No necesita macerado para que esté rico, y simplemente he añadido ajo en polvo, pimientas y pimentón de la vera y lo he cocinado a la plancha con AOVE

🌱Day 4 of “raw vegan”🌱
Woke up feeling great mentally and physically since I was able to work out again for two days!
As a busy college student, most of you know those days where you just forget, realize you haven’t, or can’t schedule in appropriately eating, and it was one of those unintentional intermittent fasting days. Worked out with Maria late morning til afternoon, cleaned the house, then it was already 4! When we had lunch later with Lydia, the pretzel bell really hit the spot. There were possibly no vegan options except for a salad, which I already make myself and eat a lot anyways, so I went with splitting a burger— with MEAT & CHEESE. The whole purpose of trying to eat raw vegan is to redirect my cravings yes, but it’s also to see what kind of foods my body reacts best to. I’ve become or have only realized I’m kind of lactose intolerant this past year, and I’m sure there are other food sensitivities that I just haven’t noticed yet. So this raw vegan journey is to mainly MAKE ME FEEL GOOD in my head as well as in my gut. Food freedom is still something to balance this with, and if i want to enjoy meat with my friends, I should and do! Food should not dictate our lives nor our social choices. It can slowly but surely induce eating disorders, and for those who have never experienced it, IT SUCKS. It’s also difficult to practice food freedom when we, especially our society lately, desire “good health” and emphasize trendy superfoods & losing weight while also encouraging loving your body. Your body is the result of your nutrition that you get through food, so it’s just very complex. Anyways,
Snack: 1/3 açaí bowl from Costco
Meal: 1/2 blue cheese burger from the pretzel bell + some tatertots topped with beef + beer
Meal while watching a movie outside (top of the park): tatertots + a lot of watermelon + boom chicka pop
Light meal at 2am: spinach + tofu + 1/2 avocado + soy sauce

.Tengo que confesar que la primera vez que probé el tofu (hace ya unos cuantos años...) no me gustó nada! Me fui habituando a él a base de marinados y diferentes cocciones que le daban más sabor y textura y nunca pensé que me llegaría a gustar un tofu a la plancha, así tal cual 😅
.Y sí sí, ese día llegó, es curioso como podemos llegar a habituar al paladar por la simple repetición de exponerlo a un mismo sabor! Ahora mismo el tofu a la plancha, no me lo como por vaguería y a desgana, ni mucho menos, me lo como con gusto!! .Igual pasa con el resto de alimentos 😌😌 (aunque sigo sin tener interés en habituarme al sabor de los quesos y de las coles de bruselas 🤣🤣)
Delicious vegan carrot & lentil soup with braised tofu! This Turkish-inspired dish is awesome because it’s fast and easy to make a single portion. 😋
This soup is traditionally served with mint, lemon, and topped with paprika oil. In my struggle version, I just sprinkled on more paprika and drizzled with some EVOO before serving. Perfect for a warm, filling lunch or dinner. Enjoy!
Start by sautéing onion and carrot in oil, then add tomato paste, oregano, tons of paprika, cumin, mint, crushed red pepper, black pepper, and salt. Bloom your spices, then throw in your lentils and half water, half veggie stock (1 cup lentils to 2 cups liquid or so). Cover and cook for 20 ish minutes, then blend it up for a creamy consistency! Meanwhile, slice tofu and coat in preferred spices, then pan fry in a light spray of olive oil.
Japanese for dinner tonight before our early pregnancy class 🍼 Found this little gem in a random spot, there are so many awesome little restaurants hiding out there! It was sooo delicious! That dressing on the lettuce in the first photo was INCREDIBLE! And the tofu was so crispy! Dare I say even better than the teriyaki tofu we get at our regular Japanese place! On another note, this is the 4th night in a row we have eaten out or had takeaway 😳 All cheap so not worried about the $$, but we need to reign it in a little. I have some english spinich to cook tomorrow night, any ideas what I can make?!

arrived in Ho Chi Minh !!! first dinner at the Secret Garden and oooooh my god it was amazing 😭 30p (!!!) unlimited steamed rice, bok choy and mushrooms, tofu and lemongrass and spring rolls ! all of comes to about £6 😭 can’t get over it x we love u vietnam x
