This cake happened because I’m trying to eat well, but have a pretty active sweet tooth./Some if the fruits in the pantry/fridge were about to go bad./I work part-time as a “produce high-volumes in a limited period of time baker..” So, I had missed baking in my own kitchen, with my own recipes/ingredients, on my own terms, without time restraints. What turned out was a pretty healthy, really fruity/summery cake.. I did not have to use a lot of sugar, as not only was there a lot of naturally sweet fruit and dried cranberries in the cake, I also used a fair bit of freshly squeezed orange juice, orange and lemon zest, as well as two tbsp of organic peach jam in the batter. Used a mix of white and whole wheat flour, a mix of olive/coconut oil and a couple spoonfuls of Balkan yogurt for fat content. It was lightly frosted with a mixture of softened butter, sour cream, Balkan yogurt, orange zest and just 1 tbsp of confectioners sugar. I’m more about the creamy texture enveloping the cake, not really about the sweetness of the creamy enveloping. Aside from what I have just listed, this cake contains eggs, toasted walnuts, toasted almonds, powdered ginger, mashed bananas, shredded carrots, cut up strawberries and apple, as well as halved green grapes. I can tell you, with a clear conscious, that this cake is actually, really delicious. I have made sucky cakes before, sucky cakes don’t make it to IG 😂
managed to cram a fair few different fruits in my bowl for breakfast 🌱
- banana, strawberries, raspberries, blueberries and flat peach
- toasted almonds, desiccated coconut and @meridianfoods cocoa and hazelnut spread
and a spoonful of @wholeearthfoods three seed peanut butter (pumpkin, sunflower and flax seeds)!! 🌻
The food @gallery_48 is incredible and flavour packed. I had the #chorizo#manchego#blackpudding in a rich #tomato sauce and #tenderstembroccoli with #lemon#garlic and #toastedalmonds . The broccoli is pretty intense and the tomato dish is wonderful.
The #cremebrulee was really sweet and tasted great, I would have liked it a little firmer with a little more caramelized sugar on top for that satisfying crack. Non the less I wolfed it down cause it was delicious.
The staff were friendly and recommended the dishes and the atmosphere was clean and fresh with local art all around (which I believe is available for purchase)
Loved this food, will be back.
