TO MAKE
Recipe by @fivesechealth 
INGREDIENTS 
3 cups dry whole wheat elbow pasta (or rice/bean pasta if gluten intolerant)

VEGAN CHEESE SAUCE 
1 cup raw cashew nuts, boiled for 10 minutes
1 cup water
0.25 cup nutritional yeast
1 tsp sea salt
0.5 tsp lemon juice
0.5 tsp turmeric, ground
0.3 tsp garlic powder

STEPS
1. Start by boiling the cashew nuts for 10 minutes, drain and rinse

2. Cook the pasta according to the package 
3. Add all the cheese sauce ingredients into a blender and mix until smooth

4. Steam the kale until slightly soft, you can spice the kale however you like (lemon is good)

5. When the pasta is ready, pour the cheese sauce over the pasta and mix until the pasta is covered with sauce (TIP: sauce a little bit sauce to drizzle when you're going to eat)

6. Assemble the bowl(s) by adding the kale in the bottom, then the pasta and lastly sprinkle the smoked paprika powder! .

Try Avocado dip with whole grain bread, fresh vegetable, and fruit.

Before lunch (two hours after breakfast) – nuts, fruit, and salat 🥜🥗🍌 Lunch: Quinoa (great source of quality carbs and proteins with complex amino acids spectrum) with cauliflower🥦 and seitan.

After lunch (two hours after the lunch): Fruit 🍑🍇rich in energy (e.g.: grape) or smoothie ideally with fruit and vegetable together.

This dinner was a 10/10! All it is is @traderjoes cauliflower gnocchi, vegetables sautéed in nutritional yeast and garlic, and a homemade lentil salad!

All you need for the lentil salad is about a pack of cooked lentils (around 2- 2 1/2 cups), 1/4-1/2 an onion finely chopped, a handful of cilantro and any spices you choose ( I used thyme, oregano and a tiny tiny bit of garlic salt.) just mix together in a bowl and boom! 💥 •

🤗para celebrar mis➡️ 10 libras que he perdido comiendo una alimentación basada en Plantas no perfecta pero esforzándome.. gracias a mi coach @taniafloresyager, me hice un delicioso desayuno simple y súper rápido..... un sándwich de pan germinado. ..
La gente preguntará,  dónde está tu proteína ?.. aquí está un estimado según la aplicación my fitness pal que te da el valor nutricional de cada uno de los ingredientes.
.
1.cucharada de semillas hemp 60 calorías 3.3 de proteína y 5 gramos de grasa.
 2.rebanadas de pan sprouted 80 caloría,  4 gramos proteína 15 G de carbohidratos.
3. 1 cucharada de puré de aguacate 45 de  calorías 0.4 de proteina  2.3 carbohidratos  4.1 grasa
4. Germinados de alpha  21 calorías 3 gramos de proteina y 3 de carbohidratos  0.5 de grasa
5. Lechuga mixta....1 taza sería 15 calorías, 2.8 carbohidratos 1.1 proteina. 
6 tomates cherries... 5 calorías,  1.1 carbohidratos .

Was taken to the most delicious Vegan restaurant last night after watching ‘It’s A Wonderful Life’ in an old cinema ❄️🎄⭐️📽 Located on Wardour st, @vantralondon is all vegan, gluten free and sugar free 🤸‍♂️ I tried a bit of everything 🐷 but my favourites were the stroganoff, chilli and jackfruit 🍊There’s a huge selection of raw foods, smoothies, cocktails, cakes and sweet treats 🍰 Also tried the tastiest organic apricot beer 🍻The restaurant’s really well priced, as you pay by the weight of your plate 🍽  Plus there’s some amazing live music to enjoy too 🎶

Made a vegan style hot pot with salt and pepper chips. Hot pot was made by making a broth from soy sauce, mirin, sugar and sake. Vegetables were pak choi, carrot, spring onion, chestnut mushrooms, shiitake mushrooms and broccoli (i think thats it). Two types of noodles, a wheat noodle and a bean thread noodle that's made from mung beans and tofu. I topped mine with shichimi togarashi red pepper mix. Salt and pepper chips i used a red and green chilli (took seeds out, cut an onion up, mixed salt, chinese five spice and sugar together. Stir fried the veggies together, added seasoning and then the chips.

