We have been doing some urban foraging in the local gardens of Copenhagen. It is amazing how fresh and tasty hyper local sourched plants can be. We are gonna use these for a private dining event tonight for an international thinktank focusing on urban development. The menu is developed to consist of urban ingredients. A big shout out to Lis and Hans for providing potatos, eggs, onions, salad, and fresh berries from their own and their neighbour’s gardens.

Enjoy spread on fresh baked bread, simply tossed with fresh pasta & grated cheese or mixed into scrambled eggs! Grab some fresh, local ingredients & enjoy, this recipe only takes 15 minutes start to finish!
Arugula Pesto -
4 oz Pistachio nuts - shelled
4 oz Leeks - washed & chopped
2 Garlic Cloves
2 Anchovy Filets
Juice of half a Lemon
4 oz Arugula - washed
1/4 cup Water
1/4 cup Extra Virgin Olive Oil
1 tsp Salt - to taste
1/2 tsp - Black Pepper to taste
Combine ingredients in food processor and process on high for 2 minutes or until mixture becomes smooth & well combined. Store chilled. #arugala#pesto#eatlocal#eatfresh#eatseasonally
