🤤🤤 Vegan Garlic Bread Grilled Cheese Sandwiches from @mymeatlessmeals 🥪
(Serves 2-4 sandwiches)
• 4 tbs vegan butter (room temperature and soft)
• 1 tbs garlic, grated or minced
• 2 tbs nutritional yeast
• 1 tsp olive oil
• 1 tbs flat leaf parsley, finely chopped
• bread slices of your choice
1. Mix together vegan butter, olive oil, nutritional yeast, garlic, and parsley.
2. Make your vegan cheese(recipe below) or use any kind of vegan cheese you prefer.
3. Thinly spread the garlic butter mixture on one side of a slice of bread, make sure it’s evenly distributed. Don’t put too much, you don’t want it to be greasy.
4. In a hot pan, fry or “grill” the bread with the buttered side down. Reduce the heat to medium low.
5. Quickly add vegan cheese on top before placing another slice of bread and spread the butter mixture on top. Make sure the bottom is nicely seared before flipping it over.
6. Continue to cook until golden brown and fragrant.
7. Try not to burn your grilled cheese.
8. Serve hot but be careful not to burn your tongue.

• 1/2 cup raw cashew, soaked
• 1 cup plant milk
• 1 tsp miso paste
• 1 tsp Himalayan salt
• 1/8 tsp garlic powder
• 1/4 cup nutritional yeast
• 3 tbs tapioca starch
1. Blend all ingredients together for a few minutes.
2. In a nonstick pan, simmer the mixture on low heat while stirring vigorously for about 10-15 minutes.
3. Once the mixture turns into a dough-like paste and begins to pull away from the pan, turn off the heat. Cheese is done.

I really wanted to start this post out with a bread joke, but I couldn't find any good buns... That was awful 😂
In the last month every time I opened Facebook I would see a video or a picture of these adorable pumpkin shaped dinner rolls. I thought they were so stinkin cute so I wanted to try and make some.
I’m not gonna lie y’all, I’ve never made rolls, or any bread other than a banana nut loaf so this was new territory for me. I used a whole bunch of things I’d never used before like yeast, vital wheat gluten, and baking string🧐 DEFINITELY not in my comfort zone, but I found a recipe to make these in my instant pot from @herbivorecucina! The only changes I made in the recipe were using almond milk🥛 and extra pumpkin purée 🎃 in place of butter! 🍞
These were really yummy and paired SUPER well with @minimalistbaker 🎃 pumpkin butter! I HIGHLY recommend these for thanksgiving this week. Your non-vegan family might be skeptical if they know they’re vegan, so maybe just don’t tell them until after they try it! Lol

Some delicious salad I made a couple nights ago for dinner! It is spinach, broccoli, and cucumber topped with nutritional yeast and tofu and mushrooms sautéed in a oil free garlic/onion/balsamic glaze.

Yesterday I had a little time before rehearsal so I made a beautiful paratha for lunch! All it is is quinoa flour, homemade chana masala (curry powder), garlic powder, and water. Topped with coriander chutney, spinach, cucumber, and marinated tofu! Topped with a spritz of lime.
IT WAS DELICIOSO!!!

Ok, so, I am not going to lie... I was hesitant to order this because I was worried the vegan steak was going to be seitan or tempeh... and not that @worldofgv wouldn’t have made that shit bomb AF, I‘m just normally not a fan. But I was weirdly craving the whole “steak & egg” vibe.
Well, it wasn’t either... and I shouldn’t have EVER doubted @themodernvegan because this plate of Vegan Steak and V’eggs (w/ those yummy breakfast potatoes) was SO GOOD!
I don’t know why I’m acting surprised 🙄 TMV hasn’t served me anything yet that I didn’t like. Another cheat meal that was worth it 👌🏼

Drizzled some @sietefoods Spicy Blanco (cashew queso) on top and diced half an avocado. I almost threw some @tofuttibrands sour cream on top as well, but I skipped out this time.
