Banana and Blueberries Muffins
(toddler friendly recipe)
▫️150g of self raising flour
▫️1 beaten egg
▫️60g of unsalted butter
▫️2 ripe bananas, mashed
▫️Splash of whole milk
▫️Handful of blueberries
1. Sift the flour into a large bowl and make a well.
2. Melt butter in a pan or microwave.
3. Once melted, add the butter, egg and milk to the banana mixture. Mix well.
4. Pour the banana mixture into the flour. Mix lightly.
5. Spoon the mixture a third of the way up into each portion of your Kiddo Feedo Freezer Tray.
6. Add two or three blueberries into each portion, then cover with the rest of the mixture.
7. Bake at 180ºC / 360ºF for around 15 minutes until golden.

Now that doesn’t mean spending hours on your weekend food prepping for the week
But even taking an hour out of your day to prepare a few simple easy to grab foods ahead of time is going to set you up for success
And if you’re not able to food prep even taking 5 minutes to plan out what you’re going to eat for the week will make those trips through the drive though or dinners out less likely
Today I prepped a few things for us that are going to make my week much easier. A few things to snack on and getting items ready for dinners this week.
✳️spaghetti squash ✳️chopped broccoli
✳️baked peanut butter oatmeal
✳️greek yogurt chicken salad
✳️washes and chopped fruit
✳️roasted sweet potatoes and carrots ✳️tuna salad
✳️hard boiled eggs
Not pictured is the chicken that still needs to be grilled but it’s currently pouring rain ☔️ and I don’t wanna stand in the rain and cook today😂

Sunday food prep is in the books! It’s a short week for me as I’m traveling to Boston for my cousin’s wedding on Friday, but that’s no reason to just wing it! I’m all set for the week with (clockwise from top left): ➡️ Bok Choy And Cabbage Slaw (a recipe from the @21daysugardetox that I love... just google “21 day sugar detox Bok Choy And Cabbage slaw”). To be served with a turkey wrap for lunches (one wrap pictured; I’ll make the rest the night before I need them) ➡️ Cauliflower Rice “porridge”... I almost always do better with savory breakfasts, but I’m experimenting with this pumpkin, chia, egg, cauliflower rice, cinnamon, and coconut milk combo! ➡️ Smoothie packs! Following my magic smoothie formula, so these will keep me full! I’ll just dump in unsweetened almond milk and ice and blend up! Actually experimenting with these for dinner while at the office this week, since I’ve been super hungry around 7 and not so hungry when I get home around 8:30. ➡️ Extra sautéed veggies, cut up jicama, and destemmed grapes to freeze for sweet treats! ➡️ Veggie packs!! Sunday food prep: chicken bone broth. I decided to experiment and attempt to step up my bone broth game. I used some@leftover bones, but also got some chicken necks and feet from the farmers market. Chicken feet look so creepy to me. Like witches’ hands or something. But, I’ve been told they have lots of good collagen and other goodness to make a great broth. I also simmered the bones, then roasted the bones and veggies. Bones, veggie and herb scraps, salt, peppercorns, and apple cider vinegar all go in the @instantpotofficial for two hours. Looks pretty good to me. We’ll see how it tastes! #bonebroth#sundayfoodprep
Sunday food prep. We ALWAYS and mean always make better food choices when we prep ahead. Not only does it cut the stress out of deciding what to make it saves time and allows us to get other things done, as well as saving money.
Here’s a couple tips, since I know someone out there isn’t sure where to start. ✨first our family plans our menu for the weeks dinners
✨then I ❤️ deals, so I go to our local grocer every Friday for their produce sale then get the rest of our groceries whatever stores cheapest. Right now I love fruit stands and the orchards if I have time. ✨ I only shop off my list, to save my wallet and waistline ✨I spend around 2 hours every Sunday and cut up all our fruit, veggies and package/ season our meats. ✨then the rest of the week we look at our menu board and pull out our meal and put it in the oven, or on the grill

Our lake party yesterday wore us all out but I willed myself to trudge through my prep anyway. I know Monday me will be appreciative! Here’s my lineup:
Roasted Brussels sprouts and cauliflower
Cabbage and Brussels slaw for fish tacos
Curried chickpea salad
Roasted sweet potatoes
Washed and dried lettuce
Two more loaves of sourdough to bake in the morning

I've been feeling lots of snacks and lighter meals lately so I figured I would run with it. We visited the Leslieville Farmer's Market this morning and inspired by the fresh arugula and spinach I bought, I've made some tasty salads for the next few days. Yummy summer eats!

Who else does their food prep on Sundays? Do you know the main meals that you will be eating over the next few days? Have you got all of the food you require for these meals at home? If so, by preparing them in advance you will be less likely to spurge out when you are busy later on in the week.
