Today was another very intense day in Tokyo. Got up at 6.30 am to go meet my friend Takenori Beppu and Kurebayashi san, his bud who’s the itamae at Ginza Soseki. We walked past the already huge line in front of Sushi Dai and sneaked into the staff stairway down to the market area where, as opposed to what happened in Tsukiji is only accessible by professionals and organized guided tours. We went directly to Kurebayashi san’s tuna purveyor as he had to pick up his order for tonight’s Quinta da Lapa wine dinner.
All of the phoned in orders were neatly organized on the fishmonger’s desk along with a sample of the fish that he had bought at the auction in the early morning.
