Yummy spinach and lentil daal 🍲
I could literally eat buckets of this 😅 it’s high in protein and good way to sneak in all kinds of veggies
2 tbsp coconut oil
1 small onion, diced
3 cloves garlic, minced
2 tsp. cumin
1 tsp. coriander
1/4 tsp chili powder
1 14-oz. can diced tomatoes, with juices
10 oz. lentils
4 c. Water
4 c. Frozen spinach
In a large pot over medium-high heat, heat olive oil. Add onion and cook until beginning to soften, 5 minutes. Add garlic, cumin, coriander, and chili powder, and cook 1 minute, stirring constantly, then season with salt and pepper.
Add tomatoes, lentils, thyme, and water and bring to a boil. Reduce heat, cover partially, and simmer until lentils are tender and soup has thickened, 20 minutes. (If most of liquid has been absorbed, add in ½ to 1 cup more water.)
Stir in spinach and continue cooking until wilted, 2 minutes, then season with salt and pepper
A very cruciferous working lunch. Steamed broccoli and cauliflower on a bed of kale, topped with my cheezy sauce, and red pepper flakes. A staple leftover from my #veganketo days that I carry into my daily diet cause I just love it that much.
------------------------I've been thinking a lot about dieting culture and 'healthy' living. I was led by @aubreyyrenee to the Dear Sugars podcast "Trust Your Body", an incredibly eye opening and personally relevant episode in which they speak to a psychotherapist and nutritionist about body-trust; an alternative (maybe a companion to?) body positivity/body love, which allows room for a slight dislike of your body, as long as you trust it. From there I was led to the book "Intuitive Eating", which deconstructs dieting culture so wholly that we begin to see that the entire 'healthy lifestyle' culture is centered on diet culture, even though diets have been found to be absolutely incapable of sustaining weight loss in the long term. The most common idea of a healthy lifestyle involves restrictions, guilt, tracking, working out to look a certain way rather than for metabolic health... etc. Even medical professionals quite often ask you to partake in disordered eating behaviors: counting calories, restricting certain foods, weighing yourself often… As in alternative to the common advice, this book instructs you to take ––as completely as you can–– the stress off of food. Eat what you like, no guilt or emotions attached, until you begin to really feel your own urges again. (CONT IN COMMENTS).

Took my leftovers today and added some #vegan parm by @followyourheart. This is such a hearty and yummy meal! Chalked full of veggies like olives, broccoli, peppers, squash with ton of flavors 🌈
Have you ever tried wheatgrass powder??🌱it can be hard to find a good quality greens powder, but @sarifoodscompany has a great one!! It tasted super yummy in this smoothie bowl, the bag was filled to the brim (they don't give ya a half empty bag haha!), and they use all of the superfood to give you allll the added benefits opposed to using wheatgrass juice to make the powder which is less nutritious!💚I loveee using greens powder in smoothies to help get in all my daily greens😋thank you @sarifoodscompany ! SMOOTHIE DEATS: 2 frozen bananas🍌 1 cup frozen mango🌴1 heaping tablespoon wheatgrass powder🥄maca, blackstrap molasses, hemp seeds, almond butter, spinach, cinnamon, and water!🌀blend it up, serve it in a @coconutbowls :) and top it off with some goodies!😋
Woke up after 10+ hours of sleep (longest I've slept in MONTHS) and 6 super vivid dreams (one of @im.emily.bean and I taking shots of peanut butter in a coffee shop ?????) ... I feel like I went on a wild journey to dreamland last night, probably caused by eating chocolate chips before bed👍🏼 Honestly... highly recommend😏 Breaking the fast with a bowl of fruit + rawnola (banana, apples, blueberries, cacao nibs, freeze dried raspberries, rawnola, and almond milk) Happy Sunday☁️🍃
I just want to tell you,that I won't post until august,because my first exam will be in 2 weeks and also I have five more exams in july. 😥💪🍀📝 I thought it would be possible to post every three day,but I think if I do this I will stress myself and I have more to do than I thought 😕😅🙈 So I wish you a great rest of june & a good july. 😊💕 I will be back at the first august.

