Tried their vegan laksa and mushroom burrito! The vegan laksa tbh wasn't that good but the mushroom burrito was pretty okay! :) maybe I shouldve ordered the other stuff on the menu! Tons of choices!! :) Have you guys eaten here? What do you recommend? :D

🍃Vegan Tofu & Black Bean scramble + Smoky Tempeh Bacon Taco with Garlic Sauteed Kale 🌱
People ask me all the time if I miss eating eggs. I used to eat eggs at least 2-3 times a week in the mornings for breakfast. I don’t miss the actual taste or eating an egg specifically, but I miss the salty scrambled breakfast taco, being from Texas, I grew up on any form of taco.
So I think I’ve finally mastered this one for anyone looking to try something plant based to replace eggs. Definitely adding this to the weekly rotation👌🏽 Tofu-
15 os firm tofu (soak up as much water w paper towel) Make sure its organic, you dont want any gmo tofu👍🏽 -1 tbsp olive oil
-1/8 tsp turmeric
-1/4 tsp cumin
-1/4 tsp smoked paprika
-3 tbsp almond milk
-2 tbsp nutritional yeast
-salt & pepper to taste + Warm up olive oil on skillet and cook tofu about 5-10 min until slightly golden. Add all seasonings and almond milk and mix together til milk evaporates.
Add 1 chopped clove of garlic to another pan and olive oil, after about a minute add black beans and 2 tbsp salsa.
Warm up the smoky tempeh bacon (either make your own or you can buy it ready to cook for a quicker meal)
Assemble! I add sriracha on top for a little more spice. Lentils, apples et coriander salad 🌱Salad:
2 handfuls of raisins
2 Belgian endives
1 lemon juice
1 brunch of coriander 🌱Dressing:
1 clove of garlic
75ml red wine vinegar
200 ml olive oil
I had loads of you asking about what sweet treats @thedanishbakery (Brod) after my story on Sunday. So this gem was the apple snegl danish and was lovely! They also do a classic danish that’s vegan, both are available through out the week. However, if you go and visit on vegan wednesdays (which I suggest you do) then you will also have the option of an apple or jam spandaeur (which are my fav) and a chocolate snail, which I am yet to try as it’s always sold out by the time I get there!
Dinner tonight was this amazing tofu stir fry. The flavours are unreal 👌🏼 ginger, garlic, soy sauce, rice wine vinegar. So yum!

Because it was too hot to get dressed all weekend we had a banging weekend of trying new recipes!
