LouLou’s Blueberry muffins💁🏼♀️ 🔅140g of raw sugar
🔅300g self-raising flour
🔅100g melted coconut oil
🔅2 punnets of blueberries
1: Heat the oven to 180C (conventional). Line a 12-hole muffin pan with papers.
2: Weigh the sugar into the mixing bowl and process 2 seconds/speed 10.
3: Add the flour, eggs, oil & milk and mix 30 seconds/speed 2. Scrape down sides and mix 20 seconds/speed 4.
4: Spoon the mixture into the muffin tray.
5: Scatter the blueberries over the muffins then push them down into the batter.
6: Bake in the oven for 20 minutes until golden and a skewer comes out clean.

🥛 Skip soaking the bread in milk steps cos 🤮 (the eggs bind the mince without needing breadcrumbs)
🥩 Doubled the meat for leftovers and just repeated the mincing step so it was all evenly minced 🥫 Add stock paste and wholegrain mustard to the mince instead of salt for extra flavour 🍅 Add 1 zucchini, 1 carrot, 1 beetroot, 1 capsicum and a stack of mushies with the onion to bulk up the vege content and only need 1 tin of crushed tomatoes (more fresh less tinned!) 🌿Chuck on a sprig of rosemary from the garden and take pic for the gram #thermowizz

✅ use varoma to steam whatever veg you have on hand
✅ sauté onion, garlic & fresh herbs

Freshly baked bread is still one of my favourite things to make...and eat!
I used the basic bread recipe here with a few Thermowizz Tweaks 👇🏼 🥖 I milled 100g buckwheat and 100g flaxseeds for the ‘wheat grains’
🍞 I used wholemeal flour instead of bakers flour
🥨 After proving time I rolled the dough into bread rolls and made a pull apart loaf
🥐 I put the loaf into a cold oven (not preheated) to give it some extra rise
You can’t beat the peanut butter and banana combo! I tried to make some peanut butter in the thermie but didn’t quite turn out the way I expected! My peanuts never really turned into butter...just smaller and smaller pieces! I tried for quite a while! I ended up adding a wee bit of peanut oil, maple syrup and some cacao and made chocolate peanut butter! Warm porridge fresh out of Thermie for afternoon tea.

I added 2 tbsp psyllium husk (recipes makes 6 serves) for extra fibre and to give it a gelatinous, pudding like texture.

My all time fav pumpkin soup is a @donna.hay recipe
So simple with the pumpkin & onions roasted whole and blitzed with a few other ingredients to create this delicious bowl of goodness 🙌🏻
For an extra hit of goodness, the humble #thermie blitzed the pumpkin (skin & all!) into a silky smooth soup - so good!

Banana Cupcakes from ‘Sweet Nourish’. A cookbook filled with delectable treats that contain less refined sugar and more goodness to nourish your body and soul 🧘♀️
I added extra banana so I could half the oil amount (I used coconut oil instead of olive oil)
I also only used half the flour so they were extra moist 😣
I had some leftover Peanut Butter Fudge Sauce from ‘Sweet Sauces’ and used it to ice the cupcakes. If you use coconut oil instead of grapeseed it sets hard and can be used as icing!
NB: This recipe makes 10 cupcakes, 1 didn’t quite survive the cooling and icing process...
Cauliflower cheese with cheesy breadcrumbs. I steam the cauliflower for 25 minutes in the varoma basket and then I make a batch of my favourite cheese sauce by Hungry Hippies. I like to keep a bag of Thermomix breadcrumbs in the freezer which I can scatter over dishes like this before baking😀
This quick easy salad should provide some post run fuel for the man of the house tomorrow 🏃♂️ 🏃♂️ 🏃♂️

Steamed Mushroom and Egg Pots from the ‘Eat Well’ Cookbook. One of my favourite and most frequently used books on cookidoo.com.au
It includes heaps of grain free and dairy free recipes for those Paleo fans out there.
Not me obvs as I served mine with the Home-Style Soda Bread with Spring Onion. The quickest and easiest bread to make!
Just good old plain wholemeal flour, bicarb soda, spring onions, salt and buttermilk.
Chuck it in the tin and bake for 40minutes 👌🏼
I also roasted some cherry tomatoes while the bread was baking and brunch is served 💁🏼♀️
Tonight my mind was saying salmon and salad but the weather was saying warm comfort food!
So I went rogue and made up a recipe 🤷🏼♀️ I chopped up some carrot and zucchini 5 sec speed 5 (my go to for a quick chop of firm vege)
I put that aside then placed some chopped potatoes in the simmer basket with water in the base. While the potato cooked, I steamed some salmon in the Varoma.
In the meantime I mixed a dressing of ACV, EVOO and dijon mustard.
Once the potato and salmon was cooked I mixed everything together with some spinach leaves and Voila 💁🏼♀️
An easy recipe for those Thermomixers amongst you: this Thermomix Pumpkin Seed Pesto comes together in 30 seconds and is 100x fresher and vibrant compared to shop bought versions. I made this one with parsley but I’ve found so many soft herbs/nuts/seeds are interchangeable with pesto and it makes a nice change. And somehow this lasted for 5 months in my fridge!? 🤔 Link in bio. .
It’s been a good day 😁 Resistance done followed by a 7km walk and healthy lunch. Coconut Chicken Curry
Masala Bread Rolls

I always bulk out the curry with extra veges
- 2 x onions
- 2 x carrots
- 2 x zucchini - 1 x capsicum
Just add all to the bowl when you add onion and chop 5 sec speed 5
I also stuck all the bread rolls together to form a pull apart loaf which always looks so impressive when you plonk it on the dinner table 🤩
The rice is all cauliflower so why not serve it up with a delicious freshly baked roll flavoured with Tandoori paste 🤗
Tonight’s Dinner is the Pork and Apple Cider Stew from ‘Cooking For Me and You’
I doubled the pork and vegetables and tripled the pearl barley to give us some leftovers.
I also added a capsicum, zucchini and currants for some colour and to make it ‘gram-worthy’
Pea and Ham Soup from ‘Everyday Cooking’ (cookidoo.com.au)
I double the recipe and when I got to step 5, I transferred everything into my big soup pot. This meant I didn’t need to have pre cut ham hocks and I was able to make 5L!
Pumpkin, Carrot and Herb Bread from ‘Grain Free Bread’
I milled brown rice to make a GF flour instead of the nuts and coconut flour (not a fan 🤮)
I also double the pumpkin to make it extra nutritious.
Vege Stock Paste cooling on my windowsill 🥫🥫🥫 I make this recipe every month from vege scraps and the left over stalks of herbs for a cost effective and zero waste approach to cooking.
Stock paste forms the base of almost all our meals and is a great substitute for salt in any savoury recipe.
1 tablespoon = 1 store bought stock cube.
1 batch makes up 4 jars which can be stored in the fridge for several months or frozen in ice cube trays and popped out as needed.
