As a teacher, half term is something I really look forward to in terms of cooking and eating. I have more time; I can make a good breakfast and I can stick to my eating plan much more easily! This morning, I made one of my favourite breakfasts - tofu scramble. I add different spices and vegetables depending what I have in, but this usually consists of turmeric, nutritional yeast, paprika, salt and pepper, and one of my new favourites - liquid smoke! Today, I had this with grilled tomato for added speed food and used the bread as a HEXB, and synned the chilli oil (you can use frylight!) and spread. I also have leftovers for tomorrow’s breakfast/lunch!

✨THROWBACK✨ to when it was sunny and I had time to cook all day long 😩 Although I shouldn’t complain exciting day today and for the next week then it’s half term 🙌 Black rice, apple, edamame, citrus drizzle, tofu fried in veggie pesto, pomegranate seeds and @cypressafoods tahini. I can promise you the @hm socks matching was not intentional 💁🏼♀️ P.S. look out for the very much requested vegan, ganache filled, lotus banana muffin recipe this coming week 😋🌱
For dinner I made #vegan tofu katsu curry using a sauce by Uncle Bens. The flavour and consistency was nice but there was waaaay too little of it. I’d say one pot is good for one person, not for two 😋 (there were a few more spoonfuls I added after taking the photo). #vegansofig#whatveganseat
Tonight’s brunch ingredients ... @tofooco smoked tofu dusted in smoked paprika, garlic powder, black pepper, sea salt and flour .... garlic cloves, spring onions, basil, ginger, tomato, red onion, mushroom, snap peas and rice. Oh and dark soya sauce ....... sesame oil for frying the tofu ...... #veganmods .... outcome up shortly ..... .
