You can enjoy this dessert knowing that there is a long list of wholesome ingredients that went into it 😜🍏🍰. Healthy Apple Pumpkin Crumble. Crust & Topping: 1/3 cup + 2 TBSP grapeseed oil, 1/3 cup + 2 TBSP coconut nectar, 1 1/4 tsp liquid stevia, 2 TBSP lemon zest, 1 1/4 tsp sea salt, 2 TBSP ground cinnamon, 1 1/2 ground ginger, 1 TBSP water, 1 cup quinoa flakes, 1 cup almond meal, 1 cup toasted whole buckwheat groats such as Bob's Red Mill, 1 1/2 cup chopped toasted almonds, 1 1/2 cups chopped toasted walnuts. Filling: 2 cups pureed pumpkin, 1/8 tsp sea salt, 3/4 tsp liquid stevia, 1/2 cup coconut palm sugar, 3 cups peeled and finely chopped medium sweet apples. Preheat oven to 350 degrees. Brush a 8 × 11 baking dish with grapeseed oil. In a medium bowl, whisk the first four filling ingredients. Stir in the apple. In a large bowl, whisk the first 8 crust/topping ingredients. Stir in the quinoa, almond meal, buckwheat and nuts. Press 1/2 the mixture in the baking dish. Spread filling over the crust. Spoon remaining topping over filling and press down gently. Cover with a baking sheet and bake 25 mins. Cool 15 mins and serve!
