The best thing about doing the Whole30? I can drink coffee again!
I don't really understand why, and there are lots of theories about this from blood sugar, to coffee cross-reacting with grains, but the bottom line is this. When I'm on the Whole30 I can tolerate coffee without anxiety or insomnia, and when I'm not, I can't EVER tolerate coffee.
So, whatever. I'll give up honey in my morning tea and get completely sick of eggs and sweet potatoes and grilled meat for 30 days. Just give me all the coffee!!

A healthy Saturday breakfast/brunch for my main man this morning... steamed vegetarian tamales with tons of organic onions, tomatoes, avocado and cilantro, sprinkled with a little mild, red enchilada sauce and a side of two pasture raised, organic fried eggs sautéed in coconut oil... Lots of good fats, and healthy vegetables and proteins! Since we are “empty nestors”, it’s such a pleasure to cook good, healthy food and have it be appreciated!

If you watched my stories last week you would have seen me make Bone Broth. I want to chat some more about it because of all of the AMAZING benefits!! Studies have shown that consuming bone broth not only boosts your immunity, it also aides in digestion, fights cold and flus 🤒, strengthens teeth, protects your joints.....I could go on all day!! I made a huge batch and froze it. So easy to make and your using up all of your scraps so not wasting any food. We all know how much I hate wasting food 🤷🏼♀️😜. It’s great to give to your kids especially if they’re in daycare! I mean let’s face it...kids are snot nosed germ bags 🤧. I’ve been giving it to Bella to prevent any colds coming into my house 🏡. There are actually endless ways to make it and I’ll share my recipe below:
Recipe for Bone Broth
6-8 cups of filtered water
1 full chicken (leftover scraps and bones)
1/2 red pepper
2 stalks of celery (leaves too)
1 onion chopped in half (skin on)
2 garlic cloves (peel on)
1/2 tsp of apple cider vinegar
2 carrots 🥕
2 tsp of Himalayan salt
1 bay leaf
You can use any variety of veggies that you have and/or any bones such as beef/pork.
I simmered mine all day on low 9hrs, skimming off the top every so often. Once the broth has cooled you can skim off the remaining fat and enjoy! Cheers to your health and not getting sick this winter! 🥂
Sometimes Reed and I make a quick and healthy meal in our VitaMix blender and this is one of our favorites! Unsweetened almond milk, a heaping dollop of coconut oil, about a half of an avocado, a couple of scoops of our favorite greens (a blend of greens in a powder), and our favorite protein (we bounce around from hemp protein , to goat whey, and other healthy proteins, depending on what we have on hand). Add a bit of natural vanilla flavoring if you need a little “sweet” to make it palatable and a handful of ice! This takes about 2 minutes to whip together and it is filling and healthy and keeps you going for hours. Lots of good fat, protein and greens!
