My favourite pasta meal🙌🏼 You can make this whole meal almost in the same amount of time that takes to boil the pasta. I’ll post the printable blogpost on my blog to night but I’ll give you the recipe here as well!
I do this recipe a lot and I don’t always use a tofu or other vegan meat in this dish. But it is great as a protein source. Otherwise this dish is a complete carb party, which I don’t hate.. 300gr Pasta of choice
10 cherry tomatos
10-15 fresh basil leaves
4 cloves of garlic (and more if you are garlic fanatic like me)
2-3 tbs olive oil
Lemon juice from half a lemon
Salt and pepper
Optional: Tofu or some sort of frozen vegan meat
Boil and the pasta according to instructions on the package
Chop the avocados and tomatoes and put it in a big bowl
Light fry the garlic on a dry pan and add to the bowl
Fry the tofu or the vegan meat. I used Italian spice mixture to get with the feel of the food.
When the pasta is ready add to the bowl
Add your tofu or vegan meat
Add the olive oil
Chop down the basil leaves and add as well
Flavour with lemon juice, salt&pepper and chilly flakes
Mix the bowl and serve!
One of the best places I have visited for vegan food was hands down Iceland, Reykjavik has so many great places to eat and so much choice. Look out for Kronan supermarket, they have fridges exclusively for vegan food and stock all the old favs like violife. My beautiful and talented friends have finally opened their awesome all vegan soul food restaurant @veganaes . It's located at Gaukurinn which is also the best and coolest bar in Reykjavík! Those geniuses also made all the food for our wedding, even impressing my old school fisherman grandfather, that's how amazing the food is! In this cold summer on Iceland 😭

500g dried peas soak in water overnight
2 L water
3 vegetable bullion
2 carrots (wash and peel)
1 onion ( peel and put into oven in paking ban for 20 min on 200 degrees)
3 Celery stalks, slice celery into half moon shape, chop off the leafy ends of the celery stalk
19 small potatoes or 9 big peeled, cut in small cubes
1 leek, remove the dark green leaf end and then at the base of the leek, thinly slice the leek into rings.
2 freash or dry Bay leafs
5 ml smoked paprika you can add more if you want to, taste it before adding more
5 ml paprika
1 ml cumin
salt and black pepper to the taste
@oatly creamy oat
Into a soup pot pour 2 L of water and add vegetable bullion, Bring to a boil, then reduce to a simmer.
Next add all the vegetables into a soup pot (Yes also add the whole onion) and peas, cover the pot and let it simmer
for 35-40 min or until peas get soft. Next add all the spices along with potatoes, simmer until potatoes get soft.
Wait at least 1 hour befor serving. Add as much cream (from @oatly ) as you want to.
This soup is best day after with toast. Enjoy
Eat kale - Not whale 🌱🐋 Whaling in Iceland continues. Yesterday they brought in two endangered fin whales to the whaling plant to be stripped of their flesh and sold to a failing whale meat market.
Whales are so much more valuable to us in the ocean. Not only do they keep the ocean healthy but whales also attract a great number of tourists. Whale watching tourism has boomed in recent years and people are willing to pay to see these majestic creatures in their natural habitat. However, tourists in Iceland are also the majority who eat whale meat. If you are ever in Iceland do not support this barbaric act. As much as I like eating out, sometimes I just want a basic #homemade meal, especially while traveling for a while. One of my favorite meals in #Iceland is the unlimited #soup 🍲 and #bread 🥖 special they offer at #lunch , as its freshly made, filling, tasty and inexpensive! But when I decide to eat in, this is what I go for:
#hummus , kidney beans, a green vegetable (green beans or broccoli 🥦), carrots 🥕 and bread 🍞 from a bakery nearby. It’s high volume and nutrient dense, and I feel well nourished after eating!
Iceland has come at a time where I’m really focusing on self improvement, awareness and compassion. So a recent shift in mindset for me has come post meals: rather than feeling uncomfortable or bloated because I ate a lot of food, I’m trying to recognize that my body is full & nourished, and of course my belly is going to be bigger when it’s filled with good food! I’m grateful for my body that allows me to take nutrients from food and turn it into muscle, cells and even fat. It’s truly incredible. ✨

Vegan Dumplings 🥢 My first time doing dumplings and I can say that I’m glad how they turned out! 👌
So get your chopsticks or fork and dig in 🥢🍴
3 Cups of Flour
1 Tbsp salt
1/2 Cup warm Soy milk
2/3 Cup warm Water
Add all the ingredients into a mixing bowl and mix for 1 min, then knead for 2 min until a raggy dough forms.
Place the dough out onto a floured work surface and knead until smooth for 8-10 min. Cover the dough with a
plastic wrap and let it stand for 1 hour. Take the dough out and knead for 5 min and then cover again for 30 min.
During this time, you can prepare the dumpling filling.
2 Gloves Garlic minced
1 tsp freshly grated ginger
2 & 1/2 Grated Carrot
2 Small bunches of Cellophane Noodles (soak in cold water for 20 min)
20g chopped Leek
30g Scallion or Spring onion.
200g Soft Tofu (optional)
200g ground vegan beef (from Gardein)
1 Vegetable bouillon Cube
30 ml Soy sauce
3-5 drops of Sesame oil
Salt and Black pepper to taste.
5 ml Garlic powder (optional)
Heat the pan on a stove on a high-medium heat, add onion and garlic cook for 2 min, then add
Mushrooms cook until they get brown-ish. Next add Ginger, Carrots, Leek and Scallion/Spring onion,
cook for another 5 min. Next add soy sauce, stir. Then add Cellophene Noodles, salt and black pepper then stir
until combined. Set aside and let it sit for 20 min ( the noodles should be soft at that point). When the dough is ready, place the dough onto floured work surface, roll the dough, The dough should be
about 1 millimeter thick, use Cup or cutter the diameter should be about 7 centimeters.
you should work as quickly as you can, because the wrappers will dry out quickly.

Cook them in water on high- medium heat for 2-3 min until they rise up, Then you know that dumplings are ready.

This dish from Blonduos was potato 🥔 and vegetables 🍅 in a marinara sauce with grilled tofu. It was simple yet very filling and tasty! 😋
Today we explored Akureyri and visited the botanical gardens, the church, a bunch of shops and the motorcycle museum. 🏍 It was nice to be outside in the pleasant weather (think New England fall 🍂temps) rather than in the car!
