I don’t know about you, but I friggen LOVE making nourish bowls that are jam packed full of plant based goodness. So simple and so delicious! .
This nourish bowl has sautéed mushroom and kale, cucumber, coconut bacon, avocado topped with some homemade parmesan cheeze + chilli-lime tahini dressing.
Anyone else love nourish bowls like this?
Perhaps not macro-friendly, but definitely macro-worthy are these Chocolate Chip Tahini Cookies by @kalejunkie. 🍪 Decided to give them a shot tonight since A. They have minimal ingredients and B. The recipe is super simple. They turned out fantastic! 🙌 They don’t have a classic chocolate chip cookie flavor to them. Instead, they are creamier with a subtle hint of the tahini. I think the best part though, is the sea salt on top! There’s just something about that sweet/salty combo that gets me every time! 😋😋
I got 15 large cookies out of the recipe and baked them for 13 minutes. Swipe right for the macros without the collagen and then with the collagen. Not a huge difference in protein or kcals.
Copied recipe directly from her blog below:
1 cup almond flour
1 cup tahini
1/2 cup maple syrup
1 tsp baking soda
1 heaping cup of Enjoy Life Foods dairy free mini chocolate chips
1 scoop collagen peptides
Line a baking sheet with parchment paper and set aside.
In a medium size bowl, mix together the almond flour, tahini, maple syrup, collagen peptides (if using), and chocolate chips! *The dough should be thick. If it's not, add a little bit more almond flour.
Mix to ensure everything is coated well, and place in the refrigerator for 30 minutes. Do not skip this step!
While the dough is chilling, preheat oven to 350.
Remove bowl from the refrigerator, and add the egg and baking soda. Mix together until fully incorporated.
Using a cookie scoop or spoon, scoop dough and form cookies. Depending on the size of your cookies, you will get 10-12.
Bake for 10-11 minutes. Remove from the oven and let the cookies settle before eating!
The key with these cookies is to slightly undercook them, so that they are nice and crispy on the outside and SUPER CHEWY on the inside.
Sprinkle sea salt flakes on top.
Dukkah Spiced Beef & couscous
Buyers beware. This was my first box from @blueapron I was so excited. My first meal was great. This one, though, far from it. Come to find out they recalled the #tahini in it due to .... Salmonella! It tasted funny but I thought I was just being paranoid. Regardless a few days later I was so violently ill, I was throwing up profusely. I debated on going to the E.R. Not knowing what was causing me to throw up. I couldn’t drive and was afraid to throw up in an Uber and incur a cleaning fee. Yep, I check my email a few days later to find that it , in fact, was food poisoning. .
I don’t know if you are still here but be aware this can happen to you too. This was my first of three boxes I ordered. The second and third one both came late. Needless to say I am far from impressed. However, I do think @blueapron is doing their best to right this wrong but Salmonella is never okay.
Baked three variations of chocolate chip cookies: NY Times Tahini Chocolate Chip Sea Salt; America’s Test Kitchen Chewy Chocolate Chip and peanut butter chocolate chip.
Tips I learned from a weekend of baking:
-Rotate halfway through — both between racks and front to back
-Under bake cookies. The edge should be barely brown.
-A bit of flake salt on top really heightens the flavor. Add it even if the recipe doesn’t call for it.

These tasty treats are filled with mucana pruriens, reishi, pine pollen infused cashew butter and tahini cream in a cacao, anandamide and he shou wu coating. Finally sweetened with a local eucalyptus honey and sprinkled with bee pollen.
