One of my favorite staples for a healthy and quick whole food vegan meal: Red lentil chilli with a nut free parmesan (1 cup of oats blended with 1 cup nutritional yeast). Recipe inspiration @therealchefaj aka the best vegan chef for real food without all the processed junk🥄💥

Slowly but surely the house is coming together. With that I’m slowly able to get back in the kitchen to cook actual meals. Tonight I had an eager helper. Ended up making #yves wieners and beans, with my favourite ceaaar salad, with again a new #tofu bacon and the great #vegan parm! And yes some zucchini sticks that go amazing with the #ranch dressing found in @hotforfood cookbook! Vegan Comfort Classics! Honestly all the dressing have become a staple in my fridge l, along with some type of bacon, so far I've made almond, coconut and tofu! We went on an impromptu trip to Seattle, WA this weekend and I was inspired by the idea of seafood! Nearby, there was a book store that we found a few gems to add to our cookbook library, one of the favorites being Lauren Toyota’s #vegancomfortclassics , which helped satisfy my craving with her recipe for “See Food Chowder”. Hola! Aqui te dejamos esta receta para hacer una rica CREMA DE AUYAMA! 🌱💪🏻.
2 cebollas blancas
3 dientes de ajo
2 cucharadas de aceite de coco
500grs de papa
800grs de auyama
1 pizca de sal marina y pimienta
5 tazas de caldo de verduras
1/2 cucharadita de curry en polvo
1/4 de cucharadita de canela
1/4 cucharadita de pimentón
1/4 taza de crema de coco.
Garbanzos tostados picantes
1. Cortar en dados las cebollas y el ajo y agregarlos en una olla grande con aceite de coco. Cocine a fuego medio-bajo, revolviendo ocasionalmente durante aprox. 10 minutos, hasta que la cebolla se vuelva translúcida.
2. Picar la auyama y las papas en trozos y agregar a la olla (no es necesario pelar). Agrega una pizca de sal. Cubra la olla con la tapa y cocine 20 minutos o hasta que ablanden un poco.
3. Agregue el caldo de verduras y cocine a fuego lento. Agregue el curry en polvo, la canela, el pimentón, la sal marina y la pimienta y cocine a fuego lento la sopa durante 20 minutos, o hasta que los vegetales estén muy tiernos.
4. Pase todo a la licuadora hasta conseguir una consistencia cremosa.
5. Agregue la crema de coco y agregue más especias, sal y pimienta si lo desea.
6. Sirva y decore con los garbanzos tostados y el repollo morado salteado. (Opcional) *Receta para 4-5 porciones!

These guys were quite a lot of work. They’re a bit laborious to make but have a great flavour and texture. I need to get better at monitoring my oil temperature thought as a couple of them were doughy in the middle. Still, it’s all a learning process. And for my first donuts, these weren’t too shabby.
The cookbook has pictures to show how to prepare these fritters and I found that very helpful. This was very much out of my comfort zone.
That being said, the ingredients are the kind I usually have in my pantry so maybe on special occasions I’ll try my hand at these again.
Made @hotforfood crabless cakes tonight. I had to substitute a few things because I made them of the fly with the ingredients I had on hand. Looking forward to making them again with all the correct ingredients because I think they will turn out even better. Served it with some garlic fries and steamed broccoli.
Lentils aren’t pretty, but these little guys are such a staple when camping and traveling! They’re so versatile, easy, and packed with tons of plant protein that will keep you full for hours!
What do y’all make with lentils?? I’m always looking for new ways to use them. 😋 Here’s some of our favorites!
1. Tacos!! Add some taco seasoning, sautéed onions if you have them, avocado, and throw it all in a tortilla! So easy for camping 🌵🌱
2. Chickpea and lentil buddha bowls! Season lentils with a bay leaf, turmeric, and pepper. Add chickpeas, leafy greens, and tahini sauce!
3. Lastly, just cook them up and throw them in a salad like you would with quinoa! They add such a nice texture.
