Try switching out your mozzarella and basil with feta and parsley. This tomato salad inspired by @bonappetitmag has feta, pistachios, parsley, a simple lemon vinaigrette and might just become your new favorite way to eat tomatoes 🍋🌿🍅 Recipe: Make lemon vinaigrette by shaking 2 Tbs lemon and 4 Tbs olive oil in jar. Season with salt and pepper. Arrange 1 lb sliced tomatoes on a plate. Season lightly with salt and pepper. Mix vinaigrette with 1/4 c chopped parsley and 3 Tbs chopped pistachios in a small bowl. Drizzle over tomatoes and top with 1/4 c crumbled feta and a parsley sprigs. Serve immediately.

This test batch of savoury sweet potato tarts has proven to be a winner. The crust is made of mashed sweet potato mixed with grated cheese, a dash of garlic and onion powder and bake till golden and crispy. And believe me it will be crispy because of the cheese. Then fill the tart shells with zoodles and top with homemade chunky tomato sauce and finish of with a generous sprinkle of cheese.(Swipe to see a backward progression.) Bake until the cheese melts and becomes golden. Next time I will load up the fillings and cheese as they shrunk significantly after baking. Here you have it!
