Bacon and brie potato skiins

Serves: 4
Ready in about: 1 hour 50 minutes
Syns per serving: EE: 2

Ingredients

4 baking potatoes
Frylight
8 rashers of back bacon, fat removed, chopped
4 spring onions, thinly chopped
1 tsp garlic salt
1 roasted red pepper in brine from a jar, drained and chopped
50g brie, chilled and finely chopped
Freshly ground black pepper
Romaine lettuce leaves, to serve.

Method

1)  Preheat your oven to 200C/fan180C/gas 6. Prick the potatoes with a fork and bake on a baking tray for 1 hour, 15 minutes, or until the skins are crisp and the insides are fluffy. Cut them in half lengthways, scoop most of the insides in to a bowl (keeping about 1cm layer of flesh on the skins) and set aside. Allow to cool for 15 minutes.

2) Meanwhile, spray a frying pan with frylight and place over a medium heat. Stir-fry the bacon pieces for 3-4 minutes, or until they are cooked through.

3) Stir the spring onions, garlic salt, roasted red peppers, brie and half the bacon into a bowl of scooped-out potato and season.

4) Spoon the filling into the skins, and lay them on a baking tray so they fit snugly. Sprinkle over the remaining bacon and bake for 10-15 minutes, or until golden. Season with black pepper and serve with the lettuce
