I like @blazepizza a bunch. It’s pizza kind of on the sandwich shop model—there’s pizza recipes they suggest or you can build your own. So many #vegan options. This one is spicy marinara, no cheese (they do have vegan cheese and it’s quite good, but I got used to cheeseless pizza and I really want it sometimes), banana peppers, whole roasted garlic, cherry tomatoes, fresh basil, and an arugula and balsamic drizzle topper. Sriracha for dipping on the side! Oh, they also have pepitas as a seasonal topping. They are shockingly good as a pizza topping. All the calorie info is listed, too. Here's the recipe for our King Oyster Mushroom Scallops for when you need to indulge in a little seafood fix! These are MELT IN YO MOUTH tasty. Check your local farmer's market for their shroom selection and you'll be amazed with what goodies you find! Enjoy and happy cooking! 🍄
3-4 king oyster mushrooms (about 9-10oz), stems sliced into 3-4 big pieces, tops removed
1 tbsp. oil
— 1 cup water
— 2.5 tsp kombu flakes
— 2 tsp tamari
— 1 tbsp lemon juice
1. Gather & prep your ingredients!
2. Add the water, seaweed flakes and tamari into a small saucepan and bring to a boil.
3. Once it starts boiling, remove it from heat for about 15 min.
4. Stir in lemon juice and pour through fine mesh strainer to remove seaweed flakes.
5. Add the sliced mushroom stems to the sauce pan and marinate for 30 min.
6. Drain the mushrooms and save the marinade as it will add extra flavor at the end.
7. Add oil to a skillet over med-high heat. Add your oyster scallops and cook on each side for about 5 min or until golden and crispy. Drizzle the top with your brine mix or with a browned butter sauce.
8. Eat scallops solo or as a fancy-shmancy garnish to your favorite pasta or grain dish.
didn’t feel like making a real dinner tonight, but i did have a lovely little sauce trio. homemade guacamole, homemade cashew chipotle queso, and some spicy, chunky salsa! i went a step further and baked corn tortillas (toss in garlic olive oil and generously grind some sea salt over the cut up tortillas after 14-16 minutes in the oven at 375 degrees!) it’s a little at-home thursday fiesta. 💃🏻🥑
I realized at 4 that I hadn’t eaten or drank anything. Not good. Thankful for @yourdekalbfarmersmarket buffet. Okra, Masoor Dal, Rajma, quinoa, kale, steamed broccoli, chili-balsamic roasted squash, and ginger tofu. Feeling much better now. #veganatlanta#vegansupper
