In the surrounding areas of most military bases, you’ll never fail to find almost any and all chain and fast food restaurants. One of my favorite things since moving to KY is finding the little hole in the wall places to support local businesses and the community. Drove by this gem one day and was determined to try it sooner rather than later and it did not disappoint! Who would have thought that a vegan cafe would be a new favorite of mine! Grilled cheese and vegetable jumble. Not grilled cheese sandwich, just straight up grilled cheese. Bryce picked it with me in mind but when I saw it I wasn't thrilled. Turns out it's delicious. We were both pleasantly surprised. It has a lemon cilantro chimichurri drizzle. I've never seen grilling cheese (cheese coated in vegetarian friendly Rennet and enzymes so it holds together) before but now I need to figure out where I can get more. #grilledcheese#hellofresh#surprisinglydelicious

Sweet potato spirals with basil, corn, and a dressing made from almond butter, tamari, ginger and garlic... who knew?!?! I’m shocked at how this tastes. This one is a keeper! •1 tablespoon butter
•2 cups (160g) broccoli
•1/2 cup (65g) sweet potato
1. Dice the #broccoli and sweet potato into 1/4- to 1/2- inch pieces
2. Place butter in a pan over medium heat. Once butter has melted, add broccoli and sweet potato. Stir to coat.
3. Add 3/4 cup water and cover pan so that vegetable steam to cook. Stir occasionally until veggies are tender and water has steamed off, about 15 minutes.
4. Crack eggs and add to the pan. Allow eggs to solidify for a couple minutes, then stir every minute or two until eggs are fully cooked.
5. Season to taste with salt and pepper.