Ayer, mi esposo y yo celebramos 12 años de estar juntos ❤️ y fuimos a @lano20_cancun. Teníamos la intención de sólo tomar algo pero siempre nos da curiosidad ver las cartas de los restaurantes para ver si de casualidad  hay algo "plant based" y pues, aquí... si hay! jajaja. Digo, tampoco me sorprende mucho porque yo soy de las que creé que siempre, en prácticamente cualquier lugar, podemos encontrar algo 😉.
Este es un arroz silvestre y sólo nos aseguramos de pedir que no le pusieran mantequilla, crema, etc. y la neta es que estaba ¡buenísimo!. Traré de replicar la receta, a ver si me sale 🤞

I love making crispy kale, it’s so easy and tasty. It always amazes me how much it shrinks though. 
To make this, I simply heat up my oven to 180 degrees, chop up my kale finely, then add some sesame oil and salt, shaking half way through. This is cooked for about ten minutes.

Alguna vez han intentado hacer nuggets?!. Estos están hechos con arroz y zanahoria 💁‍♀️ INGREDIENTES:
2 tazas de arroz integral (previamente cocido)
2 zanahorias
5 rodajas de cebolla
1 diente de ajo 
1/2 cdita. de comino en polvo
3/4 de taza (aprox.) de harina 
Pan para empanizar 
Leche vegetal 
Amaranto (si tienen, si no, no importa)

PREPARACIÓN:
Partir al cebolla en cubos y el ajo en cubitos más pequeños. Rallar las dos zanahorias. Ponemos a calentar un chorrito de aceite en una sartén y sofreímos la cebolla, ya que veamos que empieza a ponerse transparente, incorporamos el ajo y mezclamos, después agregamos la zanahoria (rallada). Ponemos sal, pimienta, el comino y mezclamos muy bien. Agregamos un chorrito de agua y tapamos hasta que se reduzca (para que se cueza la zanahoria). Ahora, ponemos este guiso en el procesador (yo no tengo y utilizo licuadora), agregamos las 2 tazas de arroz y mezclamos hasta que se haga una pasta. Después, la ponemos en un bowl, y vamos agregando poco a poco la harina hasta que veamos que se hace una masa firme. Después, hacemos cada nugget, lo pasamos por la leche vegetal, lo empanizamos con el pan y el amaranto (hay que revolverlos previamente) y lo freímos. Y listo!, para acompañar yo los serví con catsup e hice un puré de papa 😉. Quedaron muy ricos!.

Smoked tofu with homemade katsu curry sauce, whole grain rice and crispy kale. I love making katsu curry sauce, it’s so simple and easy. I make a big batch and then freeze portions. 
To make I fry up a carrot, some garlic and an onion. Then add some flour, a tbsp of curry powder and then hot water. I then add a bay leaf, a tbsp of soy sauce, a tbsp of vegan honey, a tsp of rice wine vinegar and a tsp of mirin.  After about 20 minutes I remove the bay leaf and blend. A little inspiration for lunch and a proof that @murukaurajauhis works and tastes amazing if you just fry it really crispy 🧡

The best pasta
• 225g Muru Kaurajauhis (or other plant based protein)
• Oil for frying
• Red onion
• A can of tomato sauce
• 2 tbls of tomato paste
• 1/2 jar of kalamata olives
• 1/2 jar of sundried tomatoes
• Vegetable buillon cube
• A handful of mushrooms
• 1/2 chili
• 250g cherry tomatoes
• Pepper
• Oregano
• Fresh basil

