1 Banana ( Really ripe)
100 g Frozen berrys
2 Big Teaspoons soy quark
25g soy crispies ( optional)
30 g buckwheat or oats
A little Bit lime Juice
1 Teaspoon nut butter ( homeade recipe is on my page)
Sweet of your Choice
170 ml Almond milk
120-150 ml whater
1)Give all ingredients in a mixer and mix it for 1 minute.

Happy summer solstice everyone! 🌞 I celebrated with my quinoa and red kale bowl with kimchi cashew sauce 😍 served up with nori, extra kimchi (of course) cucumber sticks, avocado and tomatoes, sprinkled with pumpkin seeds and WOW!! 👌🏼 this is my favorite go-to meal for when I’m too lazy or tired to make anything fancy. Xoxo ❤️
Kimchi cashew sauce:
1 tbsp miso paste
1/2 C raw cashews
1 heaping tbsp kimchi
1 tbsp kimchi brine
a splash of tamari or nama shoyu
1 super heaping tbsp nutritional yeast
1 clove garlic
Spring water for blending ✨
Just blend until smooth adding teaspoons of water at a time and you’re all good 👌🏼❤️

It's not your ordinary smoothie bowl though! Lately, I've been blending @inspire_organics' Light Up in my smoothie bowls!
Light Up is an energy booster made of 100% organic herbs and superfood ingredients. Seriously, how awesome is that? I don't dig products that are made of chemical shit storms (pardon my language, but that's what it is! LOL), so it was really surprising to see such clean ingredients in Light Up.
I love and consume superfoods as much as possible. I really like that Light Up has almost all of my favorite ones in one easy powder mix.
If you're into energy drinks, I can't recommend Light Up enough! You don't get cracked out. I personally feel a lot of mental clarity and the energy I have for my workouts now is so awesome!

TOFU horneado al limón! ✨🍋
Este tofu va bien con los #veganbowls ensaladas, noodles, caldos y la mayoría de ls comidas #veganas ! Además para los que hacemos #mealprep se mantienen por 3 días refrigerados!
Yo use romero en lugar de tomillo, ambas funcionan super!
3 cucharadas de salsa soya o tamari 2 cucharadas de jugo de limón 2 cucharaditas de aceite de oliva 1/2 cucharadita de ajo en polvo 1/2 cucharadita tomillo seco 1/2 cucharadita de salvia 1/4 cucharadita de pimienta 1 (14 onzas) tofu extra firme, debes eliminar el liquido, envolverlo en papel toalla para que seque un poco al menos 30 min antes de usar.
•mezclar: salsa soya, jugo de limón, aceite de oliva, ajo en polvo, tomillo, salvia, pimienta. Corta el Tofu en cuadros o en la forma que desees.
Coloca el tofu en la mezcla anterior y asegúrate que todo esta en la salsa, debe marinar al menos 30 minutos a temperatura ambiente (no refrigerar)
Nota: 15 min de cada lado •Precalienta horno 400F. •Colocar papel para hornear en una bandeja de galletas. Pon el Tofu en la bandeja y guarda lo que te queda de la salsa.
•Hornea por 15 minutos, luego voltea el tofu y con una cuchara ponle del marinado por encima, vuelve a hornear por 15-20 minutos mas, hasta que el tofu haya disminuido de tamaño y la salsa se seque. El tofu tendrá una textura un poco chiclosa. •Disfruta inmediatamente o guarda en la refri de 2 a 3 días. -
🛸🛸👽🌼🌱🛸🛸Vegan Stuffed Flying Saucers! ————————————
These little beauties are “patty pan squash” or “sunburst summer squash”, also called "flying saucer" squash because of its appearance (small, round and flat, with edges that resemble an alien spacecraft). To me, they look like beautiful little sunflowers when you slice them across (wipe to see☝️), and you can also eat the skin. They are super fast to cook and will sure impress your friends and families when serve with green stems of asparagus! Look for them now at your local farmer markets. .
Here is my own version of Vegan Stuffed Flying Saucers 🛸 👽 .
Halve the squash crosswise, trim both ends (swipe to see👉). Use a small teaspoon to scoop out the squash seeds - save for that filling. Roast the squash with cut side down in oven at 400F for 8 minutes. While the squash is roasting, make filling. .
For the filling, sauté squash seeds, mushrooms, green onion or shallots, garlic, parsley, toasted pine nuts for a few minutes with salt & pepper. Remove from heat, add 1 teaspoon of ground flax seeds + teaspoon of panko breadcrumb (this will bind everything together). Divide the stuffing evenly among the squash after 8 mins roasting, then put back in oven for an additional 8-10 mins. I also added asparagus + green onion for the second roasting.
This would be wonderful to serve with a creamy sauce or brown mushroom sauce on pasta or rice. Our family loves stuffed mushrooms and this is very similar to this dish, except it is such a pretty dish when served. We were so lucky to be introduced to them from our last veggie box. I made a mistake and called them starfish squash, sorry @taiwannanbushumeishi . I hope we get more of these in our new basket tomorrow, I think they will make a wonderful shell for a dessert pudding which I will try this weekend and share with you. .

