Fast meal - shrimp Po Boys. I was dubious this would come together but it was actually super fast and satisfying. garlic butter shrimp, bok choy for crunch (working with what we have), tomatoes, a homemade remoulade attempt and roasted ciabatta. To all students resuming tomorrow, remember this is the chance for a fresh start in a new school year.
