I get the soy crispies from KoRo and they are so crunchy and crazy high in protein (per 100g 60g of protein) 😱 Not that I need more protein 😅 I already get all the protein I need 💪🏼 But I love their crunchiness and it’s a simple way to boost your protein. I have a lot of pictures to share with you guys, but first: a lavender lemonade from today’s market, much needed in this heat! 💜 It was our first time visiting @melrosetradingpost so wasn’t sure what to expect but it’s definitely worth a visit. They have tons of unique stuff!🌷 and the best part, vegan food and live music 🎶🌱
Got wrapped up in work and almost forgot to post tonight. You know what else got wrapped up? These spring rolls. (I saw the opportunity and I went for it.)🥁
These are wrapped using rice paper wrappers and are filled with brown rice noodles, cucumber, spring mix, tofu, carrots, and bell peppers. If you’ve never wrapped one of these before, think of it like wrapping a burrito. There are some great YouTube tutorials available if you are looking to make your own. 🙂
Paired this with some peanut sauce I made myself with a combo of 2 tbsp peanut butter, 2 tsp soy sauce, 2 tsp maple syrup, 1/2 tsp garlic powder, 1/4 tsp ginger powder. I thinned that out with some water until it was at my desired consistency for dipping. This was such a fun light lunch especially if you are not the biggest salad fan. You can still get those greens in this way. 🌱
Cauli Fried Rice feat. peas, corn, zucchini, edamame, onion, kale, & shiitake mushrooms 🍚
I was pretty biased against cauliflower rice before I tried it because it’s touted as a low-carb alternative to rice and I’m not a fan of low-carb anything #hatersgonnahate 😏 But! I am a fan of finding new and delicious ways to add veggies to dishes 🙂 Full disclosure, I added brown rice & quinoa after this because without it, this dish would not be nearly filling enough for me. I like big meals and I cannot lie. But riced cauliflower is a great option if you’re trying to have lower calorie (and yes, lower carb) meals