Tonight’s dinner 😋 Kale, rice and jackfruit 🌱 I’m a big believer in using easy to source foods. I’m a northern girl and live in the middle of nowhere ... so I don’t have access to fancy delis. That said, we are very lucky in the uk to have access to amazon - which pretty much delivers everything!! So ... jackfruit ... I buy it in a tin. I stock up at the Indian supermarket near Manchester. This week I also ordered hickory liquid smoke on amazon 😳 now there’s a narnia ingredient for you!! It comes in a little dropper bottle and you only need a few drops to make something taste smokey. So tonight was smokey jackfruit with kale, rice and avo. Does anyone else have a weird thing with how food is served? I am odd. In today’s world of Photoshop and social media, it’s easy to get caught up in perfectionism.
You’ve heard this over and over, right?
Many times, I’m quick to only associate this kind of perfectionism with a “perfect” physical appearance, but it’s also an issue in how we act and how/what we eat.
I’ve found myself (more than once) getting caught up in trying to eat a “perfect” diet, just like the beautiful pictures I see on IG, but this unhealthy behavior only leads to unhealthy actions and thoughts.
It’s important to remember that success is defined as doing the very best you can in the circumstances you are in.
PLEASE: Don’t set standards for yourself you can’t reasonably live up to.
And please don’t hold someone else to your personal standards of perfection.
It’s great to have goals, but your goals shouldn’t be a moral measuring stick.
You shouldn’t feel bad about yourself when you don’t fly over the bar or when you’re only halfway there because halfway = still on the way.
Change, even good-for-you change, is really, really hard for most folks.
It is incredibly difficult to switch your eating habits.
It is incredibly difficult to start new routines and new habits like cooking for yourself.
Is it worth it? Absolutely!
But that doesn’t make it less difficult to change the way you live in every way or to uproot habits you're cemented in. It’s still hard!
Sometimes you need to take shortcuts.
And I’m here to tell you that it is OKAY if it’s helping you get where you want to go.
Like learning to ride a bike with training wheels.
And sometimes you need a little help or direction.
Start it off by setting a specific goal like “I will cook 1 meal this week” and do whatever it takes to make it happen.
When we eat healthier we feel healthier, and we are more likely to keep making good choices.
So do whatever it takes to get you to make more good choices.
When I stopped thinking about eating differently “someday” and actually did it, I noticed changes everywhere.
You deserve to feel incredible too.
But here’s the real deal: You can't wait for the perfect time or the perfect moment.
There's NEVER a "good" time to start anything, so just do it! 🙌🏻

We created this recipe for Lentils and Farro specifically with the Instant Pot Mini in mind, with the serving size being catered towards 1-2 people but you can definitely double this recipe in your Instant Pot Duo or other larger sized pressure cooker. Started my morning with the least summery breakfast, but a girl wants what she wants 💁🏼♀️
To make this —> bake 1 sweet potato ahead of time, and when you’re ready to eat, peel of the skin and mash the rest with almond milk (as much or little as you want), cinnamon, vanilla, and maple syrup if desired 👌🏻
I like topping mine with banana, berries, granola, and extra cinnamon, but anything goes!
Making an AÇAÍ bowl with no pre-bought packets😍
-6 to 8 frozen strawberries
-A handful of frozen blueberries
-Half a cup of water & half a cup of mango juice
Technically should be called a fruit bowl instead of açaí lol but the more frozen fruits the larger the quantity you’ll make! Also the mango juice I used was freshly made mango, not store bought (we don’t want that extra processed sugar)
🥑❤️🥗🥕 I topped this bowl with roasted cashews and teriyaki sauce for lunch. 👌🏼
