I’m a no fuss kind of girl. Easy and simple is my motto for most things. Being a single person I’m often trying to find ways to have delicious and healthy (most of the time) food that is quick and easy to make and eat. This is especially true when it comes to work lunches. Fortunately, Trader Joe’s has a bunch of great frozen entrees in a wide variety of flavors that make lunches a breeze. Today, as I’m rushing to get out the door to head over to my family’s for my Thanksgiving break, I decided to have a quick lunch of chicken tikka masala. The buttery, spicy chicken pairs really well with the long grain cumin basmati rice. Four min after deciding what I wanted, I have a hot lunch that saves me from spending $10+ at an all you can eat Indian lunch buffet and my tikka masala craving is cured! Would love to see TJ’s make this with brown rice or quinoa for a healthier option. 8/10 Hawaiian Shirts 🌺
Daily lunch prepping has been going really well. Loving all the protein and low calories of the Lifelight savory (vegan) chi-kin and fresh spinach. ❤️No salt added. Just a little garlic seasoning powder from Trader Joe’s. Oh and today I splurged lol. A little Annie’s Sweet n Spicy BBQ sauce. It was yummy. 🥫

Delicious red wine! Shredded cabbage (noodles) and Trader Joe's Harvest Alfredo Sauce. Tonight's TJ sample..... Ravioli and 'creamy, cheesy Alfredo sauce with #pumkin puree and #butternutsquash pieces'. So good!
Recipes rarely call for a whole can of pumpkin, so there is always the odd 1/2 to 3/4 cup of leftover pumpkin purée in the fridge at any given time, challenging me to incorporated it in a sauce, soup or dip. This time I made @minimalistbaker pumpkin hummus with cayenne, cinnamon, garlic from the farmers market and herbs from the garden (#storeboughtisfine 💁🏻♀️)
Because eggs and chocolate go together! 😝 Right?!
And btw....these are basic staples for me.

•Superfood chocolate shake - because even though I eat really well..and eat all whole foods...we can’t physically ingest ALL the nutrients we actually need! This fills in the gaps! 🙏🏼

Saturday brunch that’s baby & hubby approved! GF pumpkin pancakes & bacon on my Halloween bat plate. Jared said he loved them, because the pumpkin taste isn’t overwhelming— they’re pumpkin not pumpkin spice. Now I have vegetarian chili w/butternut squash on the stove (and yes the hubby loves it too even meat free), while the rest of the squash cooks in the Instapot for the babe. Trying to tidy house & get everything in order for next week. Hoping to make some immunity boosting elderberry syrup later!
Yesterday, my husband and I drove [home] because Redick had eye surgery in Charleston this morning.
We got Redicks liver lab results back yesterday afternoon. All good 🙌🏻 we got the okay for surgery today.
No lie, we were walking in my parents front door last night and a bird flew out of her wreath and hit Sam and I both in the head 😳
We got up this morning before the sun and took Redick for his surgery.
I say all this to say: this dog momma is tired😴 I picked up this pumpkin spice tea from @traderjoes and it is 💯 It’s the perfect afternoon pick me up for cool, Fall days.
Have you tried this “everything but the bagel seasoning”? So so good. I love layering a white cheddar rice cake + cottage cheese + everything but the bagel seasoning + arugula + pepper turkey for an easy & yummy lunch🥗

I know we are all busy and barely have time for more but eating a meal together is important for family and personal health. I cook at home everyday but sometimes I get some help (mostly from @traderjoes). Today, we had black ink pasta with meatballs in a autumn harvest Alfredo sauce. It was beyond delicious, perfect for this season and it took maybe 20 min tops to make.
Everything was premade, I just had to cook the past thaw the meatballs and season he sauce to taste.

Pumpkin ginger “hold the cone” from Trader Joe’s. It’s scans as 12sp in the app which freaked me out as first until I realized that’s because a serving was 3 cones! So I’m much happier about having 1 cone for 4sp

Ok, y'all! If you don't have this #coldbrew in your pantry, you seriously need to go get some! I usually just make my own, but got slazy this week. Very happy medium.
This stuff is concentrated like it says. However, still good. You can pour it over ice and add a bit of water or milk, whatever your preference is, to tone it down a bit. If adding something, like collagen powder, mix everything up in a shaker bottle and then pour over ice. The barista in me likes to pour each separately for that swirly effect (it never gets old). _
As you can see, it's not rocket science (at least I hope not). Why spend $5+ at a coffee shop when you can make that ish right in your own kitchen or at the office? Besides, it saves from having to deal with the occasional questions about why you are doing #Whole30 , have to be #dairyfree , etc. A good barista will just make your order and keep the judgemental questions to themselves. Not all baristas do that, but there are those that will. I had a group of customers order nothing but breves once. Those are like lattes, but made with half-n-half. No lie, the idea of THAT much creamer makes my stomach roll, BUT it wasn't me drinking it. I just made their order, rang, them up, chatted with them for a bit, and went back to business.
Since I am now allergic to casein(A1), I kinda sorta have to do the whole plant based milk thing. I'm just grateful that it is now a common thing in most coffee shops around #Birmingham . When this allergy was first discovered, I straight up got some looks if I asked for coconut or almond milk.
