Good morning Wednesday 🌸 Even if I absolutley love slow mornings with looong breakfasts (this summer has been filled with that kind of mornings) it feels really good to get back to the routines. TROPICAL KOMBUCHA JUICE 🍊🍑🌴⠀
Refreshing, tangy, anti-inflammatory, spicy, gut-healer, morning juice!! ⠀
1 fresh orange juice ⠀
2 ripe mangoes ⠀
1 yellow peach ⠀
250 ml kombucha ⠀
1/4 inch ginger root, peeled ⠀
250 ml filtered water ⠀
Ice cubes ⠀

After weeks of extreme heat, the temperature dropped drastically to 14°C this afternoon. You have no idea how happy this makes me! Since it's still smokey outside, we're spending the day cozy inside, relaxing, baking and eating warm food (at last!). All I'm missing is a bowl of this creamy mushroom and dumplings soup. 🍄
Also, as much as the smoke is affecting us, I have to be grateful that the fires aren't near us and we are safe. Growing up in NB, away from any wildfires, I never realized how much I took fresh air for granted. Thinking of all the people affected by the wildfires this summer. 😔
Vegan Spelt, Carrot & Orange Bake
To say it’s been a while is a substantial understatement! However, I’m feeling some posts and photos coming on, so a little snippet of the use of my time this Sunday where I created this spelt, carrot and orange cake.
Full recipe below⬇️ and I’m so happy how this turned out... truly delicious😁
I used spelt flour for this as the body digests the gluten in spelt in a much friendlier way in comparison to the commercial / wheat flours.
For the cake:
•250g of coconut sugar
•130g of coconut oil - melted yet cooled
•2 tablespoons of fresh orange juice
•1/4 teaspoons of orange extract
•250g of spelt flour
•1/2 teaspoon of baking powder
•125ml of cashew nut milk (other nut or soya milks will also do if you can’t find cashew)
•220g of carrots = 165g once tops off, peeled and grated
•Zest of 1 large orange
•50g of walnuts
For the orange frosting:
•150g of vegan soft cheese (I used @violife_foods)
•2 tablespoons of maple syrup or coconut nectar
•3-4 drops of orange extract
•Walnuts & orange zest - this zest can be a pinch from the zest in the main ingredient list.
•Preheat oven at 200 degrees / 180 for fan
•Sieve flour and baking powder together and set aside
•In an electric mixer or by hand, whisk together the coconut sugar, coconut oil, fresh orange juice and orange extract
•Alternate adding a spoon or two of the flour mix with a drop of cashew nut milk into the mixer bowl until all the quantities are mixed fully
•By hand fold in the grated carrot, walnut pieces and orange zest (save a pinch back for decoration
•Pour into a greased baking tin lined with baking paper and pop into the oven for 1 hr 20min to 1 hr 30min
•While cake is baking mix all the orange frosting ingredients together in a bowl, cover and refrigerate.
Once cake is baked, allow to cool on cooling rack, and then spread frosting on the top and decorate with more walnut pieces and orange zest.

Anyone else excited for fall? Don't hate me, but I'm SO over summer. Fall has always been my favorite and I may not always wish summer away, but I'm getting very tired of this heat and wildfire smoke. This NB girl is not used to it! So yes, I'm spending my weekend inside, away from the heat and smoke and looking forward to fall temperatures and fall produce. 🍎

CINNAMON SPICED & MAPLE BAKED PEARS
You might ask: "Is this breakfast or dessert?" Mmm.. I say it can be whichever one you want it to be😀
CINNAMON SPICED MAPLE BAKED PEARS with YOGURT sprinkled with PISTACHIO NUTS
2 Pears (I used Bosch Pears)
1 tsp Ground Cinnamon
1/4 tsp All Spice
2 Tbsp Organic Maple Syrup
1/2 tsp Vanilla Extract
•Heat oven to 375 °F
•Cut Pears in half and remove seeds with spoon making a round hole in the pears, then cut a small sliver off the underside so the pears sit flat when placed upright on a parchment paper lined baking sheet.
•Mix 1 Tbsp Cinnamon and 1/4 tsp All Spice together and sprinkle over Pears. (save 1 tsp of mix to sprinkle over after Pears are baked).
•Wisk together Maple Syrup and Vanilla Extract and drizzle over Pears.
•Bake for 25 min
•Directly after you take them out drizzle with more Maple Syrup and sprinkle with a dash of ground Cinnamon mix. Add them to your Yogurt and top with Raw, Unsalted Pistachios.