Orange dreamsicle cookies!!🍊🌚24 hours after getting home and grocery shopping has been done and the oven has been turned on🔥😂sadly no cookies were made😢🍪haha but hopefully soon! I haven't done much recipe creatinggg for a little but will start cooking more and adding the recipes! Meanwhile I just wanted to remind ya guys that if you think about something enough, it will appear, you will cultivate that thought💭so if you think positive things then those things will appear and vice versa! Any-who, these fries were bomb! I made them in the air fryer sprinkled with a little bit of garlic powder, onion powder and salt. Added a little side of guac and ketchup. Yo! Dipping your fries in guac then ketchup is literal heaven.🙌🏻
Super moist vegan coconut-zucchini bread ! 🥥🥧🙌🏻
I don’t know about you, but I LOVE veggie bakery. If in doubts, I suggest you trying this amazing zucchini cake! It tastes like a sweet coco muffin and no chance you guessed the green ingredient hidden in the dough!
2 medium zucchini, grated (about 3,5 cups)
2 cups whole wheat flour
1 cup oat flour
2/3 cup coconut flakes
1/3 cup pecans
2 tsp baking powder
3 flax eggs (3tbsp flax meal + 7,5 tbsp water)
1/2 cup cane/coconut sugar
1/2 cup agave syrup
90g apple purée
2 tbsp coconut oil
1/2 tsp vanillin (or vanilla extract)
pinch of salt
1. Preheat the oven to 180C (350F)
2. Mix dry and wet ingredients separately, then mix everything together
3. Slightly grease your baking form with coconut oil
4. Pour the batter into the form and bake for 1hour (I baked slightly longer - about 1h 15 mins) 💚

Не знаю, как вы, а я очень люблю сладкую выпечку с овощами! Если вы сомневаетесь, рекомендую вам попробовать испечь этот хлеб с цуккини! Он имеет вкус кокосового маффина, и нет шансов, что вы бы угадали в его составе наш зелёный ингредиент!
2 средних цуккини (кабачка) - около 3,5 чашек, натертые на терке
2 чашки цельнозерновой муки
1 чашка овсяной муки
2/3 чашки кокосовых хлопьев
1/3 чашки ореха пекан
1/2 чашки тростникового/кокосового сахара
3 веган яйца (3 ст.л.льняной муки+7,5 ст.л.воды)
2 ч.л. разрыхлителя
1/2 чашки сиропа агавы
90г яблочного пюре
2 ст.л.кокосового масла
1/2 ч.л. ванилина (или ванильного экстракта)
1. Разогрейте духовку до 180С
2. Смешайте сухие и жидкие ингредиенты сначала по отдельности, затем соедините их
3. Слегка смажьте вашу форму для выпечки кокосовым маслом
4. Положите тесто в форму, выпекайте 1 час (я пекла даже чуть больше, около 1 часа 15 минут)

Whether we know it or not, recycling has been a part of a lot of our families for a long time! Any kid that’s ever reached into the fridge for country crock expecting butter only to uncover some habichuelas can tell you that 😂 (raise your hand 🙋🏽♀️ if that’s happened to you!) But, most recently, we’ve been really trying to think about ways gay we can make easy switches to reduce the amount of plastic we’re using overall! We recently jumped on the bambu straw train and have been trying to reduce the number of coffee and drinks we order in disposable containers. Saves money too! Creo que todos nosotros tenemos una memoria de abrir un envase de la nevera esperando una cosa (como mantequilla) y encontrando otra (como habichuelas 😂). Every Friday for as long as I can remember, my family has had pizza for dinner and last Friday was no different. I hardly ever have pizza when I'm not with them though, I'd honestly rather have a huge bowl of greens with potatoes or rice most nights, but sometimes the cravings HIT👌🏼These were two homemade pizzas, one with @followyourheart shredded mozzarella and the other tomato sauce, fresh basil, and more herbs🌿🌟
