I have really been enjoying making cocktails for friends lately. I love to make things that are easy, which allow you to focus on hospitality and spending time with friends. Follow along over the next few posts as I explore some great cocktails to make this holiday season.

No, this is not blood. It is cochineal, a little bug used as red dye in food and beverages. The famous Campari used it until 2005 before it switched to chemical red dye, but @leopoldbros uses it in his great aperitivo - my go-to Campari replacement - as well as @stgeorgespirits in its Bruto Americano.
That little parasitic bug lives on its host, the Nopale (here, in our friends' yard in Tucson). It is typically harvested, dried and crushed to a powdered form.
