Leftover tofu needed used so I decided I'd make a vegan egg salad sandwich with "yolk" sauce for lunch! My grandma asks why I don't just call it a tofu salad sandwhich... she doesn't understand. It is supposed to imitate the look, taste, and texture of an egg salad sandwich. I use kala namak so that it tastes just like eggs. I LIKE the taste of eggs. Calling it a tofu sandwich doesnt sound appealing. That's my opinion at least ;)

This granola you need to store in the freezer for the chocolate to harden and form clusters. You can have it on top of anything, plain and even soak for few minutes in plant-based milk for quick cold oatmeal recipe.
Vegan Spicy tomato, pepper and brown rice soup😋🍜 Being a single parent on a budget I always try to make recipies out of leftovers. Vegan and nutritious.
Throw together bits of onion peppers, tomatoes , potatoes , a squeeze of tomato puree, garlic.
Fry onion until translucent. Add in veggies, a little chili, pinch of sugar or a little maple syrup , water and a stock cube to make this wonderful soup. Cook for 20 minutes and whizz it up.
I finished it off with leftover brown rice, sliced red chili and basil.
You can make your own croutons out of stale bread too, just brush with oil , a little salt, garlic and dried herbs(if you fancy) put in oven on gas mark 5 for ten mins or until crispy. Will keep in a jar for over a week. Loads better than overpriced shop bought ones. Delicious!
Today I had an amazing brunch with my sisters & babybro Quyen! The #Eberswalderstraße in the district #Prenzlauerberg is known for several coffee shops, hipster food & clubbing.
I chose @linnenberlin as our #brunch place, which also offers rooms for tourists and the location is the BOMB.com!!! It's not too crowded and the interior is stunning with a lot of wood elements and plants. I also loved the glass straws and nice crockery (Geschirr). The menu is small but everyone found sth although we favour different tastes.
Staff was heart warmingly (is that a word?) kind and all the dishes we had were tasty. ♥️♥️♥️
Sadly I often make the experience that nice hipster places in #Berlin let you pay extra for the location, "nice" #food presentation and healthy ingredients but the prices here were absolutely fair (around 7€).
I ordered an overnight #oatmeal , which they can easily veganize for you with soy yoghurt or plant milk.🌱 My company had: #Avocado toast, #Hummus bowl and an omelette with sausage and bread. Everyone approved& we recommend 🤘

Peaches & cream triffle, so simple to make! Yet very delicious and no refined sugar.
Whip the coconutcream of one can with some coconut-sugar or aguave to taste. Use only the solid part, that lays on the top of the can when it is cooled. But don't throw the liquid away, you can use it for something else. (overnight oats for breakfast is my favorite use 😉) Put in a blender a cup of raw almonds, mix until you have a rough crumble. Then add 15 to 20 dates (seeds removed) and mix again until the dates and almonds start to become friends. 😊

Cauliflower curry-wrap with mint 💚
To make this, you need:
1 big cauliflower
1 red belpepper
1 cup of boiled peas
1 cup of boiled basmati-rice
1 can of coconutcream (#fairtrade )
2 tablespoons of Tika massala paste
A handfull of mintleaves and
Finely chop the onion, cauliflower and red belpepper. Stirfry the onion until golden brown, then add the raw cauliflower bits and belpepper. Stir the tika massala all the way through and add the coconutcream, let this simmer (covered) until the cauliflower is cooked to taste.
Add the peas and the rice, pre-heat your wraps in a hot (dry, no oil) fryingpan.

I don’t know if anyone else can relate, but I absolutely love experimenting in the kitchen (if you can’t already tell hehe 🙈). It is almost a form of self-care and brings so much joy to me. I think what I love so much about it is that I can create such nourishing and wholesome meals for myself and my family that taste equally delicious and are super healthy. It makes my heart shine when I can share such meals and treats with my family who happily enjoy what I make ☺️. I love showing others that plant foods don’t need to be boring and tasteless but are the best foods to nourish your mind, body and soul.
