A very simple dinner I made since I’m working a 14 hour day today! Lentil pasta with some marinara sauce. It’s vegan AND gluten free. I know a lot of people aren’t a fan of GF pasta but I’m learning I quite like it. Such an easy way to pack a lot of protein in a meal.
Everything looks super great in this photo, and it wasn’t all bad. I mean, that view was amazing. But I was so sick with a cold (like miserable level 100) and hiking up a mountain in the blazing sun with a bajillion percent humidity really took a toll on me 😅 Totally wasn’t prepared for the humidity levels in Maine. Usually I’m unfazed by stuff like that but dang 🔥 About an hour after this I had to take my shirt off and wrap it around my shoulders because I was paranoid I was gonna get sunburnt real bad 😬 It did the trick though and no burning happened here. But the bad equaled out with the good because I got to see a very majestic German Shepherd plus dip my toes in the very very ice cold ocean and eat a really good salad in the sand 😎 I love hearing stories behind pretty photos because most of the time there’s a lot of variety of experiences that have lead to that one picture perfect moment 📸
Chickpea and potato curry and asparagus tonight for dinner. Sky picked out the asparagus. I think she has a pretty good eye for picking out produce. With that appetite, she better be good at something 😩 and I had to improvise and add some kidney beans to my curry bc I thought I had hella chickpeas in the cupboard. Turns out I had hella kidney beans 🤦🏾♀️😂 It was still good tho 👌🏾 What y’all had for dinner? 🌱

ANTIOXIDANT FOODS AROUND TRAINING TIMES
We’re told that exercise is supposed to leave us energised and full of life 🦄 🌈💫 but it’s not at all uncommon to feel exactly the opposite after some grafts arse whooping session 👊🏼👹🤕, especially if yoursession has been particularly intense. Exercise-induced muscle damage (EIMD) after a tough session causes muscle soreness, oxidative stress and inflammation. Luckily, phytochemicals (plant chemicals) nip this in the bud. Berries, in particular, can speed muscle recovery when eaten before and after strenuous exercise and minimise free radicals. They contain polyphenols, a group of plant-based antioxidants that are revered for their ability to protect your cells from all kinda oxidative damage. 💥 this is known to help reduce muscle pain and reduce inflammation.
Berries also contain anthocyanins – flavonoids found in the skin of berries. Anthocyanins are great as they enhance blood flow and reduce muscle inflammation. Naturally, every 🦍 wants the best treatment for EIMD. So what should a 🦍 do?
Researchers have investigated many options, including dietary antioxidant supplements like vitamins C and E. Unfortunately, although antioxidants in general do help reduce free radical damage, there’s little evidence that supplementing antioxidants in pill form actually works (and supplementation with single-dose antioxidants may in fact be harmful). Blueberries were chosen as the berry 👑 because they contain the broadest range of phytochemical compounds and are especially high in anthocyanins. Because of this, blueberries have what is called a high antioxidant capacity — otherwise known as “ORAC,” or oxygen radical absorption capacity. In other words, they can squash and neutralise free radicals formed as a result of exercise and environmental pollutants.

#transformationtuesday because i was scrolling through my old facebook pictures and i came across this. i don't have a lot of pictures of my body pre "brooke n burritos" and that's mainly because i never liked how i looked. i found veganism in december of 2015 and went cold turkey right away. i did it all wrong, instead of eating a healthy amount while still remaining plant based- i was plant based and eating nearly NOTHING. i'm talking like 1,000 cals less a day people on top of dance and excessive cardio. i moved to florida that following summer and with all the stress, hot working conditions, and busy schedule i was losing more weight and having less concentration on my diet than before. i lost so much weight my first few months in florida, it was insane. in the photo on the left, i had just started my Disney College Program and i went through a lot of changes. i could bet i looked at the picture on the left and could say i still wasn't "skinny enough". and man am i SO glad i don't have that mindset anymore. i love food, i get my cals in, i don't care if i'm "skinny enough", i'm not afraid to pick up weights and gain muscle, and i'm LIVING. that girl on the right may not be 93 lbs anymore but i'm eating on a flexible, comfortable diet/lifestyle and hittin the gym in a healthy way now. it may not look that different physically in those pictures but mentally, those are two different people. yes it's important to grow those muscles but you can't forget to grow your mind! your mindset can change everything 💪🏼

B12 no doubt is an essential supplement while eating plant based. Even though Nutmilk and Nutritional Yeast contain B12 I’m still cautious by supplementing myself with the amount I feel is best for my body
