Vegetarian spring rolls.
These mushroom and tofu filled spring rolls we're delicious! The wrapper had more of a weave texture than the usual smooth rice paper which gave it an incredible crunch! Amazing dipped in to some sweet garlicky sauce!

Hiking up East End of Rundle in Canmore, Alberta was such a fun way to spend an afternoon! With some killer views, good weather and great company what more could you want? This trail is a harder one and offers a fun taste of scrambling. I managed to get quite lost on the way down and took a much harder path back down the peak scramble... so pay attention if you don’t want to make my mistake!
Close to Calgary, this hike is a great option if you want a good weekend workout! But maybe save it for summertime if you don’t want to freeze in the cold September weather! 🇨🇦
El-Castillo. Or the Temple of Kukulcan.
But not just a temple. What you see behind me is the largest ever man-made calender.
Yes. A Solar Calender.
More than a 1000 years old, Chichen Itza was a pre-columbian city built by the Mayan people. They worshipped nature and out of the many interesting and mind-boggling facts that I learnt at this world heritage site, one predominantly surprises me to this day.
The sound of the quetzal bird was precious to the Mayan people and they wanted to preserve it. If you stand in front of the steps of El-Castillo and clap you hands, the walls resonate the exact chirp of the bird.
How did the very intelligent mayan architects make this happen? Is a mystery.
But I can tell you that,
I did and heard it myself.
A visit to Provence isn't complete without some legit Lavender hunting and man I learned some stuff!
I was most suprised to discover that in Provence there are two main types of Lavender breeds that grow. Traditional Provence Lavender and Lavandin
Lavandin is actually a cross breed plant between traditional lavender and spike lavender
Though the scents are slightly different, both plants can be used in similar ways to aid with relaxation and healing.
Lavandin is particularly popular for cooking because of its robust aroma!
It also has beautiful full, thick flowers and makes for excellent decor
I purchased both a bouquet of Provence lavender + Lavandin and I found the Lavandin made for excellent arrangements in my house.
If you're in Provence and have the opportunity, I would definitely suggest picking up some of this beautiful plant! 🏵️🏵️🏵️
Around 700 hectares of greenery, trees, gardens, lakes and ponds, this park, just 3 km from Dublin, is one of the largest parks in Europe and exceeds the extension of Central Park in New York. For those who wish, at the entrance there is the possibility to rent a bicycle or a tandem, otherwise you can go on foot. As soon as you enter, after the bicycle rental garage, you enter a huge park where there is an obelisk, the Wellington Monument, 62 meters high and built to commemorate the success of Arthur Wellesley 1st Duke of Wellington. Since there is also a community of fallow deer, the whole park is enclosed by a 16 km long wall. In some areas it is also crossed by city traffic, but this does not constitute any danger given the strict rules of circulation within the park. There is also a small zoo that we have not visited, also because we do not share the reality of animals in cages or otherwise forced into different spaces of their nature. Every so much a bar / restaurant as a refreshment point because the walk is long and when it's hot you can not just walk. And while you sip your drink and eat something, the jackdaws, birds of the crows family, not at all intimidated by the human presence, come closer in the hope of a treat! When you arrive at the ponds the confusion between swans, ducks and other waterfowls reigns supreme. Quarrel to the death to grab the food that the amused children throw at them. Well-kept flower beds full of flowers of all kinds give a strong color note to the whole. Beautiful relaxing and not at all tiring !!
