First post!!! 🤗😀 Lmfao I’m not the greatest at taking pictures of food. But these are healthy blueberry muffins with no refined sugar or flour! 😛😛They’re super good, but obviously have a different texture than your typical blueberry muffins because they’re made with oat flour. I love blueberries and muffins so much!!! I’ll put the recipe below! - - 2 cups oats - 1 tsp baking powder - 1/2 tsp baking soda - 2 eggs
- 3/4 cup of plain Greek yogurt - 2 tspn olive oil - 1.5 bananas - 1 tsp vanilla - 1/4 cup honey - 1 cup fresh or frozen blueberries
Preheat oven to 350°. In a food processor or blender, combine oats, baking powder and soda until a flour like consistency forms. Set aside. Combine eggs, yogurt, olive oil, bananas, honey, and vanilla until smooth. Pour wet ingredients into dry and mix until combined. Fold in blueberries and separate In a muffin tin. Bake for 30 min!
