Braised Chicken with Iberico Chorizo for dinner tonight. I had grand plans for dinner today after salting the chicken thighs and drumsticks yesterday. But on the way back from lunch, I got caught in a downpour and all I wanted to do after that was sip hot tea and laze on the couch. So, I opted for a simple braise that still delivered on taste. When I make something simple, I always add an ingredient that already has a lot of flavour, like chorizo or pancetta. Married with a splash of vino verde and homemade chicken stock to deglaze after allowing the skin to slowly reach their golden browned goodness on a hot skillet, this a one pan meal that’s both quick and super tasty. I add enough stock to reach halfway up the sides of the chicken so that the meat remains tender after continuing to cook in the oven and the skin remains crispy. A minute or two under the broiler keeps crisps up the potato chunks and the chicken skin even more. And then a glass of wine in one hand and piece of bread in the other for soaking up all the pan juices completes this Monday night meal. .

✔150g wiórek kokosowych
✔600 ml mleczka kokosowego
✔100g wegańskiej białej czekolady
✔5 łyżeczek agar-agar
Wszystkie składniki na spód tarty zblenduj. Gotową masą wyłóż formę.
Mleczko kokosowe zagotuj, dodaj czekoladę i agar-agar (dokładnie wymieszaj). Małe kawałki żurawiny wyłóż na samym spodzie tarty. Lekko wystudzony krem wlej do formy. Włóż do lodówki na około godzinę. Przed podaniem udekoruj połówkami żurawiny.

✔150g coconut chips
✔600 ml coconut milk
✔100g of vegan white chocolate
✔5 teaspoons of agar-agar
Blend all ingredients for the bottom. Fill the tart pan with the pastry.
Boil coconut milk, add chocolate and agar-agar (mix thoroughly). Place small pieces of cranberry on the bottom of the tart. Pour slightly cooled cream into the tart pan. Put in the fridge for about an hour. Before serving, decorate with cranberry halves.
