Couldn't even wait to dress these babies up this morning, just ate them as is they were so yummy 😍 barely got a chance to take a pic. The third one maybe got a smear of butter but that was it. I'll be doing these again for sure... Have attached pic of what they usually looked like dressed too though 😉 ..
Gluten Free Banana Pancakes that taste yum. These are Dairy Free too if you dress them up right 😋 - 1 sml just ripe organic banana, mashed
(coz I don't like them too sweet)
- 1 egg
- 1 splash of cashew milk (maybe 1/4 cup)
(see my earlier post for cashew milk recipe)
- 2 tbsp Rice flour #mckenzies
Pop these all into a jug and whisk together with fork or whisk. Heat non-stick pan to a gentle medium heat and wipe over pan with olive oil using paper towel and pour small pancake size portion/s of batter into the pan, gently tip pan to distribute batter evenly, <1cm thick cooks nicely thru. Cook until golden on both sides, watch them as the sugars in the banana can see them darken quickly. So quick, easy and healthy.
(I like to wipe the pan with the olive oil between each pancake/batch as I only have a small pan and can only do one at a time)
There's something amazingly calming about the bush and water 💖. If you get a chance to get out amongst some trees its so good for you. North Dandelup is such a beautiful spot with BBQs and facilities only about 45 mins from us here Port Kennedy, maybe an hour for Perth folk. It was so nice to spend the day with the kids for an early Mother's Day (I'll be training this weekend), no electronics, no phone reception, just us. Loved it!

At some level, we all spend energy working hard to resolve our unresolved negative issues. We think that if we can keep those negative issues at bay, they aren't a part of who we really are, they don't affect us.

Coming up to holiday time always reminds me of Broome... I love how relaxed it makes me feel to be there.