Fry @murukaurajauhis with oil in a pan until cooked crispy, then set aside. Throw in mushrooms and chopped onion and cook until softened. Add the rest of the ingredients and cook under medium heat for 10 mins

😵I have no food left in my fridge for tomorrow🌴 I guess roasted veggies will save the day then and on the weekend I'll make these beauties. Who wants to join me? 😝

🌶️STUFFED PEPPERS 🌶️

📖INGREDIENTS👇
🌶️2 cups brown rice, washed and drained
🌶️2 cups diced carrots
🌶️2 small onions (1 white, 1 red), diced
🌶️2 cups diced mushrooms
🌶️200 g cubed firm tofu
🌿+ Herbs & Spices:
🌶️1 tsp all-spice
🌶️1 tsp curry
🌶️1/2 tsp turmeric
🌶️1/4 tsp black pepper
🌶️1 tsp red sweet pepper
🌶️1 Tbsp sesame seeds
🌶️1 Tbsp black sesame seeds
🌶️4 Tbsp sunflower seeds
🌶️1 tsp salt
🌶️+ 3 1/2 cups boiling water
⠀
🍴DIRECTIONS👇
1️⃣Add your chopped onions and a little bit of water to a non-stick pan and sauté over medium heat for 2-3 minutes🕓
2️⃣Next, add in carrots 🥕and sauté until onions are translucent.
3️⃣Later, add mushrooms🍄, tofu and your spices (except salt) and continue cooking until mushrooms are nearly cooked.
4️⃣Now add in your rice🍚, stir a couple of times to combine everything.
5️⃣Add in salt and pour boiling water, bringing everything to a boil. Then cover the lid and reduce the heat to low😋
6️⃣Let it cook around 15 minutes 🕓(or until rice is cooked, and no water remains).
7️⃣Remove the pot from the heat and set aside🌴
8️⃣Fill in the bell peppers (I used 9 big ones) and bake in the oven at 200C for 15-25 minutes🕓

Who wants to join me? 😝 . 🌶️STUFFED PEPPERS 🌶️ ⠀ 📖INGREDIENTS👇 🌶️2 cups brown rice, washed and drained 🌶️2 cups diced carrots 🌶️2 small onions (1 white, 1 red), diced 🌶️2 cups diced mushrooms 🌶️200 g cubed firm tofu 🌿+ Herbs & Spices: 🌶️1 tsp all-spice 🌶️1 tsp curry 🌶️1/2 tsp turmeric 🌶️1/4 tsp black pepper 🌶️1 tsp red sweet pepper 🌶️1 Tbsp sesame seeds 🌶️1 Tbsp black sesame seeds 🌶️4 Tbsp sunflower seeds 🌶️1 tsp salt 🌶️+ 3 1/2 cups boiling water ⠀ 🍴DIRECTIONS👇 1️⃣Add your chopped onions and a little bit of water to a non-stick pan and sauté over medium heat for 2-3 minutes🕓 2️⃣Next, add in carrots 🥕and sauté until onions are translucent. 3️⃣Later, add mushrooms🍄, tofu and your spices (except salt) and continue cooking until mushrooms are nearly cooked. 4️⃣Now add in your rice🍚, stir a couple of times to combine everything. 5️⃣Add in salt and pour boiling water, bringing everything to a boil. Hoy fue día de taquitos al pastor!. Yo los hice de soya tartaleta y texturizada para que ustedes vean como quedan con ambas, pero sé que hay muchas personas que no les convence ingerirla así es que la pueden sustituir con setas o cualquier otro ingrediente de origen vegetal que se les ocurra. 
INGREDIENTES:
Bistecs de soya tartaleta (ya preparados) 
Sota texturizada (ya preparada) 
3 chiles guajillos
2 chiles anchos
2 chiles chipotles
1 jitomate saladet
1/2 taza de jugo de naranja
1/4 de taza de vinagre de manzana
1/2 cebolla
2 ajos
1 rodaja de piña 
3 clavos de olor
1/2 cdita. de comino en polvo 
1/2 cdita. de orégano 
PREPARACIÓN:
Primero, hay que poner a asar el jitomate en un sartén o comal chico y lo volteamos constantemente hasta que su cáscara esté negrita y empiece a desprenderse. De mientras, limpiamos los chiles (quitarle las semillas y rabito), y ponemos a hervir agua en una olla y ahí agregamos los chiles (guajillo y ancho). Dejamos que hiervan hasta que se hayan suavizado, aproximadamente 5 minutos. Ahora, volvemos con el jitomate, lo sacamos de la sartén y le quitamos las semillas. Posteriormente, colocamos los chiles hervidos en el vaso de la licuadora y agregamos todos los demás ingredientes: los chiles chipotle, ajo, cebolla, vinagre, jugo de naranja, piña picada, clavos de olor, comino, orégano y jitomate asado y licuamos hasta tener una salsa. Colocamos la soya tartajea ya hidratada y preparada en un bowl y agregamos algo de la salsa para que todos los bistecs queden marinados. Hacemos lo mismo con la soya texturizada. Metemos al refrigerador y podemos dejar marinando durante toda la noche o mínimo durante unas 3 horas. Pasado este tiempo, solo tenemos que freír los bistecs y/o la soya texturizada y listo, armamos nuestros tacos. Yo serví con cilantro, cebolla caramelizada, piña fresca, limón y una salsa picante 😃

