Chocolate Pineapple or Watermelon? 🍍🍉.
Loving all these fruit pop experiments. I've gotta say though that pineapple is still my firm favourite. But if you've tried others I'd love to hear about them! These are great for these warmer days when you are looking when something sweet (semi-healthy) and vegan. Just freeze your fruits, dip them in dairy free chocolate and sprinkle with pistachios for some crunch.
Sometimes you get so caught up trying to please anyone in your life. You allow negativity into your home and life because you fear to hurt or offend the people you love. These VEGAN Cacao Waffles with Cherries, Peanut Butter + Coconut Cream were too tasty. Unfortunately they were made last week with the other batch of waffles I shared last Sunday. 😢 Today's going to be busy so breakfast will be grabbed on the go. It's so easy to veganize any waffle recipe by using plant milk and banana instead of cows milk and eggs. Just try it! You will be pleasantly surprised
Chill time with some frosty choco fruit pops 🤤. Banana or pineapple?🍌🍍.
I've been seeing lots of fruit pops here lately but was so tempted to make these when I spotted @bos.kitchen chocolate dipped pineapples the other day. So simple to make and also much healthier than icecream 🤣. Literally just dip frozen fruit into melted (I used my homemade vegan milk choc recipe) and sprinkled on some pistachio for crunch.

Wir haben in dieser Plörre heute und eher mieser Familienlaune einfach zwei Kuchen gebacken.
Den einen stell ich euch heute vor, den anderen morgen.
Dieser hier ist ein saftiger Schoko-Walnusskuchen. Auch dieses Mal wieder ist @veganevibes die eigentliche Schöpferin, nur sind in ihrem Rezept Johannisbeeren und in meinem, in Ermangelung solcher, Schoko Stückchen und Walnuss gelandet.

Ob er schmeckt, kann ich erst morgen sagen, aber der Drauf-drück-Test hat das "fluffig und saftig" schon mal bestätigt. 😍
250 ml Mandelmilch oder eine andere Pflanzenmilch 1 ¼ Tassen
150 g Kokosnussöl (½ Tasse)
½ TL Natron 3,5g
270 g feines helles Dinkelmehl (2 ¼ Tassen)
30 g Speisestärke 2 EL
30 G Sojamehl 30g Alternativ 2 Leinsamen-Eier* Rohrohrzucker 1/3 Tasse
Ahornsirup 1/3 Tasse
½ TL Backpulver 2g
½ TL Meersalz
200gr Dunkle Schoko in Stückchen geschnitten
Eine Handvoll Walnüsse, in kleine Stückchen gedrückt/gehackt/gehämmert
Nun das übliche: Ofen auf 175 Grad aufheizen, Kuchenform mit Kokosöl einfetten. Alle Zutaten bis Natron in eine Schüssel geben, nur ein wenig umrühren, damit das Natron seine Wirkung nicht verliert und danach das Mehl einsieben und die restlichen Zutaten dazu. Zum Schluss die Schokolade und Walnüsse druntermischen.
40-50 Minuten in den Ofen und dann noch ruhen lassen.
Geht schneller als man meint und wenn ihr mal schnell, auch spontan, so etwas köstliches backen wollt, weil Freunde-, Eltern-, Nachbar-, whatever-Besuch ansteht, dann ist das sicher ein sehr passendes Rezept.

I’m a NICU nurse in our local hospital and photographer. I am passionate about wellness and in the last 5 years we have completely changed how we live. I love to cook, am a huge procrastinator, can’t sing or dance, am petrified of storms and love home design. We are a plant based family whose journey started when we were trying to heal my son from autoimmune issues 3 years ago and modern medicine couldn’t find an answer. I’m also an essential oils junkie 🙋🏼♀️ I was a HUGE skeptic and started using them before the craze hit when I didn’t know a single person that used them. Needless to say we now couldn’t live without them and we are all believers! I created this account to share our lives and stories in the hopes that I can help other families who struggle with things like we did on our standard American lifestyle (think anxiety, depression, acne, autoimmune issues, eczema, headaches, allergies, etc). The last 5+ months, I'd say that I was not the best role model for my children. We had a lot of stress going on in our lives and it took a toll on all of us. I yelled more. Was more impatient, used threats and manipulation to get things done.
Parenthood isn't easy. It makes me grow and expand like crazy.
We all have bad days and even months. .
Now that we are in our new living situation and happier and healthier, I'm finding more space to grow and have patience for our boys. I'm reading all the peaceful parenting blogs and books again. One of my favorites is Peaceful Parent, Happy Kids by: Dr. Laura Markham. Have you read it? She also has an amazing website called Aha Parenting (ahaparenting.com)
After a few months of hard stress, my boys are feeling really disconnected from me so I've been filling their days with random ways to reconnect. We rough house and play hide and seek and chase and their favorite, Huggie Monster. I get them to laugh and engage with me and in turn we fill each others cups. .

This morning we woke up too early, it was rainy, the coffee tasted burnt and we had run out of soy milk. I was annoyed. I wanted to scream and cry and go back to sleep.
But I don't get to do that because I'm mom and to me that means I get to be the calm safe space in Carter's world even when it's chaos. It's not that I have to; it's that I get to. It's a choice that I make every day and I love that I get to be those things, but it's not always easy. I dont always make that choice but when I do, I never regret it.
So instead, we went to the store, we got the things we need (and a giant bottle of Kombucha😏) we laughed and bagged the bananas and pressed the buttons to pay and jumped in front of the doors to make them open. we made memories, probably not for Carter but for me today is a moment of choosing happiness, choosing joy.
I planned to go to the store come home and call it a day. But, because of the choice I made to be present and joyful with my boy, I had brought myself into the same state and after the store I thought: let's go to the path and get some wiggles out. Even though it might rain again. and even though I still hadn't had a decent coffee 😴 and so we did, and we found doggy footprints and trees swooping over the path and puddles to slash in and when it did, inevitably, begin to spit again I threw my lovebug on my shoulders and we walked back to the car, bouncing the whole way and I KNOW that because I encourage myself to see the joy for him, he will continue to choose joy for himself. ✌💖🌱
Tofu tacos for lunch! So good! I know many people are not really into tofu and me and my husband used to hate it but you can season it to taste however you want it to and its now one of our favorite foods :)
We tried out this new cashew queso too (swipe!) and its AMAZING I highly recommend it!
