So I was super pissed when I got home from shopping @costco Wow people will seriously mow you down with jumbo carts to get a sample of cheese. So when I came home and realized it was time to start making dinner I wanted to throw everything I just bought against the wall as hard as I could. Realizing that would be wasteful I decided to make an easy one pot meal instead. If you’re pissed about having to make dinner too, throw together the ingredients listed below and angrily stir away. You can make this dish as spicy or as vegetarian friendly as you want. One Pot Asian Chili -2-3 lbs ground pork or chicken, or omit if going veg. -One sweet onion (chopped small) -2 leftover sweet potatoes (if you don’t have leftovers cook in microwave til done and cube) -2 cans garbanzo beans drained -1 large can diced roasted tomatoes (I like @muirglen best) -1 TB each of: curry powder, coriander, paprika, cumin, onion powder -1 tsp cinnamon -1 13.5 oz can of coconut milk *************************************
1. Sauté ground pork or chicken a few minutes til cooked and remove from pot. 2. Add diced onions to the same pot. 3. Add all spices and cook, stirring frequently for about 5 minutes. 4. Add drained garbanzo beans, diced tomatoes, and cubed sweet potatoes. Stir and cook another 5 minutes. 5. Add cooked meat back into the pot and stir. 6. Add coconut milk to pot (not the watery crap from the carton, a can) and stir.
7. Heat through and serve. I add red pepper flakes and cayenne pepper to mine as well because I love spicy food but you do you. The best part is you’ll have leftovers which means less cooking. #ihatedmakingthis#pissedoff#tastesgood
Ok..AGAIN at Starbucks I order a coffee and they give to me...with a TRIPLE shot. This has happened the last four times now and at DIFFERENT locations. Just wondering does the word “medium” somehow translate to three shots at Starbucks? This never happen as caribou. Maybe caribou is used to haggard looking people where Starbucks is alarmed for me. Two of my favorite meals. Chocolate, pecan, banana oatmeal. The chocolate flavor comes from @sunwarriortribe chocolate protein powder. I made the oatmeal warm this morning but it works great as overnight oats and then adding the banana just before you eat.
The second pic is a tofu veggie stir fry that I eat for lunch most days at work. I use two packages of @veggiesmadeeasy Manns superfoods veggies and a package of cubed tofu. It takes me about 15 minutes to prep a whole weeks work of lunch and I can changes up the flavors by using different marinades and seasonings.
I don't follow a vegan diet but try to keep 2 meals a day plant based. These 2 recipes make it really easy.
