todavía están aprendiendo a cocinar vegano, o para los que todavía están haciendo la transición al veganismo 🥦 Esta receta es de mis favoritas por lo versátil que es, se puede ocupar en reemplazo de carne en casi todo! Mi uso favorito es para hacer empanadas de pino 💅 A diferencia de las recetas más tradicionales de seitán, yo le agrego un poco de harina de garbanzo. Este paso en realidad es opcional, pero cambia radicalmente la textura de la carne! La deja menos esponjosa, y más densa, así como un asado alemán. Deslicen para ver los ingredientes principales que ocupo y algunos pasos ilustrados! 🍖🥩
Receta:
- 250gr de gluten - 3 cucharadas de harina de garbanzo - 250ml de agua o caldo, según preferencia. - 1 cucharadita de sal y pimienta 🌶️Aliños opcionales: son opcionales ya que esto dependerá del uso que le quieran dar! A mi me gusta biennnnnnn aliñado, ya que muchas veces me lo como así "crudo" con arroz o ensaladas. - 1 cucharadita de romero - 1 cucharadita de tomillo - 1/2 cucharadita de comino - 1 cucharada de levadura nutricional 🍵Para el caldo: aliños también opcionales
- 1/2 taza de salsa de soya - 1 cebolla cortada en cuartos - 2 dientes de ajo - un poco de endulzante - 1 cucharadita de ají seco - 1 hoja de laurel - 2lt de agua hirviendo🍖Preparación: - En un bowl grande, mezclar todos los ingredientes secos (gluten, harina y aliños) - Mezclando y de a poco, agregar el agua o caldo hasta formar una masa que puedas manejar con las manos, sin que se quede pegado a tus dedos. - Formar un tronco, y colocar en una olla con los ingredientes del caldo. - Hervir durante 30 minutos a fuego bajo. - Apagar el fuego, y una vez que se enfríe, cortar en rodajas/filetes/churrascos. - Guardar en un tupper con caldo, o en una bolsa ziploc con caldo. 
Pro tip: guarden el caldo que les sobró para otras preparaciones! Si me queda, yo lo ocupo para hacer el seitan una vez que se me acaba (se me acaba en 2 días), para darle sabor a la quinoa o para marinar tofu.

Chocolate 'hummus' can be spread on just about anything.

Recipe: 
1cup chickpeas (soaked,cooled,cooled)
1/4 cup Maple Syrup (adjustable for sweetness preference) 
1/3 cup @soaringfreesuperfoods cacao powder
1tbl nut butter or tahini 
1/4 cup water (added slowly for desired consistency)
Blend into a thick delicious paste- spread on anything you like. I even tried a teaspoon of it in my sons overnight oats as a little treat!

Whatever journey you are on, sometimes the setbacks can make you feel like giving up. I know how it feels. Even though I've lost 120lbs I still have a long way to go. I'm no where near my goals. Each phase of my journey requires another level of commitment & to be honest, sometimes I just don't have the mental capacity to give it my all. It's a setback but I don't park there. .
I know what needs to be done and I may reach my goals slower, kicking and screaming or crying cause I can't eat that cookie but I WONT STOP UNTIL I WIN. Setbacks happen but dont stay there. .
