Banana and Blueberries Muffins
(toddler friendly recipe)

INGREDIENTS:
▫️150g of self raising flour
▫️1 beaten egg
▫️60g of unsalted butter
▫️2 ripe bananas, mashed
▫️Splash of whole milk
▫️Handful of blueberries
.
INSTRUCTIONS:
1. Sift the flour into a large bowl and make a well. 
2. Melt butter in a pan or microwave. 
3. Once melted, add the butter, egg and milk to the banana mixture. Mix well. 
4. Pour the banana mixture into the flour. Mix lightly. 
5. Spoon the mixture a third of the way up into each portion of your Kiddo Feedo Freezer Tray. 
6. Add two or three blueberries into each portion, then cover with the rest of the mixture. 
7. Bake at 180ºC / 360ºF  for around 15 minutes until golden.

Sunday food prep is in the books! It’s a short week for me as I’m traveling to Boston for my cousin’s wedding on Friday, but that’s no reason to just wing it! I’m all set for the week with (clockwise from top left): ➡️ Bok Choy And Cabbage Slaw (a recipe from the @21daysugardetox that I love... just google “21 day sugar detox Bok Choy And Cabbage slaw”). To be served with a turkey wrap for lunches (one wrap pictured; I’ll make the rest the night before I need them) ➡️ Cauliflower Rice “porridge”... I almost always do better with savory breakfasts, but I’m experimenting with this pumpkin, chia, egg, cauliflower rice, cinnamon, and coconut milk combo! ➡️ Smoothie packs! Following my magic smoothie formula, so these will keep me full! I’ll just dump in unsweetened almond milk and ice and blend up! Actually experimenting with these for dinner while at the office this week, since I’ve been super hungry around 7 and not so hungry when I get home around 8:30. ➡️ Extra sautéed veggies, cut up jicama, and destemmed grapes to freeze for sweet treats! ➡️ Veggie packs!! Sunday food prep: chicken bone broth. I decided to experiment and attempt to step up my bone broth game. I used some@leftover bones, but also got some chicken necks and feet from the farmers market. Chicken feet look so creepy to me. Like witches’ hands or something. But, I’ve been told they have lots of good collagen and other goodness to make a great broth. I also simmered the bones, then roasted the bones and veggies. Bones, veggie and herb scraps, salt, peppercorns, and apple cider vinegar all go in the @instantpotofficial for two hours. Looks pretty good to me. We’ll see how it tastes! #bonebroth #sundayfoodprep

Right now I love fruit stands and the orchards if I have time. ✨ I only shop off my list, to save my wallet and waistline ✨I spend around 2 hours every Sunday and cut up all our fruit, veggies and package/ season our meats. ✨then the rest of the week we look at our menu board and pull out our meal and put it in the oven, or on the grill

Food prep is amazing! Every Sunday evening I prep all my lunches and dinners for the next week. Put it all in the freezer then take two out each night to defrost ready for the next day :)
All you need it some plastic pots and a few hours one day. All your meals are sorted and you only have to wash the dishes once!
I’m currently trying new flavours. Garlic and herb crusted chicken, chicken and red pesto pasta, chicken lasagne and honey lemon garlic chicken. All with a carb and plenty of mixed veg 🍴
