Courgette façon pizza ! C'est tout simple et délicieux. Il suffit de creuser la chair d'une demi courgette, y ajouter de la sauce tomate et les ingrédients de ton choix. Ici j'y ai mis du faux-mage façon gruyère et cheddar, des olives vertes et de l'origan. 🌿🍕

Bliss out in the sunshine with these easy peasy no-bake Blueberry Bliss Balls. 💙☀️
Blueberry Bliss Balls (No Bake)
🔹️2/3 cup Oats (Gluten Free or Regular)
🔹️10 Whole pitted dates
🔹️2 Tbsp Blueberry Powder (we used @organictraditions)
🔹️ 3 Tbsp Date water 🔹️ 6 Herbaland Wildberry Protein Gummies, chopped
1) Soak the dates in hot water until soft
2) Once soften, scoop out the dates and reserve the water. This is your "date water"
3) Place all ingredients except the gummies in a food processor
4) Add more or less of the date water until you reach a texture that can easily be rolled into a ball
5) Add the gummies prior or after rolling them into balls
6) Let them set for at least 1 hour in the refridgerator before enjoying
🔹️ they taste best when in the refridgerated and, in the summer, I like to pop them in the freezer!
🔹️ Because these are raw, use quick oats since they are more easily digestible
🔹️Feel free to substitute the blueberry powder for acai powder or frozen blueberries!
🔹️ If using frozen blueberries, you might need to use less of the date water due to the higher water content

Almond butter cookies 🍪
Cooking with @lucha.verde 👩🏻🍳💖
1 cup almond flour
1/4 cup almond butter
3 tbsp monk fruit @lakantocanada
1 tbsp yacon syrup @hellohealthycol
1 flaxseed “egg”
1/2 tsp baking soda
Chocolate chunk or chips
✍🏻 Prepare the flaxseed egg, 1 tbsp ground flaxseed with 3 tbsp water, let it rest for 5 mint to thicken
✍🏻In a bowl, add all dry ingredients and mix then add wet ingredients and mix until
combine, fold in the chocolate chips or chunk ✍🏻Make balls and place it on the baking sheet, press down slightly to flatten
✍🏻Bake for 10-15 mint at 350 F
Galletas de almendra 🍪
1 taza harina de almendras
1/4 taza de mantequilla de almendras
3 cucharadas de Monk fruit
1 cucharada de sirope de yacon @hellohealthycol
1 “huevo” de linaza
1/2 cucharadita de bicarbonato de sodio
Chispas o trozos de chocolate
✍🏻Preparar el “huevo de linaza”, 1 cucharada de linaza molida con 3 cucharadas de agua, dejar reposar por 5 minutos para que espese
✍🏻 En un bowl, agregar los ingredientes secos y mezclar, luego agregar los ingredientes húmedos y seguir mezclando hasta incorporar todos los ingredientes, agrega las chispas o trozos de chocolate
✍🏻Hacer unas bolas con la masa y colocar en la bandeja con papel para hornear, las presionar para darles forma
✍🏻 Hornear de 10-15 mint a 350F
I am so EXCITED to share my FIRST food photography (not food pic... food photography sounds more legit). The duration of my summer has been spent recovering from an intense jaw reconstructive surgery that I had. I am still recovering, but in the mean time I found a passion to distract me from my pain and that is... food. Even though I can’t eat solid foods right now, just the act of cooking and sharing the food recipes brings so much joy to my heart.
I made Elotes y Frijoles Tostadas. Growing up I was always eating elote, whenever I would hear the bell I would grab some change and go run to get me some elote. Shout out to those who know what I’m talking about 😉. I also grew up eating tostadas, SO crunchy and SO delicious. Now that I’m vegan, that should not stop me from recreating some of my favorite childhood memories. Which is why I decided to do a combo because on its own it’s delicious but together it adds a whole other wow factor. The best part is it’s so quick and easy to make!
Cayenne pepper or chili powder
@traderjoes Vegan Mozzarella style shreds (chopped up)
Grab yo tostada put some canned refried pinto beans (make sure it is vegan certified) and top it off with some elote and ENJOY 😊

By combining the tortilla and frijoles you are getting all the amino acids needed to build protein in your body. Amino acids are the building blocks of protein in case you didn't know 🙂

Woke up feeling like a sweet potato scramble one morning and had so much fun adding all the other veggies that I almost forgot about the sweet potatoes! Remembered to add them after I took this first pic 😅 In this scramble: sweet potatoes, peppers, cherry tomatoes, crimini mushrooms, spinach, @sweetearthfoods bacon, & black beans. A breeze to whip up and oh sooo tasty 👌
I’ve been a bit rubbish on the cooking front during the week due to long work hours. Working wife guilt for not being able to make 3 meals a day is a thing. Some may say it’s my half Indian upbringing, I say my mum just set the bar really high juggling it all. Here’s my first home cooked meal of the week: Tofu and Peas Masala with Garlic Naan.
oh, hey there! we know it's beyond time for @veganironchef to do what we do best... chef show-downs and city-wide cook-offs! in case you didn't know....we first started way back in 2008 as a tiny team of volunteers, led by @count.agranoff, @tvpdx
& @jdfunks, and hosted the west coast's inaugural, entirely live (and live-streamed! which was pretty dang wild at the time) #veganironchef competition come summer 2010. 🔪
goodness gracious, this epic walk down memory lane was a sold out bit of vegan history, held at @ecotrust here in portland, and won by the one and only @empressqausu and her team (who operated then-open, Caribbean - West African-inspired Asaase Ital Palace food truck), captivating our judges with three dishes starring the #mysteryingredient of C H O C O L A T E. 🍽️ long story short! @veganironchef has grown into an official nonprofit org since then, with thematic events, potlucks, community cook-offs, fundraisers, podcasts and more, and our roots of inspiring, exciting and empowering people + communities via #veganfood remain true, and we invite YOU to help us continue to do so.
that said...we're 100% volunteer-run and to make our next cook-offs and a live showdown happen once more, we need hands and brains on deck!
so! come on by to our next open meeting to plan our next event, learn more, brainstorm ideas, hang out, gossip about all things vegan food and cooking, and help shape our future. we're open!
our events are way fun, certainly unique, delicious – and have the ability to raise funds for our future *and* causes in need of support.
