Last of the tofu meal prep while finishing this week’s new meal prep 😂🌱 having a super productive Sunday getting ready for the week 💚 meal prep done, going to head to the gym in a bit, then finishing my responses to my assignments this week 🙏🏻
Maple tofu bacon & chickpea egg breakfast sandwich w/ vegan mayo & ketchup 🙌🥓🍳 This tofu is the besttttt. Marinated for a couple hours in soy sauce, liquid smoke, paprika, garlic powder, black pepper, nooch & maple syrup, then baked for 20 mins on each side to make it extra chewy 💖
Groovy chick plate still going strong after 20+ years and a few microwave incidents 🌚
Crispy baked tofu with chilli garlic veggies and rice noodles with soy and lime juice 🌶🥦🍜 I baked the extra firm @tofooco plain tofu with some olive oil at 200c with the fan and just watched it until it was crispy, then sprinkled them with garlic salt. For the veggies I used a permafrost chilli garlic paste, and added dark soy and lime to flavour the rice noodles 😋

As a #plantbased person living in the #uk there is nothing to complain about.
£35 (about 250DKK for danish friends) ...and not exactly at discounters due to location in town either, but still WAY cheaper than other countries.
So much for “being plant-based is expensive”. 🤔
The thing I disagree on is the strategy of overly expensive processed vegan foods. Products that are easy to make, shouldn’t be expensive.
Keep food as natural as possible, then things like a good oil are very relative in cost.
What would you do with ingredients like this? I opted for a super satisfying Soba Soup 😍
This is actually an older picture, but @tofooco is always a winner ❤️ Would love to hear your favourite Tofu uses for some weekend #inspiration ! 🌱
I have finally joined The Tofu Party!

Well deserved tofu scramble (I love you @tofooco !) with spinach, yellow pepper, tomato, salt and pepper, Quorn Cumberland sausages, paprika, chilli flakes, cayenne pepper, mixed herbs and sesame seeds to start my weekend off ...................................................................................................... .................. I wouldn't say proud or happy... Maybe just relieved that my body and mind allowed me to complete 5 days of work this week. I did have a migraine Thursday night, but managed to eat, sleep and meditate it away. What's even more impressive is that I did the first close and open on my own. And now I'm getting in the bath. What are you doing with your Sunday?