Y miren!, tuve un reto culinario que disfruté mucho!. Hice la receta de los tacos de canasta (o al vapor, como se conocen en Guadalajara) de mi amiga Gis de @veganos_cocinando !!. Estuvo chido porque me las tuve que ingeniar desde la olla que iba a usar (porque no tengo canasta), hasta la tela para taparlos (usé muchos trapos para secar los trastes jaja) y hasta sustituir el papel destraza (que ni me acordaba que tenía que comprar... ups!!!) por papel aluminio, pero al final, todo salió muy bien!. Para que vean que no es necesario ser expertx en la cocina para preparar comida rica. Utilicen la creatividad y si no tienen algo, no se preocupen, siempre hay una solución.

Este fue otro de los platillos que hice durante la semana que no tuve celular, por eso hasta ahorita les paso la receta de estas calabacitas a la mexicana 🇲🇽 con espagueti!. INGREDIENTES:
1 paquete de espagueti
2 calabazas
4 jitomates saladet
6 rodajas de cebolla
1 elote 
1 diente de ajo 
1 chile serrano 
Un puñito de cilantro 
PREPARACIÓN:
Ponen suficiente agua en una olla, agregan sal y cuando empiece a hervir, colocan la pasta y tapan. De mientras, parten la cebolla, los jitomates y la calabacita en cubos y el chile serrano (si gustan, le pueden quitar las semillas) y el ajo en cubitos más pequeños . Con un cuchillo desgranan el elote. En una sartén calientan un chorrito de aceite y primero sofríen la cebolla, cuando vean que empieza a ponerse transparente incorporan el ajo. Con la ayuda de la espátula revuelven constantemente y después de 1 minuto agregan los jitomates y los granos de elote y van sazonando con un poco de sal. En este punto pueden tapar la sartén y dejar que los jitomates se suavicen un poco. Cuando la pasta esté lista, la escurren y reservan. Volviendo a la sartén, después de que hayan pasado unos 5 o minutos agregan el chile serrano y las calabacitas y nuevamente sazonan con otro puñito de sal y pimienta. Mezclan muy bien todos los ingredientes y tapan nuevamente. Dejan que se cocine por alrededor de 15 a 20 minutos. Pasado este tiempo, incorporan la pasta e integran muy bien todos los ingredientes. Prueben para ver qué tal está de sal y si le hace falta, agréguenle. Ya por último, le echan el cilantro y listo!.
