When ordering I did my friendly-brontosaurus-style questioning of what is and isn't vegan and was told that essentially anything on the lunch menu could be made vegan. As the waiter laid the plate before me I asked "Are you sure the spring roll is vegan too?" Yes he assured me they are vegan and then when on to say "...but the rice has fish sauce." I pause and throw a side eye—I'm sure he is joking but for a startled moment I wonder if he's not. He laughs to himself and assures me "No no, everything on the plate is vegan." I am so weary of such jokes—but I don't think they get many of my kind in here and know he is just trying to connect. I take his comment as friendly and laugh it off with him.

Here is the recipe:
300 ml water
1 chickensoup blok
400 ml coconut milk
70gr Tom Kha paste
300 g chicken in small dices
200 g sugar snaps
4 Kaffir lime leaves
2 spoons of fishsauce
Juice of 1 lime
Pepper and spring onions to decorate (chilantro optional)
🍵🍵🍵🍵🍵🍵🍵 🍵Heat up the water, soup stock and coconut milk until boiling. 🍵Add tom kha paste, chicken, lime leaves and champignons and poach until chicken is fully cooked. 🍵Add fishsauce and lime juice
