🎈RICO barely uses sugar when cooking a dish. And used Organic raw honey and Organic Japanese apricot syrup (2yrs n 6months - 3yrs n 6 months)
🎈Whenever the ingredients are organic we used organic sugar otherwise we used unrefined sugar. ( e.g.-organic apricot + organic sugar / apricot + unrefined sugar )
🎈From now on, we have replaced Organic Stevia instead of sugar, except for desserts or some pickles, which always taste super douper with a little sugar 😉

You can use date paste in place of other sugars, though some recipies may require tweeking to keep a similar consistancy.
Once made, it can be stored in the fridge for a few weeks to a month, but whoever thinks it will last that long is kidding themselves ;) Two ingredients are required, boiling water and dates. That's it!
Some tips, definitely use a food processor or the small attachment to a high powered blender. If you only have a large attachment or low powered blender, expect some possible small lumps. Make sure you use boiling water and this should help LOTS.
Also, make sure you pour the water over the dates slowly so you can hit all of the dates!
Let it soak in for about 20 seconds and then begin massaging them until they are all mushed.
16 pitted medjool dates
1/2 cup boiling water
Boil the water, pour it over the dates, let this soak for 20 seconds, message the dates to break them up, and throw the whole mixture into your blender, blending until smooth.
If it is too thick once blended, add a tiny bit of water at a time.

Sugars are used for different reasons in food products. It can be for taste but also for functionalities such as preservatives or texture modifier.
By sugar I mean fast release sugar, simple carbohydrate. The one that that it easily transform into glucose - which is used by the brain to work and make the blood sugar level go up quickly. -
What is refined sugar ?
Refine sugar or white granulated sugar also known as sucrose comes from process sugar canne or sugar beets. It has gone through a process that removes the molasses that are naturally found in it.
What is unrefined sugar?
Unrefined or raw sugar comes from honey,maple syrup, coconut and many more. It retains more of original natural nutrient such as calcium, iron, magnesium and vitamines.
However, unrefined doesn’t mean unprocessed. -
The benefit is that some of them are sweeter than granulated sugar and so you need to add less of them for the same sweetness intensity.
Both refined and unrefined sugars are simple carbohydrates and are source of energy. -
Remember, balance is key. Sugar is fine, too much is an issue.
